I have always loved his other place - the Schoolhouse - so it's not even a question the food would not be stellar. I have not personally ventured beyond the superb margarita pizza on the pizza menu but there are several from which to choose when I'm ready to deal with the gluten repercussions again. There's a funny sign at the door that welcomes gluten lovers or something and that's the truth. Wonder if it'd be too much to ask to offer a gluten free pizza or cauliflower crust. It sucks to not be able to fully enjoy his amazing pizza without downing the charcoal and anti inflammation pills afterwards. But, if you have to, it is worth it on your cheat day. Encountered their truck at the Westport Farmers Market today for the first time, they had a good variety of pizza offerings for vegetarians to meat eaters. I went for their kale pizza. It took about 20 minutes for my pizza and they made me aware of this when I ordered so I finished my shopping in the meantime. When I arrived back, I had to wait a few more minutes but it was absolutely worth it. The pizza dough was doughy and airy but also crispy from the over. The sauce on the pizza provided the perfect level of spice and the rest of the ingredients including the kale were balanced. I look forward to trying another pie in the future. read more

I think this is the best pizza in the Norwalk/Wilton area. I've had their cheese, Margherita pies, but I also love their carmelized onion dip - you have to try this. The pizza is slightly expensive for the size, but the quality and flavor is totally worth it. The pies are personal size or, maybe, slightly smaller than a typical small pie. I've never had the luxury of sitting inside (thanks, COVID), but their online ordering is simple, and pick up was easy and practically contactless. It's located in the same parking lot as Stop & Shop and a few other restaurants, so it's easy to miss, but I recommend giving it a try. read more

Pizza crusts are phenomenal. Slightly blackened, soft, yet cooked through. Toppings are inventive and great tasting. But they're only getting 4 stars. Why? The service is slow, and poorly managed. We waited too long for our pies to arrive. Initially we were given the wrong pie and then waited another 10 minutes for the correct pies to arrive. We also noticed another table of two patrons had only one pie arrive and then they had to another 10 minutes for their second pie. Our waiter seemed to want to talk cocktails and work the bar rather than return to our table. We had to ask another waiter for the check... and then take our payment. Bad night? I'm not so sure. On a prior visit for take-out, my phoned-in order still wasn't ready after the 45 minutes that was suggested.... And it took another 15 minutes for my pies to be cooked. They seem to have a real issue with scheduling and timing - which is difficult to understand - they have a pizza oven and they're making pizza, they're not stabilizing the Leaning Tower of Pisa. Crust and pepperoni were burned to a black char for about 50%. We cut off what we could and first bite showed under crust was also as burnt. Living in a small town in Connecticut there are lots of restaurants around, but very few within my town; which makes it difficult to consistently get quality food. But when parlor moved into the downtown strip area, excitement was beyond speakable. The restaurant has some of the best pizza I've ever had no doubt, while also containing a variety of fresh salads and homemade dessert which has got to be the best sweet bread with chocolate in the world. The owner lives in town, a very friendly family with a great staff of people from around the area. I come here all the time, wouldn't recommend ordering on fridays however gets extremely busy almost always I order take out and it's almost an hour wait, otherwise if you need somewhere to go in downtown Wilton parlor is the place to go. read more

I came in with a friend close to 8pm on a Thursday night and was immediately struck by the amazing smell and how crowded it was compared to other local restaurants. We were just able to get a seat at the bar. We didn't know it was all byob but with Ancona's so close I just snuck out after ordering a grabbed a bottle of gavi. We ordered the bread and butter to start and while it's not complimentary it's definitely worth it. The bread is delicious and the butter almost seems like it's churned in house the way it's prepped and seasoned. We got the Margarita and sausage pizzas to shared both were amazing though I admit a preference for the former and it is normally the measure by which I gauge new pizza places I visit. The crust was well charred and while it could have been a tad more crisp the inner part had a great chew. The tomato sauce was sweet and tangy yet maintained that fresh acidity of the tomatoes that balanced out so well with the cheese. They also have habenero honey on the tables which is fun and delicious itself but by no means a necessity. The only thing I wish had changed a bit on the pizza was the addition of some smoke from coal or wood. The gas oven they use leaves the taste just a bit to oddly clean almost as if it is missing something. We did also get the zeppoli and were not disappointed, though a bit crusty they were still light and fluffy on the inside. All in all it was a great cap on a great meal. I may have had to wait months before trying Chef Labant's pizza but it will most definitely not be months before i am back for more. read more

It's pricey, but *so* damn good, so we don't care (beware, though, the bacon is not real bacon, it's more like hunks of fatty ham - I didn't like it at all). Also the Caesar salads are the best we've ever had. A meal unto themselves. My one beef with them is that they've been running out of food on Fridays lately. I was stalking Tim Lebant's newest pizza parlor endeavor on Instagram and was anxiously waiting for them to open their doors to what indubitably would be a fantastic casual pizza spot. Tim's claim to CT resturant fame is his fine dining restaurant The Schoolhouse at Cannondale, which is a true hidden gem here in his hometown of Wilton. Many CT foodies don't know about The Schoolhouse at Cannondale, and if you're looking for a special occasion meal that serves inventive and technical skillful new American cuisine made with local fresh ingredients, this is your spot! Sorry I digress, back to Parlor! As a pizza lover who grew up in Long Island, lived in Brooklyn for 6 years, and then lived in New Haven for 6 years, I've consumed probably thousands of pounds of pizza. Every pizza making region has their own style, and every individual has their own preferences. For some it's all about the dough and crust. Others it's all about the sauce. I'm a Neapolitan pizza traditionalist who loves his red sauce and mozzarella, and the true pizza making test for me is how well they execute the classic pizza margherita. And Parlor's margherita pizza passed with flying Italian flag colors! The salty yet sweet profile of the San Marzano tomatoes comes through in this simple, yet deliciously perfect red sauce they use. Not sure if it's buffalo mozzarella or fior di latte, but damn the cheese was bursting with fresh mozz goodness. And the beautiful peppery herbal finish from the fresh basil and olive oil, perfecto! The indicative black char which can only come from the high temp scorching of a wood-fired oven was present throughout the outer crust ring and the big bubbles that arose from the fermented dough. One Yelper complained about the lack of structural integrity in the dough, but personally I appreciated the runniness of this pizza. The dough itself reminded me of naan, with it's thick, viscous texture and pillowy chewiness. Knowing the high standards of Tim Lebant, I'm sure he is still playing around with his dough preparation techniques to perfect it and I look forward to seeing it evolve over time. You can see Tim working hard back there making his pizza dreams a reality in the open kitchen. One thing that sets Parlor apart from your standard fancy pizza joint is the quality of the ingredients they use. Sure it's expensive pizza, but I've always been one who will happily pay more for quality. And the ingredients used here are of that Schoolhouse on Cannondale, high local quality level. Take the Caesar salad here, which uses gem lettuce not romaine, shaved not grated parmesan, and these warm, house made croutons that don't have that scratch-up-the-roof-of-your-mouth, dry massed produced crouton stiffness, but are moist, luscious, and rich as if they were crafted by an artisan baker that has devoted his life to making bread. The real kicker is the soft boiled egg, that is prepared so delicately well and compliments this elevated Caesar salad in the most perfect way. Love this Caesar! The pepperoni they use here is high-end as well and reminds me of Lombardi's in the city. Those mini circular pepperoni discs cup up in that hot oven so all 360 degrees of its circumference edge gets a nice dark char. Beautiful! The sausage and onion with smoked mozz is great as well and my wife' fav is the mushroom pie with mozzarella, taleggio cheese, scallion and black pepper. All pies we've tried are bursting with flavor where the quality of the ingredients really shine through. Parlor is still in its infancy and I know will just get better with time. Wilton is lucky to have such a fantastic pizza spot open up by one of it's own! read more

This place is good - but is new and has tweaks to work out. Let me first say, I'm a huge supporter of Tim LaBant, the schoolhouse and everything he's brought to Wilton. I believe in him and his talent. The Caesar salad and soft egg is stunning. The wine list here both in variety and price point is unbelievable. Service was warm and inviting despite how busy and popular this place is we felt welcome and not too rushed. That said I'm a pizza lover, this is a pizza restaurant and their dough/baking needs work. I've been here several times and the pizza dough has been soggy and undercooked in the center half of each slice. Understand they're new and working out the kinks but after 6-8 weeks, I would expect them to notice that the bottom of the pie is massively underbaked not just soggy - underbaked..tastes like raw dough....several other customers a few from New Haven also commented the same while we were at the bar. It would appear they're judging doneness by the top being burnt not whether the bottom is cooked. Idk if that's the dough or oven temp being too hot burning the top before the bottom is cooked. But let it be known that while other reviewers said this Pie was as good as Pepe's - they must not have been paying attention at Pepe's. Pepe's pies are crisp and the dough has elastic fortitude. When you hold up a slice they don't flop over limp and soggy. I do appreciate the premium ingredients and unusually gourmet combinations of the toppings. The white clam pie and bitter broccoli rabe is scrumptious and garlicky. The Habanero honey is a revelation. I'm hoping the dough and underneath will catch-up soon. I'll be back. read more

The BLT was a little salty but I guess that's what happens with bacon on pizza! Crust was excellent. Went with family last night and was seated immediately since we were first in line at 5:30 on a Wednesday night. While there are not many tables, the space is decorated well with warm, neutral tones. Not your typical Wilton establishment. Pleasantly surprised at the diversity of its staff. Started with the caesar salad and butternut squash with ricotta. Both excellent. Soft boiled egg is a nice touch. Kids devoured the caesar and they usually do not like vegetables. Kids loved the regular cheese pie (except for the charred crust). I would have asked for less charred on all the pies next time. Husband and I shared the clam with broccoli rabe and mushroom pies (mushroom sauce is excellent). Definitely get the zeppoli with Nutella. Heard that the dough is lighter and "purer" which is true. Different than Pepe's (more artisanal). You can taste the difference. Not inexpensive but see the value differently. Not really a ladies night out venue (small so quick turnover) but Wiltonites with limited options and more sophisticated palates would be regulars. read more
