We decided to try Pasteur's when I saw it on DoorDash after waking up feeling a little less than great. I got the #M2 (Mì Hoành Thành) which is an egg noodle soup with wontons and bbq pork. It was great! I've had more flavorful broth at other locations and with pho, broth is a huge make or break for me but this was still alright. My husband got the #02 pho (Ph Tái) with raw steak. He liked his a lot too but said the same thing as I did about the broth. Overall, we really liked our soup and it did hit this spot. Food is okay but the service and ambiance, not really. I believe this is family owned and run. It does get busy and packed during certain times which, unfortunately, becomes a problem because it seems like the person who takes the orders is also the same person who buses the tables, takes the food out from the kitchen and does the cashiering which impacts the other customers waiting to order. Likewise, when it gets packed, it will be hard to carry a conversation with anybody because it gets really noisy. Best way to get food from here- call it in and take it to-go. read more

I will preface my review by stating Pasteur's is the only Pho place in my area that is open until 10pm- Pasteur's is NOT my first choice- it is always my LAST choice. The owner is rude and always has been. The Pho broth is bland and OILY. The noodles are overcooked. The restaurant is located in a seedy part of town- some meth head was tapping on my window asking for money when I pulled up to the restaurant AND the prices are about $1.25 higher than most Pho places. Money is not the issue BUT if the product is inferior and the staff is rude and the area is not safe then there are too many inconveniences. This is the LAST time I will EVER come to this run down place- if I want Pho after 9pm I will settle for Top Ramen in the privacy of my own home rather than deal with rude Management and oily dish water. You guys suck ass and I am going to copy this to your Facebook page as well as place an ad on the "Rants and Raves" section on Craigslist. Wish I could give Pasteur's a higher rating however their hygiene trumps it all. They do have decent food, it's usually hit or miss so I would give their food about a 3.5-4 star. I feel like it just depends on whoever is cooking in the kitchen that day. They always have different servers and nothing special about the servers either so I would give them 3.5 stars on that. As for cleanliness, I would give them a 2 star. The restaurant itself needs a good scrub, they need to buy new utensils and cups - plastic cups for water are just disgusting in the restaurant industry. People have been known to find stuff in their food here. Whenever I eat here I feel like I need to bring my own chopsticks and spoon. Hopefully they read their customers review and clean up the place, I think they would have better business if they took the time to clean this place. read more

Later when the food came out I asked for a plastic spoon, server didn't say anything except gave a rude look. Finally to top everything off there was a cockroach in my pho..The manager apologized then asked if I want another bowl of pho.. The soup will come from the same pot of where the cockroach came from why would I want another bowl of that? They still charged us for the pho in the end. Working nearby this is often a lunch option when considering Pho. So how is it? Pho is good, possibly a little better quality than Than Brothers. However, pricing is a tad higher, and no cream puff. Me likey cream puff. Service on the other hand is much better here than at Than Brothers, and the decor (if it really matters) is a little more comfortable and cozy. In all reality if I just wanted a bowl of Pho, I'd probably go to Than Brothers. It's a lot better value. However, Pasteur's has Bahn Mi sandwiches...$2.95 To GO, and $3.50 for dine in. Yeah I know, why is it cheaper when you're ordering it to go? I can't really make any sense of it. Regardless their Bahn Mi sandwiches are delicious. But warning if you do plan to eat a bowl of Pho AND a Bahn Mi sandwich...it may be smart to stick with the small bowl. I've had pho, bun, cha gio (fried egg rolls) and goi cuon (fresh spring rolls) here and haven't had any complaints. Though my expectations haven't been overwhelmingly exceeded, they've been met. The woman usually manning the dining room (I think is one of the owners?) is very nice and chatty when business is slower than normal. This used to be my "go-to" Pho spot up north. Keyword being used to. My main issue with this place is the service is NEVER consistent. There used to be this kid that was awesome but the last couple times I've gone it's been new people. My main complaint is again, the service. I just don't understand how they always seem to forget something in our order. Whether it be meatballs or a soda, it's ALWAYS something. WITHOUT FAIL. Pho IS the best north of Seattle. Yes, I know that there are 2 additional locations of Than bros. up north. Maybe I'll write a review about cream puffs at a later date. I generally like a broth that i can breathe in the aroma of star anise and cinnamon. The broth at Pasteur's is so rich and beefy. The little squirt of lime really brings out the richness to surface. It's not a flat tasting broth where you squeeze that lime, then all you taste is sour soup. The Banh Mi is the best anywhere. I always get the tender beef which is a little pricier than the other options. How do they get this beef so tender? It's sauteed and a bit caramelized too. Layered with quick pickled cucumber and carrots, topped with cilantro and jalapeno. Perfect. What ties it all together for me is the mayonnaise. It's not just mayo. They mix it with soy sauce and mustard. Genius! I have had their egg noodle soup with bbq pork and wonton. Yummy. I really enjoy the caramelized catfish entree as well. I just wish it didn't cost a fortune for 4 chunks of deliciousness. The restaurant is pleasantly clean inside. The service has improved a lot over the past few years. The food is consistently good. Probably one of the only Pho places I would go to in Everett. They have good pho, good bbq pork spring rolls...trust me, waay better than the regular ones, and ok banh xeo. The small size usually fills me up. Medium is a large and a large is an extra large to me. So unless you're hungry, stick with a small/medium bowl of pho. Thai ice tea is pretty good too. Service could be a bit better, but what do you expect from a pho restaurant? :) However, the employees seem like they are always running from table to table. Pro: Best Pho ever, hands down! This has always been my favorite pho place since 2011! The broth is always hot and never bland. They have the best variety of phos to choose from for someone who does not eat much beef. I have pretty much had everything on the menu and everything has either met or exceeded my expectations. The owner is very friendly and is always helpful when there is issue with service. Con: Mediocre to bad service When I first started eating here the service was above and beyond! Everything was delivered exactly the way I ordered it and the server even made good recommendations. Since that server left, there has not been good quality service. Now they charge $3 for adding mixed veggies to my pho when even the owner told me they shouldn't. Some of the servers do not speak very good English. Sometimes there are even servers who don't even seem to care about the job. There is one girl who has headphones the whole time! Unacceptable! I have been coming here since high school, because it's a bit of a tradition for me and my friends. I ordered the beef pho, the kind that cooks in the bowl, which had always been my favorite. I ordered the medium, like always, but I felt like there was way more broth than usual, and it wasn't that hot. But anyways, since my friend and I were still hungry, we ordered chicken banh mi, and it was delicious!!! Sweet and savory at the same time. Pho here is one of the best I've had. Their broth is rich, clean, and comforting. I usually order the 9A and never fails me. The pho is generous with the garnishing and gives a nice balance in layers of flavor in the soup. Food is always great but could work on their service. As often as I dine here, in my opinion I'm considered a regular. I order the same thing with extra lime but find myself walking to the cashiers counter to ask again for more lime. No friendly meet and greet. It could be that the girls are shy but still no excuse for not putting up a smile and a simple hello. Business would be better and food would taste that much tastier if only their customer service was better. Water is served for the first time but rarely refilled. A couple years ago I would rate this at 4 or 5 stars. The quality isn't like it was before. I used to eat the pho here all the time but it's not the same anymore. I don't know what happened, but it looks like the same owners....maybe different cooks. Every time I get my pho, I always taste the broth about 4 or 5 times and enjoy the taste. Then I'll add the condiments. Pasteurs used to be my favorite place to eat pho (even compared to the south end). The service is terrible, especially for someone who eats here all the time and I'm always generous with tip. I would say that the only thing that is still good is their spring rolls and the "shrimp tempura". The Vietnamese sandwiches are over-priced. Food is 5 stars! And price is awesome! $24 odd dollars for two entrees & two appetizers- and we have a good amount of leftovers. Best tofu Bahn Mi I've ever had- tofu had a great sauce, of the veggies the onion was perfectly cooked to still have plenty of crunch but caramelized flavor, and served warm which I prefer to the colder style. For the husband, a tasty veggie pho, went well with the sauce optional side toppings. We had fresh spring rolls and baked bread (which is like the bahn mi)- I had a bit of the bread but mainly it went good with the pho, I won't probably order it again just because I couldn't stop the urge of wanting an Italian flavored sauce with it :p They seemed busy which made the ordering seemed rushed, but when it came time to get check they took their time coming to our table. This is our go to pho place in the Everett area. The customer service is pretty good. They don't have chicken spring rolls on the menu, however if ordered, they always accommodate and make it happen. I really like that their veggie pho is full of flavor and has a large amount of veggies in it, when compared to other pho spots. My husband usually order the black tea which is very good and the beef pho and veggie pho. Each time we always leave full and satisfied. The only part that I am bothered with when we come here, is the sour stench that is hard to pin point to what exactly the smell is when you first enter the restaurant.
