We stayed at…read morethe Holiday Inn Express in Evanston(another review)and asked Weston, the evening clerk at the hotel, where to eat. He recommended the Lincoln Highway Tavern. We walked in at about 9:40 pm. The kitche closes at 10. We wouldn't have been surprised to be turned away, but the wonderful woman covering the bar and kitchen, forties, glasses, dark hair, was very friendly and gracious. She also took excellent care of us, despite really having to hustle. I had the pulled pork tacos and my wife had the teriyaki wings. The tacos(I ordered two)were stuffed with pulled pork that was very tasty, and came with crema, a sweet relish salsa, and cheese(a slight upcharge). My tacos came with tortilla chips that were crispy and well salted. My wife liked her wings. If we're passing through again, we would definitely stay in Evanston and have a meal at Lincoln Highway Tavern.

Hints of sweet sauce with sautéed onions and peppers. The onion rings were perfect and delicious... as always the service is on point. All of those things mixed together and twisted and pulled into a sweet singular strand of small town taffy. We bellied up to the bar later than we had hoped, in mid-afternoon. We met the current manager who explained the history of the spot, and while it's a little spotty, they've been around a long time in one form or another. She was related somehow to the original owner and it's passed through generations of families. There are strange gifts, new gifts, a lunch counter, booths, and a small menu board. We came in post-hike and got burgers because of course you get burgers. I can sum up the vibe of the food and the whole experience thusly: ME: "Wow, this tomato looks like it came from the garden." HER: "Ya, we get them from a guy who grows them for us. He's actually my old history teacher." Local, small, quirky, but very very delicious. Simple. I'm off shakes but by dining partner got one and it filled the cavity well. You have to stop in here when in Roosevelt. It's small town history teacher tomato good.

Ambiance - whatever, just some basic faux cowboy western type decor. Service was solid, nothing to get excited about but your order was taken quickly and the food came out in a timely manner and was hot! I am assuming that the various staples such as the onion rings, fries, etc. all came off the back of a Sysco truck. But the portions were generous and certain items just rocked. I got a classic BLT and it was loaded with bacon, and that in turn, had incredible flavor. I learned that it came from a local butcher called Chuck's Meats and if I had a cooler I would have stopped and bought some to take home. What is Hideout? It's your standard old fashioned roadside tavern. You get solid food at a good price and leave happy to have eaten there while traveling to and fro to some great scenery.

After being seated, we waited about 30 minutes just to place our order. Then came the long wait, we sat and sat and sat. After nearly two hours, the food finally arrived, and my tri-tip was cold. Unfortunately, the consistently slow service and poor experience make it hard to recommend this place. Save yourself the frustration and head up the road to somewhere else. Unless you love LONG conversations, and cold food that is.

We were seated at a table in far end of the room. Once seated it's hard to get in and out from the wall seat because the table are pretty close together. I ordered the Spinach, Mushroom and Swiss 4 Egg Omelet. They asked me if I wanted 2 or 4 eggs and I chose 4. As a substitute for the potatoes, I opted to choose the avocado which came as a slice 1/2 of avocado. For my toast option, I chose the single pancake, but could also have chosen a scone. The scone wasn't on the menu as a option, so I missed this when I ordered. My omelet was very flavorful, although a bit dense. I attributed that to the 4 eggs fitting into a 2 egg form factor, but I really don't know that for sure. The avocado was a good complement to the omelet and worked out very well. The pancake was delicious. There was syrup on the table and butter came on the plate. I gobbled it right down and thought that I maybe should have got another one. I have eaten here before when I was in the area, and will likely return again when up here. The busy nature of the restaurant is offset by the good quality food.

In fact the morning breakfast room had talk from other people of how great dinner was... We were not disappointed! We asked what was recommended and our server Sarah had a whole list of things that she thought we might like... We found out that they make all their own homemade sauces and dressing... And she wasn't wrong... There were six of us and we enjoyed crisp, fresh salad, and the dressings were amazing. I had blue cheese and it was just a perfect amount of blue cheese and dressing... Our friends had the Stromboli and they wolfed it down. They said it was really good and you can choose between homemade marinara or homemade ranch or both. My friend and I had the same calzone filled with all kinds of deliciousness... I have to say it was probably the best calzone I have eaten the reason why is because I don't know what they do to their crust but it's light. It's not so heavy and. "doughy".. in fact, it was so good that my husband wants to go back for lunch tomorrow and get his own calzone... He chose to get the lasagna and gosh that came out in its own skillet and it was bubbling and looked fantastic. He ate every little bit of it and said it was absolutely absolutely delicious. We had a great time at Gio's and the place was clean and cozy and has quite quite a bit of seating so it was really comfortable....
