We purposely came in as a party of 2 on an off-peak day like Tuesday at 5pm or something. It was pretty quiet save for one medium party of Viet uncles and aunties and a few other patrons probably getting off work and getting grabbing and early bite. Service is rushed, feels like some 1980s kind of vibe (as I get older I somewhat still appreciate and garner a sense of nostalgia) - the menu is literally just pho. And cash only. This is when I knew I'm in for a treat. We got a #1 and a #6, but honestly there's not much difference in the dishes. They're all constructed from the same base broth, use the same vermicelli but some omit certain toppings and others have some other special stuff. Whatever you get, the amount of meat is more or less the same. You can build-your-own-bowl too. The pho came out pretty quick. At first glance the broth is clear and they add a stupid amount of scallion and cilantro - something I VERY much appreciate. That first sip of broth - mindblowing. It's deceptively simple but because it's so clean you can really taste the layers and nuance through the depth. As we began wolfing through our pho, the broth became more and more concentrated as we worked out to the bottom. There is a LOT of meat hidden underneath the bowl, which is very wide at the top so they're able to fit a lot of things - easily hidden underneath the generous amount of toppings. Meat and tripe were good, nothing out of ordinary, vermicelli felt weirdly broken as opposed to long un-cut lengths. But by the time you get to the end of your journey at the bottom of the bowl, if you're able to pace consuming the liquids with the solids, you'll find a golden ratio - the oils and residue from all the toppings have now concentrated that initial pure clean broth into the cumulation of your experience. Because they add so much scallion and cilantro initially, you'll likely still end up with a few greens sprinkled in there. The pork chop has a really nice glaze, and while the quiche tastes a bit different from the typical version you'll find elsewhere, it was still very good. There are other spots in Eden Center that serve Com Tam for a little less $$, but Thanh Truc has always been a classic for me.
