I had ordered the crawfish pasta, popcorn chicken (spicy), and fried baos. The pasta was cooked perfectly with chunks of crawfish and sausage in a creamy tomato-esque sauce. I usually don't care for crawfish, but it was so delicious here. The sauce was so buttery and creamy, and the sausage added a cajun spice to the dish. The components are all very seafood boil, but felt different and innovative with unique flavors. The popcorn chicken was seasoned very well and had the perfect fried, crispy texture you'd expect from popcorn chicken. What really made this unique was the sauce that it was served with. I am not sure what exactly the sauce is, but it tastes like a ginger scallion sauce that is served with Chinese boiled chicken. The sauce is a little more elevated and flavorful than a traditional ginger scallion sauce. I would've never thought to combine popcorn chicken with it, but it works! The fried baos were the most surprising to me. I was keeping my expectations low because I usually think frying something that's not normally fried doesn't always bode well. Fear not, the baos were fried perfectly. They were fried lightly while the inside kept your typical bao consistency. Also, in case you were wondering the type of bao, it is basically a steamed bao with ground pork, and I think an egg yolk inside. The flavors felt very much like traditional dim sum, yet new and fresh. Hats off to the chefs and the creators of these dishes. So innovative while still keeping the familiar Asian flavors! For appetizers, we ordered the Crunchy Pork "Bao" since it sounded unique. Inside the bao is pork shoulder, mushroom, Vietnamese sausage, and quail egg. I was curious about Kei Concepts and their empire of polished restaurants around SoCal, and my first entry is here, at SUP Noodle Bar. I was also intrigued by the claims of one of LA's best places for pho. Unlimited pho refill is certainly convincing by itself. Luckily, I was visiting LA right when they started a beef belly pho lunch special, which made our meals such a fantastic value! - Golden "Bao" (one bao) Literally a steamed pork bun that's been fried, so it's crispy on the outside. It was interesting, and the fried aspect made the bread part more doughy opposed to pillowy. The inside was a typical minced pork meatball, a little ginger forward. I'm not too fond of steamed buns or meatballs, so not created with my taste in mind, but it's certainly unique. - Pho Beef Belly The broth is a little extra salty, sweet, and sour than I prefer. It's also more mellow yellow instead of a clear brown so I am missing beefiness. It could maybe could use some additional earthy spices and more savory beef flavor, though I respect that it's flavorful in some aspect. The beef belly basically comes off as hot pot beef slices, which are always welcome in my mouth. I found it interesting how we were asked whether onions were okay to include in the bowl when ordering. The amount of fresh green onions and cilantro atop the noodles were perfect. If I came here again, I'd try some other side dishes and get my pho shaken style, as that seemed to be popular. While I don't think the broth compares to my favorites in NorCal, I really like the refill availability and fusion sides. Considering they look a little extra fancy and modernized over a traditional pho place, the prices are still pretty good. Work on that beef flavor!

The staff was very friendly. If you download the app, you get a free side. So make sure you do so! It took about 7-10 mins for the staff to make the food, and you can see through the window that they make it fresh. Very yummy. Portion size is reasonable. Not great but reasonable. Price also is reasonable. Also, a cute food truck. Their pho looks good too. I will definitely try it the next time I catch them!
