I consider myself a (American) pho gourmand, having made an effort to try as many as I can in San Jose, LA, and homemade. Pho Today is pretty good, the pho had a decently boney broth, wasn't overly sweet, and all the right herbs (basil is key). The bun bo hue, however, was missing the requisite garnishes (no shredded purple cabbage, mint, or cilantro. They just doubled the portions of the garnishes for the pho) and was missing the sliced Vietnamese sausage, and blood cubes, so wasn't super impressed by that. The broth was decent though and they included the whole pork knuckle bone, which was appreciated. $18+tip on both is OBSCENE pricing. I know, I know inflation etc but $40 for two people eating two noodle dishes is like "special treat" pricing for food that is traditionally supposed to be on the more affordable end of things. That said, seems like most pho places around Central NJ charge the same prices so... guess I just won't be eating VN food here much. read more

However my pho-loving bestie found a spot she loves that does in fact have vegetarian pho options, and I am so glad! I was so impressed with the pho. I got the vegetarian mushroom pho and the flavors were EVERYTHING! I am a sucker for anything with mushroom and green onion and this combination was perfect for me. It was flavorful yet simple and the delicious umami, mushroomy, oniony flavors got me immediately. The hot broth with the different types of mushrooms felt like a warm hug. I wasn't sick but if I was it would've healed me right away. It was so fresh, warm, and comforting. If you're fond of Vietnamese food, this is the place for you. We had tons of items on the menu at fairly decent prices. the portions were generous and the food tasted great. Our party included several native Vietnamese and they guided us as to what would be best to order. When we went, the place was packed and a little chaotic. The service was OK but they needed to be reminded of some basics such as bringing water and to check in from time to time. This is the best pho place in the Plainsboro/South Brunswick/Princeton area. Though the pho/noodles are a bit more expensive, it's definitely worth it with its savory broth. The oxtail ramen is shockingly big that it's put in a separate bowl. It's quite good, and is also nice for 2-3 people. I personally prefer Pho Dac Biet which has a nice assortment of meats, which was good for my 2 young kids with even leftovers to take home. Get extra noodles if sharing. I got the most delicious grilled pork chop and had them add a cooked egg on top!!! It was cooked to perfection. SOOOO GOOD, my kids were all eating up my food! I had a lovely lunch from the Pho Today in Plainsboro recently, and I'm officially a fan! We ordered a bowl of Bun Bo Hue and a bowl of Pho Dac Biet (both to go), and we were thrilled by the flavors in the broth and the meat. The Bun Bo Hue was the star of the show. Though it wasn't very spicy, there was a certain complexity to the flavors in the broth that I loved. And despite this complexity, the broth still maintained the lightness that I have grown to expect in a good bowl of pho. I was anticipating a strong, possibly overpowering, lemongrass flavor, as another reviewer had complained about this a while back, but I didn't notice this issue in my serving. The flavors balanced themselves out very nicely. The service was excellent. I had accidentally placed my to-go order at the wrong location, but the person who I spoke to at the Plainsboro location quickly realized my mistake and was able to help me resolve it efficiently. I was surprised to see that the restaurant had a few patrons eating in on a weekday afternoon and two tables dedicated to holding a large number of completed takeout orders. Do not order the mixed meat banh mi!! The menu doesn't describe what these "mixed meats" are and I assumed it was some combination of pork, beef, and/or chicken. It was none of these. Instead, I got deli ham and deli turkey. The spring roll and the pho was standard, but I'm just really disappointed that they didn't clarify what kind of meat is inside the sandwich. Horrible experience today after being a regular customer for years! One of the female employees got my daughters order wrong and when my daughter called to explain the order was wrong, the female employee berated her and then proceeded to say "sorry". When my daughter walked in to pick the correct order up, this employee proceeded to snatch the bag aggressively out of my daughters hands. I called the manager to complain about his employees attitude towards my minor daughter and he responded with "so, what do you want". Needless to say never ordering again from here after being a long time customer I will be taking the extra drive and taking my business to Baguette Bistro in East Windsor. NY lacks good Vietnamese food, so I'm happy I stumbled across this place. The pho dac biet was above-average. The meat was good, noodles good, and portions good. I can't call myself an expert on Pho, so it would be unfair to award the 5th star. But this will be my go to shop. I saw this place pop up on Yelp and wanted to time my visit with a work day since I'd be very close. I mentioned it to a friend who about a week later told me she had already visited twice. She could be considered a Pho expert. Once I was home with my haul I could see the attention to detail in the takeout packaging alone. This was a good omen. I started with 2 apps, pork spring rolls and shrimp summer rolls. The summer rolls were plump and filled with veggies and a few shrimp each. I ate these hours later and they were still good, and I also like the sauce and crushed peanuts that came with it. I devoured the spring rolls immediately though, these may have been the best I've had in any Asian restaurant. Thick and completely filled with a dense( but not too dense) pork filling. Super crisp wrappers too. I will have to order this on any visit here. I tried their signature pho this time but will likely move on to others. The takeout serving was huge and perfectly thought out in regards to packaging and components. The broth was subtle but flavorful, noodles slightly al dente and ingredients were very fresh. My only issue was the meatball in it, good flavor but too chewy of a texture for this simple taster. My friend however likes the meatballs. The interior is casually sleek and would make for a good dine in option with plenty of seating. This is a small NJ chain and I hear the other locations are well reviewed too. P1b short rib pho is a show stopper, but note it is dine in only. Bring gloves, ask for scissors. Anyone who loves perfectly stewy short rib and a LOT of tendon will experience next level bliss. Pho Dac Biet, Cha Gio and any of the grilled meats over rice or vermicelli are always dependably delicious. Banh Mi is also usually quite good, though notably better on weekends.
