We traveled to New Braunfels for Father's Day since that is easier for my son and his wife with their six month old. We had gone to another place, but the wait would be too long. He picked up the "baby in a bucket" and we walked to this place instead. We were going to be coming here after lunch anyway, so we just got lunch here. This saloon is in a nice old building on Main Street. It was cool and comfortable. When we got there, only one other table was occupied by another family with a baby. The food was mainly chili and burgers. I got the blue cheese infused burger. It was delicious, but way too big. I opted for wedge potatoes for my side. They were wonderful! In fact everyone was very happy with their food. We got a little worried when a guy got on stage with his guitar and started singing with the volume booming. Much to our surprise, the baby seemed to really like it until he fell asleep right in the middle of the set. read more

We really liked Phoenix Saloon but the bartender kept telling us it was closing time. She was a real hoot. It was a beautiful day to relax at the bar with a cold drink and enjoy the music. It's quite the show when they make an old fashioned. I do believe we'll be stopping by whenever we're in Fredericksburg. read more

First time here. Arrived around 6 for dinner and a drink on a Friday. The place was fairly empty but i came for the ambiance and the chili! Great old building. You see it all around. Friendly and helpful staff. I ordered the small chili with cheddar cheese and sour cream. To start. The chili was amazing. It was as though i was having a good cut of tender steak with chili. Superb. I also had the Phoenix burger with potato wedge fries. So good. Lean beef. Very flaverful. Overall i would recommend and return. The live music this evening was a solo act. A little pricey and No super close free parking but it's a nice place to check out. I got a blackberry east cider on tap and it was pretty good. I also like the lighting and spacing in the saloon. Our bartender was super sweet and attentive. And honestly this place has some of the best ranch dressing! read more

I heard their burgers were good but they are off to a bad start, ordered it to go and got charged 1.50 to get it to go ask why I got charged the to go fee and the girl said don't know, they always charged a to go fee. Hope the burger is worth the extra fee read more

Love the burgers and sweet potato fries. Their Chili is pretty amazing as well. I lucked out and happened to show up on a Friday night when there was live music. Great dinner entertainment!! The waitress had an incredible memory and the cooks were quick to get the food out. read more

Had a flat Guinness, and we were stuck listening to a loud tv with a sports talk show on, had there been music on we would have stayed and had multiple rounds. Weird vibe but super cool space, we'd still come try it again (hopefully with some tunes!) read more

Stopped in while shopping downtown to grab a beer & a small snack. Braeven was our bar tender and she was super friendly and answered our questions about the history & about the menu. We'll definitely come back and ask for her!! We ordered 2 draft beers from a decent selection of taps.. IPAS to light beer selections. We also shared a small nacho plate with the Texas Red (mild version) chili and it was really good! It was daytime, so the music was at a good level. We were able to sit at the bar and talk. It appeared to be some locals and maybe a couple groups of tourists. Mixed group. We'll be back! read more

The chili was - as I would describe it - Dry. Needed some sweet tomatoes in it and more meat. I ordered my burger med rare and came out well done and dry but would have had a good flavor had it been done right. The peach cobbler was reheated in a crock and more like a bread pudding. On the bright side the bartender was very friendly and great drink prices. Lots of beers on tap. read more

This place lives up to the hype, chili was fantastic, I had the "Ring of Fire" version. It had some heat but was well balanced and flavorful. First of all, As for the owner's response to this, it looks Petty that you are grading me for being a patron at your establishment NOW please double check your cameras and do your proper research. I have a whole table of witnesses . Not once were the cops even mentioned . And you were defaming my character as a public business owner. I could sue you for defamation of character because everything I said was true. Go check your cameras go see the table I was sitting at. Go see how they remove my vape and threw it away. I did not have it at the end of the night. It was not sitting in my hand. I had two of them. Check your references first before you trust your untrustworthy employees .I am boycotting the Phoenix saloon. When I first moved here. I frequented the place. But then something changed. They began double charging my friends and I for drinks. And tonight was the last straw. I walked away from my table for about 5 minutes. I left my drink on the table with a business card and my vape covering the drink when I returned both drink and vape were gone. The remaining people at the table pointed out who had cleared the table. Two brand new drinks and a brand new vape gone and not a single employee would apologize. Do they realize that since the changing of hands the food service has gone downhill. The food is no longer what it used to be, so it is only the bands that bring the patronage. It's not the food and it is not the service. I can see the same bands that play there everywhere else. If anyone frequents that bar, please double check your bill at the end of the night. read more

We had been looking forward to trying the chili at the Phoenix Saloon ever since seeing it on a tv show. The place was rustic looking with a wood floor, a casual atmosphere, and the furnishings were simple... kind of the perfect place for a steaming hot bowl of chili. Our appetizer was the fried green tomatoes and was brought to our table by a friendly waitress. They were very hot and were very tasty with the ranch dressing. The Texas Red Chili though was not at all what we expected. It was as if they accidentally over-seasoned it giving the chill a harsh taste. It wasn't spicy as far as the peppery heat of the dish but it was too heavily seasoned for both of us. I thought the meat of the chili was some kind of chopped or shredded barbecue but the manager said it wasn't. She said it was sirloin. It must been the overpowering seasoning that gave it the smoky barbecue flavor. We had high hopes for their chili after the good comments on the tv show but were disappointed. The manager, even though we didn't ask for her, came to our table to ask us about our experience. She was very polite and chose not to charge us for the chili. I think it's a good place to go for the atmosphere and maybe for the burgers and other foods but I suggest that if you're thinking about getting the chili, you might ask if they would bring you a sample to taste beforehand. I'm so sorry that the chili wasn't what we expected. read more

Brief review here. We got take-out so can't really comment on the service, except that the person who took our order was very detailed and the order was 100% correct, right dow to the burgers being medium-rare. That said, we were really disappointed in the Texas Red Chili due to the lack of meat and the over-abundance of seasoning. It was a mild-medium spice level, but sort of tasted like it had a lot of taco-seasoning in it. The consistency of the chili was like a liquid stew or a heavy soup rather than chili. There was meat, but very small bits lost in the thick liquid. Burgers were cooked as ordered (medium rare) but were not juicy and somehow still tasted over-cooked. Maybe the meat was too lean, or cheap/dry? We're not likely to go back unless we read that they have improved the food. read more

Went to the Phoenix bar did not expect this to happen when my friend Tiffany Dawn on a Saturday night. It was so bad. The air conditioner had broken down. They had not put any other air conditioners on. They have the doors closed. It was horrible. People left because it was so hot. They said the air condition hadn't been working for two years of bartenders. Told us it's been broken for a while. I will not recommend this place. Not while their air conditioners are not working during the summer very disappointed. The band players were very hot. No extra fans people were complaining. They didn't even have the doors open. Had seven or eight friends of mine. They were very disappointed will not ever return. read more

Tried this place this weekend after seeing it on the Day Tripper. They use STEAK in their chili instead of ground beef. Their burgers are AMAZING. The staff here is super friendly and very attentive. Can't wait to go back and try MORE of their delicious food! You will NOT be disappointed. read more

This place used to be great but now it needs a complete reset from new owners all the way down to cooks. Only had 1 computer workin, took 20 minutes to order a drink on a friday afternoon. Buddy ordered the chili dog and it looked like garbage. Barely any chili. They used to be loaded with chili. I got a large bowl of double shot chili and there was barely any meat in it. Probably won't come here again until they make a change in everything read more

My review will be focused on live music. This old town saloon has the most wonderful bands come through. I've experienced lots of great live music here and would definitely recommend it. Saturday nights are the best for live music although you can catch some special nights with an open mic as well. Mondays are usually comedy nights. Cold beer and good drinks are on point. Came back after skipping for a while and glad I did. Last time I was here I was disappointed with the chili (what they are known for!!!). Came back as I understood they had made some big changes. Chili was excellent this time. So kitchen seems on their game now! And general experience was better. Rather than ordering at bar like you had to in past, they do table service. Neat historic place to eat and have a beer or mixed drink. We are the angus burger with fried green tomatoes and potato wedges. The burger was dry, but that may have been due to the lean meat. The tomatoes and potatoes wedges were absolutely delicious. Have to add that we sat outside on the patio on a sunny day. The table was filthy and sticky. The staff should check outside ones in a while, or leave cleaning wipes for the guests. read more

Drove all the way to the saloon for dinner because the website said they were open for food until 9, so at 8pm all the tables had sign which said bar service only; upon inquiry, the bar said, oh, we aren't serving food today. I hate inconsistency in a restaurant, so I am rating a one star based on consistency and dependability. I'd say call first, but I tried that and could only receive a recording, which mirrored the same erroneous information. read more

I've been going to this establishment for years due to its atmosphere, food, and service; not to mention its location. However, within the past three years I have noticed a very subtle decline. I loved going because of your fried pickles and that's what kept me going back, your service these past years can be hit or miss but the pickles were always consistent and delicious (not to mention your ranch). Despite my parents beginning to despise your 50/50 chance of having good service, I was always your number one fried pickle supporter, I've fought in your corner for three years. Then you did the despicable and changed your fried PICKLESSS. WHAT DID I DO TO DESERVE THISSSS. Anyway, I'm not mad, just disappointed. First time there wanting to support our local businesses. It also has a credible historical past. Besides the Saloon ambiance, everything else was disappointing! Food was horrible and overpriced, eating area was never cleaned and the service, not expecting much, but nonexistent, added to a very disappointing experience. Was pretty excited to try this place because all the good things I have heard about the chili. I ordered a large bowl and there was only one piece of meat in it! It was pretty hard to eat. Corn bread was bad. It's way overpriced if they only give you one piece of meat in your chili. I most likely will never return. Service was at the bar only. read more

We wanted to try the food at this place but got there right as the kitchen was closing for the night, so if you need some grub, get there earlier than 8pm on Friday nights. The good thing was that they had a solid whiskey and some good beer on tap to enjoy with the live music that was playing that night. Really liked the corner spot with sofas and coffee tables to enjoy a more cozy ambiance with my Wifey as we had been walking around town the entire day. We will definitely stop by for a burger or some wings next time we're in town! read more

Was really looking forward to having lunch here. Drove from San Antonio mostly to get something different and look around. Ordered our food, burger and a chili dog at the bar and a couple beers. For some reason our order didn't get back to the kitchen, I suspect it was because I didn't tip when I paid the bill. I usually tip cash and pay with a card. They do have waitresses bringing the food. We waited 45 minutes before they got the mess sorted. Food was very good and they comped us a 20$ gift card. We may go back. I did leave a 20% tip in cash on the table. Waitresses were good. read more

Went in for drinks, stayed for the karaoke. It was on a thursday night, but still about half full of people great Soundsystem and karaoke maestro. Bartender was quick with drinks and were reasonably priced. We are planning a trip back to new Braunfels next year and we'll go to this place once more. read more

Surprised to see that Yelp says you're closed on Mondays. New to the area. Came in for lunch after a round of job interviews. Noticed that it was a staff of just two people. Paige the bartender and the hardworking lady in the kitchen, Flor, pushing out orders. Paige was very nice! Very attentive. The food was delicious. I went "light". I had the salad with Chicken. The best part was how well cooked the chicken was. Flor, the chef in the kitchen pushed out food quickly. Very personable as well. Paige even had an attention to detail when it came to the fact that I didn't want a lime with my beverage. When I ordered another drink, she took the time to say, "No lime this time?" I've been in the hospitality industry for 25 years from Texas, NYC, to Los Angeles. I haven't been in New Braunfels long, but this was excellent service for a Monday lunch. read more

First time in the PS was to see Three Man Front. It was a great performance, the beer was cold, the audience and ambience was terrific, Ive heard a great deal about the Phoenix chili and how its made with sirloin, and have been eager to try it, but the kitchen has such erratic hours, that i cant seem to find out when it's available, even if i call ahead. Definitely an oppty for improved consistency. read more

This place is awesome!! I love old bars though I don't drink anymore but I would definitely have a beer here! This time however was just for lunch on a wonderful rainy afternoon! The hubs went with the chili and cornbread and I went with the chili fries to go!! It was so damn good!! We didn't talk to each other the whole time hahaha I say if you like sour cream get an extra one. Other than that I can't wait to eat there again!!! Love this place!! read more

History

Established in 1871.

The Phoenix Saloon was the first bar in Texas to serve women (it had a ladies beer garden with a bell in a tree for service). There was an alligator pit, badger fights and live music every Saturday night. In 1894, proprietor of the back room cafe (William Gebhardt) invented chili powder (devising the first process to crush and dry fresh chilis). Prohibition closed the Phoenix Saloon in 1918 (though for a couple more years the basement served as an illicit brewery, with tunnels cut to run the booze out under the streets of downtown). In March 2010 (after 2 years of bruising renovation), the Phoenix rose again as an historic Texas bar, chili parlor and live music venue. Bands such as Black Joe Lewis & The Honeybears, Hayes Carll, Alejandro Escovedo, Fastball and Billy Joe Shaver have all played here. The Phoenix Saloon has featured on The Food Network and won numerous awards including "Best Bar", "Best Burger" and "Best Live Music Venue".

You go way to the back and down a steep flight of stairs. My son, his wife, and I left my wife and grandbaby in the saloon and headed down. When you get down there, you are suddenly in a beautiful Tiki bar with so many amazing things to gawk at. It sort of felt like waking up in OZ. We were the first people there, so we got to sit at the bar and watch our drinks being made. They have about 15 or so different specialty tiki drinks. Each one comes in a particular piece of glassware. I don't know how the bartender keeps them straight. He was constantly pouring different things into a shaker. Then he would shake it and pour it into the glass that was already filled with crushed ice. One of the drinks even had a smoking cinnamon stick. My drink was really good. It was the Three Dots and a Dash. It came in a barrel and was decorated with a skull toothpick that had three cherries and a piece of pineapple to represent the dots and dash. It was super strong! I was ready to risk it all and go for another drink, but it had gotten packed inside the bar. We could tell the bartender was stressing. They really need two for times like that. My wife spends the night at my son's house in New Braunfels every Thursday to give them a date night. Evidently, this is where they always go. I can certainly see why!

The Cream Corn Crème Brûlée side dish is truly one of a kind. It perfectly blends the creamy, comforting texture of corn with that signature caramelized, crackable topping you expect from a classic crème brûlée. It was so incredible we ordered a second helping without hesitation. And then there's the Gilded Butter Cake. Honestly, it could easily be called something even more indulgent because it is that good. Sinfully delicious and completely irresistible, it somehow finds a way to make you forget how full you are. No matter how much you've eaten, you will make room for this dessert. It is in a league of its own. Hats off to the chef for an outstanding culinary experience. But as we all know, service can make or break a night, and Austin Eaheart absolutely elevates it. He was made to do this. His ability to connect, engage, and create an unforgettable experience sets him apart in every way. The only note I would add is about the initial arrival. When we first got there, we were asked to pay a cover charge for entry due to the rooftop bar and live music. Once we explained we were there for dinner, the charge was waived, but it did take away slightly from the elevated dining experience. When you're planning to spend a couple hundred dollars on a nice meal, being asked for a ten dollar per person cover at the door can feel a bit off-putting. That said, I am so glad we did not let that first impression turn us away. After taking our time and fully enjoying dinner, we eventually made our way upstairs later in the evening and were glad we checked it out. Dinner, service (Austin E.), and overall atmosphere completely made us forget about that initial moment. It would just be nice if there were a more seamless way to separate the dining entrance from the rooftop bar so guests coming in for dinner are not immediately met with a cover charge request. Overall, this was an incredible experience. Do yourself a favor and go. Ask for Austin E (they have a few Austin's but only one Austin Eaheart). You will leave full, happy, and already planning your next visit.

We came to Cowboys & Cadillacs as it seemed like a cool place to go. They have dinning inside. But outside roof top there is a huge stage, and big fire pit. The second level is more seating and a bar. A lot of people were out. A couple "brides to be" with their party were out too. The band was good. Ordered a blueberry mojito. Very nice. Also ordered their flat bread pizza. Loved the bbq sauce that was on it. And picked jalapeños. Great night over all.

It was so bad, I shuddered after every sip - and then I gave up. I ordered a water, and that was just as terrible! I don't know if it's the dispenser gun that carries over the flavors of everything else that comes out of it, or the ice is funky, or what, but I couldn't drink that either. I wish they'd have bottled water or something. Canned soda? Something that will make it enjoyable for everyone, not just the alcohol consumers? Being an occasional DD, there has to be something for me to enjoy, too, since I'm the one who decides how long we'll stay and when we'll leave if it's not good. Service was walk-up to the bar. Still, I give it 4 stars just because the overall vibe is really cool and the band we love was playing that night.

For several years, I have been the person responsible for cooking the family Thanksgiving dinner…read more Although it is not a task that I dislike, it does take some energy to get it on the table. Fortunately, if it can be considered fortunate, I had a total reverse shoulder replacement surgery a week before Thanksgiving this year. That gave me a "get out of kitchen" pass. We decided that Thanksgiving would be held at my son's house in New Braunfels. He and his wife have an 11.5 month old baby, so it's easier to do it there anyway. To simplify things, they shopped around, looking for a ready to serve, prepared Thanksgiving dinner. They selected the Black Whale because it was the most affordable, and they had heard good things about the place. The dinner package came with a turkey, gravy, dressing, mashed potatoes, greenbean casserole, and a pumpkin or pecan pie. They chose the pecan pie. When my daughter-in-law went to pick up the meal, the Black Whale had also thrown in a loaf of bread and a small loaf of cranberry cornbread. Altogether, they more than gave us our money's worth for this meal. Everything about the meal was good. The turkey was moist, juicy, and flavorful. I don't know how they cooked it or how they prepared it before cooking, but it definitely had flavor throughout. The dressing came in a little round foil pan and looked like some kind of rolls. It was absolutely delicious! It had a little bit of turkey meat in it that gave it a great mouth feel. But the seasoning was what really made it great. The mashed potatoes were very buttery and delicious, even though they were a little runnier than I like. The gravy over all of it was very good. I am not a very big fan of green bean casserole. I liked it back in the day when it first started showing up. But, after so many decades, I'm kind of over it. This was really delicious. It had lots of extra flavors in it. I'm pretty sure they used bits of ham. Since I am a boomer, the green beans could've been cooked a little bit more. My generation likes them cooked to death. I really don't remember my mother using fresh green beans for anything back in the day. I wish they had given us a much larger loaf of the cranberry cornbread. It was amazing. I had never tried a cornbread with fruit in it before. This was moist, sweet, and tart at the same time. The pecan pie was very good. I only wish I had had some whipped topping or vanilla ice cream to put on it. It could've been homemade. I don't think there's really much they could have done to make this a better Thanksgiving feast. Our family was very happy with it. Kudos to the Black Whale for a job well done!
