I enjoyed the breakfast and experience at Pistachio's. I ordered their veggie omelet option without cheese. It's a lot of food. Very hearty and pretty much covered what I needed even without cheese and with dry toast. The server was really kind. We ended up even in a conversation with her inexplicably about Dick's Sporting Goods lol. Didn't try any of the baked goods but they all looked appealing. Just a nice vibe in there for a conversation or getting work done. read more

Only giving three stars because based on the current average star rating, looks like they get it right most of the time. Ordered three items via meal delivery: two items wrong. Instead of offering to correct the order: "please call the third party to ask for a refund" unlike other restaurants that have offered to fix the order when they screwed up 2/3s of the order. Make damn sure you upgrade to real maple syrup or they give you coloured corn syrup. read more

Outstanding BFast fare! I'd be here twice a week if I lived in Longmont. The BFast burrito, smothered in green chili sauce was exceptional!! Ordered steak and eggs, and the steak was horrible. It had a weird smell and taste to it. Sent it back, and asked for side of bacon instead. Didn't offer to discount, didn't take off bill. Service was not the best. Not very busy and waitress didn't come around much. Took forever to top off coffee. Drove almost 40 minutes to try this place, extremely disappointed. read more

Food was good, restaurant was cute, but the service was disappointing. I met a friend for lunch today, it was my first time at Pistachio's, so I was unfamiliar with their layout and process. I walked in and up to the counter to ask if I should choose a seat. The lady behind the counter said "no, we seat you" and took me to a booth. I wonder if this offended the staff, because they were icy the rest of the experience. She tossed the menus on the table and didn't say a word. My friend arrived a few minutes after I was seated. The place was maybe half full and several staff members walked by to assist other tables, but nobody came to greet us or take our order. We waited a little over 20 minutes and eventually went up to the front to ask if we could order. The sever seemed annoyed to be helping us. We both enjoyed our meals and loved the cute cafe style. It's just too bad the staff was so rude. read more

Family run restaurant and it shows! Best cappuccino I have had in a while. I had enchiladas, full of delicious ingredients. My daughter had eggs Benedict and she loved them. Went here for breakfast on a Friday morning and it was pretty busy! We ordered a vanilla iced latte, an iced mocha, chorizo breakfast quesadilla, and chorizo cheddar omelette. Everything was really tasty! The service was definitely a bit slow and awkward, it took about 10 minutes for my toast to come out after our food came out and I had to ask for it a second time. Overall, very cute and tasty, but service could use some improvement! read more

Love this restaurant, however, was disappointed today. Chocolate cake was too dry, the cinnamon roll had no flavour and was dry also. I suspect both were a few days old. Also, the size of the grilled cheese sandwich was smaller than I remember. Service was fine. I will go back at least one more time. I want this little restaurant to succeed! read more

Down home cafe in Longmont with such a friendly staff and approachable food for breakfast or lunch. One of us had a yogurt and granola bowl which was lousy with fruit and yogurt. If possible I'd give this establishment 0 stars. I drove in this morning ordered an egg and cheese without and extras. And the worker asked if I wanted meat, to which I replied," no meat" she said it again to confirm, and then asked for a little hot sauce on the burrito. And she suggested "green sauce?" Without letting me know that there are meat products in it. I unknowingly agreed. And continued to order tater tots and their drip coffee. The tater tots were burnt and way too crispy to the point there was no white inside. As for the coffee it was watered down and barely warm. So I took them back and the worker had to call their supervisor to get me a refund. Then got back into my car to eat my burrito, I figured, "you couldn't go wrong with that." As I bite the burrito I can clearly see the chunk of pork. And tried to take that back, but the worker didn't want to call her supervisor again, she didn't want me to get a refund, then proceeded to say I'll have to wait 30min for her supervisor to come into work. And then said,"she trying really hard to be nice to me." When I was being as respectful as any other customer. Nor was I being unreasonable to my request for the product I purchased and the price I was paying. I just wanted good food. Next I'll take my business to McDonald's. They're better anyways. I will never return to this establishment ever. read more

We stopped in for an early lunch on our way to Rocky Mountain National Park. All of our entrees were very good. The French toast was an especially big hit. I had a reuben sandwich and it was quite good. The food came out pretty quickly and the staff were all friendly. The restaurant has a cafe vibe with a Hispanic flair. My kids still talk about the food as being some of their favorite on the trip. Would go back. read more

I was looking for a breakfast that was more than a McDonald's egg McMuffin or breakfast sandwich from a gas station. I found it! Pistachios is a cute little breakfast lunch restaurant with nice outdoor seating on a strip mall. Walked in at 10 AM on a Saturday morning and the place was hopping. a young woman took my order and as promised took about 10 minutes. The potatoes were crispy, the eggs were cooked perfectly and it was a good combination. Reasonably priced and the pastries on the shelves looked delicious, but I was able to resist lol I was in town For the week because of a softball tournament, but I would definitely come back if I am ever in Longmont. I definitely see this place as a regular stop with the locals and after eating here, I can see why. read more

Been eying this place for a while after finding on Yelp & let me tell you they're delicious!!! The best shakshouka I've had, it even comes with a cheese quesadilla to dip in the tomato sauce! Unlimited drip coffee refills too. The decor is nice and modern. Great service with the employees all being so nice! They have a breakfast and lunch menu but if you don't eat pork there aren't many meat options. Just a heads up :) The same owner is opening a Mexican restaurant next door which i can't wait to check out! read more

I believe these are the same owners from Rosa Cantina, next door. That means good food and good service! We've been here quite a few times already - their pancakes are great! You know how good they are when they get a little caramelized / crispy on the edges but stay soft and fluffy in the middle? That's their pancakes. I've also had a veggie omelet, which was stuffed full and delicious! Coffee's good, waitstaff is so nice, and you can eat outside if you like. It's a great place! read more

I'm very pleased with this restaurant. I had been trying to find a new breakfast spot in the Longmont area for a long time so I'm surprised I had never heard of this place. I ordered the stuffed French toast and a side of eggs and potatoes. The potatoes were easily the BEST potatoes I've ever had. They were perfectly cooked and really well seasoned, if I could just have a big bowl of potatoes I would. The stuffed French toast was good but I was disappointed as the French toast isn't stuffed. They just put a layer of cream cheese between the toast slices. They also only put the mixture between two of the slices rather all four which was disappointing. My dad got the breakfast burrito which he enjoyed. I'm sure I will return to this restaurant again but I probably wouldn't bother getting the "stuffed" French toast read more

They use garlic aioli and pinto beans mixed into your made to order burrito that creates a superior wrap. I promise this burrito will convert even the biggest skeptic. Just went to Pistachios for breakfast and had a bad experience. I asked for a spinach feta and onion omelette and a pancake. She rung in a vegetable omelette and charged me extra for the feta. Then I get this little tiny omelette with no pancake. I sat there for 10 minutes and my server finally came back and said my pancake was on the way. I told her I'm good, can I have my check. $20+ for a two egg omelette and coffee? Crazy read more

The communication between us was fairly good with the exception of a blip when there was a family emergency. Kellie was pretty nice throughout the entire process but I did feel a little like I was bothering her with questions. I figured since I paid her $115 for a 8 inch round cake, that it was okay to make sure it was being made the way I envisioned. At some point, I went to the baking section at Michael's and looked at an 8 inch pan and thought it was super tiny. I inquired about how much it would be to make it 12 inches. I've read that she charges by the slice but I was hoping that she could cut me a deal but it didn't happen. She just said that it added 'x' amount of slices and will be an additional $55. No worries, it's a business and I completely understand. My total tab on this cake was $170. We threw a few ideas around but I gave her complete freedom to do as she wished. I'm usually hands on with everything but thought it would be nice to just let an expert do their jig. When my babies big day came, the cake was nice. It was detailed and a lot of work was definitely put into it. It was just not my personal cup of tea. Nonetheless, it was a good center piece. I ordered a bubblegum cake and I wish I didn't. When I first discusses flavors I asked about bubblegum and Kellie said that kids like it. I wanted something different so I thought it was a good choice. I only cut 20% of the cake and not one person ate a complete slice. I threw a majority of the thing away the next day. I was a little disappointed. One kid asked me what flavor it was & I said, "bubblegum." In which he replied, "Oh yeah, it tastes like bubblegum...with puke in it." I'm not blaming Kellie for my flavor choice but I would have appreciated some honesty. I suggest sticking to a normal flavor. Besides the taste, the cake wasn't very moist. I believe she started to bake on Thursday for my Saturday night party since she emailed me on a Wednesday stating that she was going to get started the next day. I know the giant (Jack the Giant Slayer theme) on top of the cake was made later because the color was more vibrant and the texture was a lot better than the main cake. This is a "cottage food" business and I really wanted to love it with all my heart. I just feel that it was a little pricey for the overall experience I had. Given the type of home based business it is, I wish she could have worked out a deal with me for a bigger sized cake. I guess I just have a chip on my shoulder because I could have ordered an amazing half sheet of scrumptious Haupia or Hawaiian Paradise cake from the notorious Kings Hawaiian bakery for under $50 if I were still in California. Tasty Cakes Cakery is a great local choice if you have the money to drop on a custom cake. Kellie does great work. If I were to do it differently, I would choose a better flavor, draw out exactly how I wanted the cake to look & ask if she could bake the cake the day before. I would have loved to meet her in person but we did everything through email, postal service to send payment, and text. She also asked if it were possible to change my drop off time because her husband was playing a game someplace and wanted to watch it, which was okay with me. I was just in school at that time, so my husband was there to receive the cake without me. Anyway, sorry for the novel. I just wanted to share my experience with my yelp community. The prices are very high, and I don't recommend buying items you can find in your local grocery store or gift shop, but if you find interesting, unique, and beautiful items that you love, then it is worth spending the money, in my opinion. We were impressed and I would drive all the way from Littleton to experience it again. We basically built ourselves a little picnic and sat outside on the patio to enjoy it all. Bring your own plates, utensils if you plan on doing what we did. We made do with the plastic knives and napkins from the bakery, but it would have been better if we came more prepared. Lovely.
