Definitely a great experience at Pops for Chamgane! I stopped by Pops for Champagne on a Saturday afternoon around 3pm. The staff was wonderful, attentive and answered all our questions about drinks and other items on the menu. This is a great place to get drinks after or before dinner. Also a great place to just catch up with friends/family/anyone over drinks. I was debating between getting a cocktail or champagne and I think I will have to go back just to try the Pol Roger Cuvée de Réserve Rich Demi-Sec Champagne (mildly sweet, hints of caramel)!! It sounds incredible! I ended up deciding on the La Vie en Rose cocktail drink and I would definitely recommend it if you are looking for something sweet! The drink presentation for the La Vie en Rose cocktail was simple yet elegant. (i'll attach a picture!) We also ordered a cheese tray and it came with different types of bread, roasted pecans and some kind of dipping sauce (sweet flavor) on the side! Great Concept! This - not being your average bar, was a very welcomed change of venue and an even more welcomed change of drink offerings. I so enjoy Champaign but tend to enjoy it only occasionally which allowed me to really savor the moment here. We were here for my b-day - really enjoyed the atmosphere, drinks and the schmaltzy French movie that was on! THE YOUNG GIRLS OF ROCHEFORT Yeah, I'm THAT girl - hell I'm still crushing on Bruce Lee! We were there for almost 2 hours and enjoyed the ambiance so much that we didn't realize how long we'd been there let alone how many drinks we'd sampled. Can't speak to the food as we'd just come from having dinner at Marchesa which was fantastic. However a few of the small plates that I saw come out looked really tasty. Especially what appeared to be a Charcuterie plate that someone at the bar ordered ... looked SO good but I would have be done for the evening had I eaten it. Bellini Coupette(2) , Six Toed Cat; both very good. Don't remember the Champaign that I tried - I went with the bartenders suggestion. Very pleasing to the pallet but a bit dryer than what I like. I stopped in for a quick cocktail after a show at City Winery. Each time I visit, I think it is far less romantic than it sounds like it should be. The rooms are attractive with big street front windows. The large bar in the middle services the main traffic coming through. The bartender was efficient and friendly. He was very talented as he showed off his skills, creating a large variety of delicious champagne cocktails. Overall I like the place, I'm just not wowed. No complaints. Parking is difficult. Coming to Pop's for Champagne when it originally started on Southport near Illinois Masonic. Champagne is a must but they make all drinks and delicious. Great to meet someone or make it a destination. The rooms are attractive with big street-level windows. The large bar in the middle services the main traffic coming. The host and hostess were not the most welcoming folks, which does tend to get a customer off on the wrong foot. It's a champagne bar and those who know me, know that I have strong thirst for the good stuff... Strangely I was here twice in one night with two separate groups. #1: We didn't order food, just downed a bottle of champagne and our waitress was good. GUYS. I'm still thinking about the amazing bellini I had at Pops! Pretty sure the Bellini Coupette is the best champagne cocktail I've ever had. What made it so great you ask? White. Peach. Foam. It gave the cocktail that little extra bubble and was the perfect amount of peach flavor without being overbearingly sweet. Sparking Rosé and raspberry finished off this $13 masterpiece making it delightfully refreshing. I seriously had to pump the breaks and consciously sip in order to avoid just chugging this delicious drink! Pops has a super cute atmosphere and an impressive champagne list. We were lucky enough to enjoy some live jazz music the Sunday night I stopped in, which was fun. In addition to champaign, they offer wine, whiskey, scotch, and beer. My real star rating for this experience is 4.5 stars, mostly because I thought our service could have been nicer. Our bartender was not overly friendly or helpful, and I don't think he smiled once (which goes a long way buddy!). On top of that he seemed pretty annoyed that we each payed our taps separately. However what really had me miffed about this place is the wait staff, particularly our waitress. Through the whole evening she was interrupting our conversations and interjecting her own opinions and when we did ask for her opinion on a menu item she spoke down to us in a condescending tone that what we were looking at was not good enough for her vs helping us decide. Edit 12/3/06 Way to go pops with the new downtown location because after tonight's visit I am obsessed! I loved it from the minute my friend and I entered the lounge and I couldn't figure out exactly why. Then I realized that I felt young again! There weren't any drunk 22 yr olds falling all over each other at this lounge, but a fabulous looking crowd in their late 20s to early 30s. My friend nailed it on the head when she described the new Pops for Champagne as The Red Headed Piano bar for people our age! We were lucky enough to get a table in this crowded lounge (apparently word is out that this is the place to be). I was eying the cheese and fruit plates as waiters carried them by, but after a filling meal at Feast I decided to stick with a glass of champagne. The champagne wasn't anything special, but then again it was one of the cheapest glasses on the menu and I don't know my champagnes well enough to know the difference. After enjoying our champagne and some people watching (fabulous crowd) we headed downstairs to check out this jazz club that I've been so much about. There weren't many people down there so the waiter offered us a table (usually there is a $10 cover on the weekdays and $15 cover on the weekends). Not always comfortable, but that makes for better posture. I'm just sorry our Chicago-turned-SF yelp friend Andy F. had already moved to SF when I visited. That would have made the night. Very few places offer that by the flight to get to taste the subtle differences. On this night, we opted for champagne cocktails. I ordered the grapefruit one and it was just ok. However, the other three gals ordered the belllini which I was immediately jealous of. I like peach but real peach nectar usually is too sweet for my taste. This bellini was frothed with just a small amount of peach nectar that went A LONG way. It was more fragrant than anything and the cocktail was perfectly balanced with a little raspberry at the end. Pops for Champagne is a wonderful place for a celebratory drink. I'm not a huge champagne drinker, but I really enjoyed the Bellini Coupette (white peach foam, sparkling rose, and raspberry). They also serve beer and wine, so there's something for everyone. We were there on a Sunday celebrating our accomplishment of running the Chicago Marathon. I really liked the atmosphere, and there was a small jazz band playing. Unfortunately the service wasn't very good, but perhaps they were short staffed. If you like to sip champagne while you watch the world go by- this is your place! Stopped by here the other night and I was pleasantly surprised. We took a seat at the bar and checked out the place. A good crowd for a Monday night with a nice mix of office types with people out for dinner. I would have liked to have sat by the windows but all those seats were taken-oh well- maybe next time! The bartender, Michael, suggested a lovely crisp white wine which turned out to be an Albarino from Spain. Very, very nice!. We sat and drank our wine and enjoyed some lively conversation between friends! There are flat screen TV's located around the bar and they were showing beauty shots of champagne. Interesting, if you like pics of women in lingerie sipping champagne! We ordered some snacks including spicy tuna rolls, edamame, and crab rolls. The food came up promptly and also was very good. A local sommelier that I know from another restaurant (Moto)happened to be there with the Moet and Hennessey people and some other sommeliers from around town (Spring, Nacional 27, the Custom House, and Carnivale). They invited us to their tasting of some wines. Loved the impromtuness of it all! The sparking rose and the sparkling Chardonnay were quite good and it's always fun to sit and learn about different wines. All in all- a fun evening at a pretty cool place. All are quite large portions and can be share between 2 to 3 people. I have never had such amazing Cheese Curds (my #1 choice here). I will be going back just for the Moscato and Cheese Curds. We went on a Saturday around 10pm. It was very nice out, therefore, in Chicago.. EVERYONE WAS OUT. We only had to wait 15min (Very lucky). However, parties of two (2) are much more likely to have less of a wait, we were told. Valet is only $14. You cannot make reservations for parties under 8 FYI. It is worth the wait. I PROMISE. The decor inside is beautiful!!! It is relax and is a great date places or not our with the ladies. =)) The BEST part about this place is that you are NOT rushed. You can sit and relax and talk with the person(s) your with as long as you want. Usually downtown can be pushy so that they can change people out. Not here! If you like Champagne -- and really, who doesn't love bubbles? -- then this is a must stop. Pops is a stylish, if slightly chilly, lounge which celebrates this sparking varietal. They have a very impressive list of Champagnes, both Grand Marques and grower, and I especially like how the list organizes the wines into non-vintage, vintage, rosé, grower, and other regions. Moreover, the non-vintage section is broken down into full-bodied, medium-bodied, light-bodied, blanc de blanc, blanc de noirs, and extra-brut, which I feel is a terrific way to educate consumers about the diversity of Champagne. The grower-produced section is also organized into regions -- Côte des Blancs, Vallée de la Marne, Montagne de Reims, and Aube -- so you can see how terroir influences the characteristics of wines from each region. But even if you don't care for the stuff, there is a small but thoughtfully-curated selection of terroir-driven still wines to please even the most particular palates. If you need something stiffer, there is also a good selection of sparkling cocktails, so there is more than one way to get your fizz on. While I love the concept of this place, my biggest gripe is that the mark-up for the Champagne is really steep. Just one glass of will set you back about $20 or more; even though I was still thirsty, I was reluctant to order another round. The high pricing makes it cost prohibitive even to order a bottle, much less two. Given that, I think the consumer is much less willing to try a lesser-known producer than stick to the tried and true. If Pops is really serious about bringing people to Champagne and educating them on the varieties of types and regions, then they should really consider bringing the price down a bit. Pops for Champagne is awesome! I had seen it on Check Please and been anxious to try it since then. If you go on a Friday, expect to be surrounded by couples in various stages of making out. As the liquor starts to flow, PDA is abound. Friday night is date night! I went with seven friends and literally every table around us was a couple. I had thought the seating area was just that main area around the bar, but we were seated in a side room area. I preferred that area much more as it was a lot less crowded. They have a wide range of champagnes and wines with the cheapest bottle being around $35. Of course we went with the cheap stuff and it was a tasty one. They have some small bites which come with a big price tag. Everything I had foodwise was extremely tasty though just quite pricey! My friend got the marinated olives which looked more like green beans. It freaked me out that they were called olives yet looked the way they did, so I didn't even try them but my friend swore they were good. The fried sweetbread nuggets were delicious but you got just 6 tiny bites. The Chocolate Ganache is amazing!!! It's like a deconstructed Smore which amazingly rich chocolate that melts in your mouth. I highly recommend it but realize it's $8 for not that big of a dessert. I really wanted some cheeses as I'm a huge fan of cheese plates but there wasn't really a cheap sampler option. You either pick what cheeses you want at $4-6 each or you can get a sample of 6 for $30 (don't see the value in that). I didn't know which cheeses I would like so I didn't want to risk getting cheeses I didn't like at those prices! Very romantic type of joint here as I love settings like this in reference to champagne/wine bars. Such a sexy mood here with the dim lighting and and the view of state street along with the mirror like TVs that was not turned on that gave me a reflection of the street from the angle I was sitting. Me and a friend sat at the bar, but there were some comfy looking couches for groups as well as high tops. We drank nothing but rose' champagnes and sparkling wines. My first glass was the Conard VII Rose' which was phenomenal, but the J Brut Rose was awesome! We had maybe 5 glasses each and if we were smart we would have just grabbed a darn bottle, but its all good. The girl behind the bar Colleen was awesome in keeping us in the bubbles. I've been to Watershed once, a speakeasy bar tucked underneath Pops for Champagne but haven't actually drank here....that is until last night! It was Friday night at around 11:00pm, we were able to score a table right away (in the back). There were people in the bar, but it wasn't fully packed by any means. This place is perfect for lounging, not for dancing. If you expect to dance, just dance your way out of here to a club down Hubbard Street. It's a pretty classy/elegant ambiance. The fixture above the bar is unique with a TV attached. The tables have a light around the edges, which was pretty neat. This is not a place where you'll have difficulty navigating through a crowd of sweaty people or have people spilling drinks on you. For a party of two, they give you one drink booklet menu and one food menu. It took me a minute to realize I was hogging the drinks menu because I thought the other menu was also a drinks menu. Whoops! As you peruse the drinks menu, you'll notice that there are a ton of options with some astronomical prices up to $1,500 for a bottle. My wallet is just hurting thinking about it. Fortunately, there are some more affordable options. The first page has a list of champagne options, which I settled on because this bar has "Champagne" in its name. The prices by the glass are going to be your average River North bar prices of $15/glass. Based on the server's suggestion, I ordered the house special champagne (I think 2nd choice down on the first page that was $15 for a 3 oz. glass). It wasn't too sweet and was refreshing. The server was very nice and incredibly attentive. Our water was refilled in a timely manner, and she checked on us multiple times to make sure we were okay. Came in here looking for Watershed, confusion ensued and we ended up doing dinner and cocktails here instead. I wouldn't dare complain about that (well I would if I was being budget conscious that night) because Pops ended up being a very pleasant experience with some fantastic food and delicious champagne infused cocktails. I got myself their lobster buns and shared their lamb ravioli, both were incredibly explosions of flavour in small bites, especially when you chomp down on the lamb with the accompanying yukon blinis sweetened with crusted maple...ah hardly have I tasted something that was that unexpectedly sweet and delicious. I can't recall which cocktails I ended up ordering but I do remember they were worth the premium price. What I couldn't shake off about Pops was how proportionality large the bar was compared to the whole area where seating was limited to the edges. It's a great intimate atmosphere and very friendly service, can't find too much to complain about about Pops...but if you want something completely different from Pops just head on down to the basement were you will be treated with Watershed. read more

Oh My! Pops is my favorite place to get a drink in the city. Even though the atmosphere hasn't changed over the years it remains sleek, contemporary, and up to date. I like the juxtaposition of the old building against the sleek modern space. Please be aware that the focus is Champagne and wine. Therefore, I'm not sure what is available in terms of liquor or traditional cocktails such as martinis, mojitos, margaritas, or if these drinks are even available. Surprisingly beer is available. Not surprisingly though the Champagne and Wine selection is superlative in that it is the most extensive I have ever seen. One of my favorite things about coming here besides the atmosphere is the creative selection of cocktails. Really anything you see would be a most enjoyable selection. On a girls trip to Chicago, my friend and I came across Pops in the Uber ride into Downtown. We thought it was so cute that we had to come back when it opened! We had a rose and I think the Second Place Spritz. We also got popcorn which really was the best part! The drinks were great but that popcorn was AMAZING! Take note : This is a champagne bar! Possibly one of the best I've been to in the US! The staff was well dressed and polite. Upbeat music and great lighting for a night of celebration! The server was very knowledgeable about the items we were considering and gave great reasons why to choose certain champagne based on what I traditionally drink. The tables have an iced champagne bucket built into the table and the glasses are traditional curvy champagne glasses. The server even brought over other bottles to chat with us about the history and taste. I thoroughly enjoyed this experience! I felt like I belonged there drinking exquisite champagne. What I learned about Champagne is that you don't need to be celebrating anything to enjoy it...see it on a menu and want to try it? Just order it and drink it. And well, 4pm midweek, after a successful day of shopping, I stopped in for a drink before I made my way home. It was a gorgeous day and the sun and shadows just made the place so bright and inviting (it was truly a day to have Champagne!) Peeking in at night, it looks more sleek with the candles and dim lighting. There's at least 100 kinds of Champagne sold by the bottle and another long list of Sparkling wines from abroad and from the US. There were about 10 available the the glass or small pours so you can make your own flight. I am all about the Bubbly so I went with a flight. Gibourat Blanc de blanc Ruinart Rose Brut Ca' del Bosco I liked all three, but I knew I'd like the Blanc de blanc best as it was just a simple, clean flavor. Service was super friendly and knowledgeable. I think it was the manager who also stopped to chat. The pours were pretty generous considering I was ordering small pours for a flight. I think I might have found a new favorite spot to enjoy some me-time and bubbly! read more

Celebrating with a group of 7 we requested assistance in selecting a bottle of Champagne. Sommelier was excellent at collecting our preferences and suggesting a flavorful Champagne that was delicious delightful and within the budget request. Also had Fried cheese curds and flatbread appetizers. Very enjoyable time. read more

This place is pretty pricey - my group went after dinner & it was a great "chill" place to hang out as it suprisingly wasn't packed on a Saturday night. We easily got a window table & had a few varieties of champagne...around $25 for both flutes. Yeah, not cheap. This place is GREAT for people-watching (judging...it's okay admit it, you do it too). There are ALL sorts of hot cougar types in the bar as well as your usual mix of tourists in shorts and a tank top (woo hoo, NOT me for once). We shamelessly judged the ever-crowded sidewalks full of people. The service was fine except for when we wanted our bill - suddenly, the ever-present server was missing for a while...strange. read more
