We did have poor timing because it was parents weekend at FSU and a fraternity was hosting an event there so it was very busy. Passed by a couple of weekends ago to do a Pilates class that was being held at this brewery. The event was held at the back of Proof. The area was extremely spacious, with plenty of chairs to sit and sip a beer if desired. They also had menus on display there and in the interior, too. I was shocked by how ample this location was. The staff, too, was polite, and the parking lot had plenty of free spots. Proof, along with my Pilates gym, had a deal going on as well. I opted out of the deal, seeing as I didn't want to ruin my workout, but I will definitely be back to check out their beers and food. I liked the scene quite a bit. read more

Never coming back. I told the bartender I was deciding on two ipas. I asked to taste both so I could choose. Very normal request that almost every brewery is fine with. If I'm going to spend $7 or $8 on a beer I want to make sure I like it. Bartender said no. He states "samples are unsustainable" lmao. Give a better excuse man. Every brewery will let you taste beer before you buy it. He said we could buy a $3.50 smaple to taste the beer... no thanks bud. Beer is cheap and this brewery is making a killing off of it. Great vibe with a good sized grassy outside area in the back to eat Al La Fresca as well as play games. No wait service. Go to the bar and order your drinks. Cool place with a large outdoor seating and gathering area. Lots of their own craft beer on tap. They also offer limited menu food items and you order those from a separate area outside. The kitchen and wait staff for this were a bit disjointed and operated very clumsily. In the end, the food was pretty decent though - I had the pork sliders and fries. I would say that the food service and offerings are fine if you develop some munchies, but I would go elsewhere for a main meal. The beer overall is great, I tried two flights of four beers each. Parking is also limited. They also require that you get a wristband from them before entering the establishment. read more

Always a good thing when a brewery has enough options for me that I can make my own flight! That is few and far between so immediately we were off to a great start. We received our flights quickly and were advised that if we decided to order any food that we would just need to walk outside to their food area but would be able to use our open tab between the two areas. They are using a QR code for their menu on both drinks and food but do have a large beer board up as well. Only thing about the board is that it is located way far away from the actual bar and more towards the front door. They had wings on their menu, which sounded really good, they are prepared using the sous vide method but when I got outside to order I found that the wings were not an option anymore (or that day) so that was a little disappointing since they were listed digitally and should be removed for the featured item instead. We ordered the French Onion Wagyu sliders (3) with fries and the kids menu Chicken Nugs with fries. I was really surprised at the amount of nugs they give you for it being a kids menu item and they were really good and juicy. Could have used some honey mustard though. Ben loves French Onion soup so our curiosity was up on the sliders version using Wagyu. They were super juicy and tasted great, definitely could tell it was French Onion inspired. Unfortunately, the beer Ben wanted to take home with us was sold out. Oh well, maybe next time but that means it must be pretty good if they were sold out. Super Family Friendly brewery with a great outdoor setup. I love how it is super I closed and includes tons of seating as well as activities for kids and those who act like kids. You get id'd at the door and given a wristband or stamp (I don't remember now) if you are 21+. This makes it so much easier so you won't lose your id later on. The bar is inside where you had a large selection of drinks to try. I ordered a beer float and found a few beers that I liked. You order your food outside and the menu is up on the board. They had tons to choose from. Our favorite was probably the pretzel and the salad or and the Brussels sprouts. Honestly the food was all yummy. We had a large group with us and we had tons of space. My favorite thing was the giant screen showing the soccer game inside. Very cool Location with ample parking too. read more

I really enjoyed my first experience. The space and ambiance are really nice and I love that you can see into the distillery. The food was surprisingly delicious and fresh; I ordered the nuggets and fries and I was very happy. The nuggets were fresh and flavorful and the fries had the perfect amount of salt. We decided to try Proof Brewing since it is a short walking distance to the Amphitheater. Definitely a great option for drinks & snacks before a concert. The place was hopping. I am not sure if it is always so busy because it was happy hour or the crowd was busier because of the concert. Drinks - A+. They have beer, wine and some liquor. Drinks are ordered at the bar, so we had to wait a few minutes to place our order. I was very pleased with the beer choices I made. Food - B. You place your order at the counter outside, separate from where drinks are ordered. You get a number and once the food is ready they bring it to you. There are about 10 items to select from. We went with the beer cheese pretzel which was better than an average pretzel and the buffalo cauliflower which was also tasty. I wanted to try the shishito peppers too, but we didn't want to be oinkers. Customer service - A+. The outside area is super cute and very Covid friendly. This place actually makes me look forward to my next visit to Tallahassee, which is not an easy task. Fantastic selection of beers and food that was surprisingly good. We enjoyed two flights, including sours, porters and brown ales. The day we visited we tried: Fantasy Vanilla, Key Lime Pie, Nani, Kalani, Saturday Morning Cartoons, Flamingo Party and a Mango Wit that was the perfect ale to cool off with. Food is ordered separately, out the double doors and past the bar. The guy suggested the pulled pork sliders and they were the bomb! My honey had a smash burger which he wasn't thrilled with, but he was being a crab that day, and since he ate every bite, his opinion is null and void. The fries were great and the pretzel was yummy. They have a large outdoor area for games, partially covered so you don't melt. It's nice and cool inside with plenty of tables, large screens tvs and friendly staff. That was fun! My only complaint would be that it is too loud to carry on a reasonable volume conversation inside or on the patio. My son, who has a production sound business in LA, says some acoustic treatments would help, but there is a lot of concrete floor, straight walls and metal roofing that contributes to the echo chamber. Judging by the volume though, it seems like everyone was having a good time. Surprisingly, on a "Hot August Night", it was a pleasant temperature on the patio and out on the "lawn". Proof has done a nice job of rehabing the second generation Coca Cola plant (the original is in the All Saints area). The inside area was air conditioning cool. It is a large area with a nice mix of chairs and couches, tables and stools and a long bar with stools. The large patio has tables with stools and Proper @ Proof for your food. The large "lawn" has a mix of patio furniture, tables and chairs and tables with benches. Some have umbrellas as well. There are indoor games such as air hockey, foosball and the like and several bean bag toss games on the "lawn". There is no wait staff. Order your drinks at the bar and order your food at the Proper counter on the patio. They give you a number stand to put on your table and deliver your food to you, but it's diy for beer and drinks. We went on a Thursday night around 8 and it was hopping. By 10 or so it had cleared out considerably and was almost empty when we left at a little after 11:30. read more

One of the best places in Tallahassee! The space inside is very visually appealing. It elevates my idea of a Tallahassee bar/ entertainment venue. It feels modern with high ceilings and a view of the brewery through the glass behind the bar yet it feels warm somehow with comfortable seating. If I am wanting to impress/ entertain an out of town guest, I would definitely take them here. It was packed last night as it's a home game weekend, but that just added to the fun! Proof always seems to have plenty of bartenders so there's no mob at the bar. They are friendly yet efficient. My friends and I all love the Key Lime Pie Evil Kiss and my blood orange spritzer was delicious. We also ordered pretzel bites which came out hot with two different sauces. My friends and I have ordered them twice.... really good. Last night there was a band playing outside on the "lawn" made of astroturf. Beer was ok (Featherweight Lo-Cal). One thing I did not like was that they would not let you sample between 2 beers to make a decision like most breweries. They do have an amazing outdoor area. They also have a skeet ball, foosball and air hockey. EDIT: I was contacted by the owner which was awesome. I love Proof Brewing Company! They have a beautiful facility with lots of excellent local brews. Mango Wit is one of my favorites and can be found in most grocery stores. They also have a big heart for the community and the people in it. I've seen them involved in so many great local events, and it is always appreciated. Parking can be a bit challenging as the place is so popular, but there are places around back and on the side. There is plenty of room inside including the huge outdoor patio. Recently Proof asked fans to post pics on Twitter of dogs who had visited the dog-friendly place on International Dog Day. I shared a pic of my beloved Golden Retriever Bodi who sadly died that day. After four years of living in Tallahassee, Proof is still my favorite local brewery. The location itself is great, there is a lot of indoor seating (in the A/C), covered outdoor seating, and uncovered seating (where you can play corn hole and play with the cute puppies that people bring with them)! They have fantastic beers- I am always a fan of all of their sours. The only negatives are that parking is limited. If possible, walk to take an uber, because their parking lot only fits about 15-20 cars. Also, the food portions seem to have gotten smaller than what they served a year or two ago. This may be due to inflation, but last week when I was there with a friend, she ordered the fish tacos that I always used to order, and instead of getting 3 tacos, she got 2... Overall, I do highly recommend Proof- it is the perfect place to meet up with friends and relax! read more
