The cake here is amazing! It's hard to resist stopping by Pure Bliss when you're in the downtown area. Every time I go there I always try a new flavor and none of the cake flavors have let me down especially the salted caramel and the coconut chocolate bliss. Absolutely delicious. If you're not a huge cake fan you should try their lemon bars which are lighter and have a very nice amount of tartness. The only complaint I have is the minute you finish your slice of cake you'll be crawling back for more, very addictive! read more

Wrapping up our trip in Bellingham, the lady and I stopped here for some dessert. We picked up the mandarin chocolate cake and a chocolate peanut butter brittle/bar. I didn't care much for the brittle/bar but the lady wanted it. The cake however was delish. Soft and packed with flavor. You can taste the quality. It's a nice little shop. I should begin by saying that I don't have a sweet tooth. I've never liked cake, unless it was flourless or frostingless or some other -less that made it nonstandard cake. I've NEVER liked frosting, in the past it has literally made me gag. Pure Bliss has turned me into a shameless cake eater. It's so good. It has to be the real butter they use--only a healthy dose of real fat can make me this crazy for something, and the cream cheese frosting is sooo good. No nasty sugar grit from not being creamed long enough, just lightly sweetened and completely smooth. I've been here an embarrassing amount of times, considering they haven't been open that long. The coconut chocolate crunch cake makes me feel irrational, and the red velvet ACTUALLY TASTES LIKE CHOCOLATE. Everyone who works here is really, really nice. You don't feel dumb or unwelcome at all, which is sadly the case in a lot of Bellingham joints. Also, they all dress really cute. You all look very nice, Pure Bliss Employees! The decor is adorable and sophisticated. It definitely skews feminine (if you're into heteronormative stereotypes), but whatever, it's a cake shop. Honestly, this place makes me wish that I was a 21-year-old college dude bringing a girl out for a first date, because it would make you look like such a catch, like, "Hey, girl, I don't care that everything is pink in here, because I'm secure in my masculinity, and I want you to have something special." Seriously, 10,000 first-date points. Finally, most importantly, THEY HAVE ALCOHOL. I bet all the other dessert places in town are like, "Crap. Why didn't we think to serve beer here?" I ordered some petite cupcakes for my Mom's 85th Birthday, and they were a huge hit with everyone! We got Salted Carmel, Carrot Cake and Berries and Cream. Each was flavor was exceptionally moist, super flavorful (without being overly sweet) with creamy wonderful frosting. Generally, I am not even a "cake" person, but these were great! How adorable for Bellingham, it's an upscale dessert and wine, dare I say, parlor? Cutesy times a thousand and sweet in favors and decor. We headed there after a hefty steak dinner so I didn't do the damage I would have wanted! With a birthday boy in the group cake was in order, and the cashier was a doll and helped us secret a candle to top the cake: sliding me a lighter like a secret agent. I liked the brownies and cakes, the macaroons were toooooo sugary in my opinion but still good. I loved the vibe, couples sharing wine and dessert, and the cold case was full of gorgeous looking special orders. I found the prices a tad high, but as a specialty shop so be it. Disappointing. The Chocolate Bliss cake was bland and flavorless with an equally dull cream cheese icing. The only thing that was richly chocolate about it was the ganache drizzled on top. If you're looking for a rich cake without a pronounced taste or are sensitive to strong flavors, this might be up your alley, as it was dense and moist, but if you want something with intense chocolate flavor, give this cake a pass. I'm a little baffled why it's labeled as, 'Chocolate Bliss.' What could have made it better: Making the cream cheese icing tangier. I was having a hard time identifying it as it didn't have the usual tanginess I associate with cream cheese icing, and this makes me think that their Red Velvet cake will probably be something I'd want to take a pass on. I had to confirm with the associate at the counter to make sure. The addition of goat cheese to the icing might help in making the flavor more recognizable or at least noteworthy. Replacing the cream cheese icing with white chocolate icing. Make this a true chocolate bliss! The sweetness of a white chocolate icing would go well with the denser, more subdued flavor of the chocolate cake. Making the cake more flavorful. I'm having a forkful of the cake leftovers I took home with me, and it's just so bland. The cake itself is dense and clearly has a rich butter content, but it just isn't anything to write home about. Making the icing tangier or perhaps adding a little more salt to the cake batter might bring out the chocolate taste more by creating a greater juxtaposition of flavors. Possibly adding a raspberry or strawberry filling. I think adding a brighter fruit flavor that would pair well with chocolate and complement the icing would help. I made a simple raspberry sauce for my leftovers and it improved the cake significantly. What was good: The cake itself is, as I said, moist and dense - not a bit of dryness with a great texture. I arrived first thing upon their opening and the associate cut into a fresh cake for the slice I had. The service was marvelous and the decor is very cute. This shop is very high on atmosphere and if this was someplace my parents would have taken me as a young one, I would have been utterly enchanted. The staff was sweet and helpful, and were sympathetic when I told them the cake I had was not what I had expected. They also told me how I could check on what flavors would be up for slicing, so that I could decide whether or not what was for sale on any particular day sounded appealing. An updated facebook page with a daily menu is a great idea for a business that rotates its product availability. While the lay out and decor of the shop itself was nice, and the staff was kind, none of that makes a boring cake taste better. I regret choosing it what I did, but I plan on trying the other flavors on their menu and doing reviews of each. Hopefully I just chose a cake that wasn't to my tastes. read more
