Wonderful BBQ and a great experience! Red Chimney BBQ was a wonderful dining experience! The interior has a quintessential steakhouse-meets-log-cabin vibe--warm, rustic, and inviting. The food was fabulous. We ordered the one-meat special and chose the smoked turkey. Due to dietary restrictions, we could only have the mac and cheese and macaroni salad as our two sides. The turkey was smoked perfectly--nice and moist and, most importantly, not dry! The BBQ sauce had a nice tang that complemented the turkey perfectly. Both sides were also very good, and the portions were generous for the price. The prices here are very reasonable. Jill, the owner, was incredibly nice, and we had a lovely conversation about New Mexico. The service was top-notch, which made the whole experience even better. While in Carlsbad, we were craving some great BBQ and we found it here. Everything is made from scratch and they even have green salads on their menu. The staff is friendly and seated us as soon as we got there. The decor is as described. But what sealed the deal is their homemade Sourdough Cobbler! Cherries galore! The crust was perfect too! With vanilla ice cream!!! I wasn't going to have the ice cream as I'm lactose intolerant but once I saw it, I ran out to my car and got my Milky pills! No problems whatsoever! The ribs seemed alittle under done to me. And I did not like the Mac & cheese. No flavor. This is Kansas City bbq so the sauce has a little more vinegar zip. Service was good. The bark on this brisket was perfect! Nice deep smoke ring in it as well. Very tender and juicy. I also had the jalapeño sausage and it was very good! Beans were amazing, love the bread as well. Fun old-timely spot for bbq! The decor is top notch with lots of rustic memorabilia. Service was friendly and attentive as well. Racist place. The waitress very rude attitude. Didn't serve us only tea. She served several tables around us which people came later than us. It's an Anglo place and we're Hispanic. I normally don't write reviews but because of the attitude the waitress gave me and raced her voice at me in front of everyone telling me she wasn't the cooker and wasn't her fault I'm writing this. Great bbq in an unexpected place! We weren't expecting to find Kentucky bbq in New Mexico, but we are glad we did! She brought us out extra meat free of charge without us asking. We had the brisket which was super tasty and we enjoyed their traditional BBQ sauce. We asked her many questions about how they BBQ and so she asked if we wanted to meet the chef and see the smoker. We jumped at this opportunity. Tyler walked us through his entire process and seemed excited to share his knowledge with us. Our only negative is that we had hoped they would have corn bread. We stopped here for a quick dinner while on our way out of Carlsbad Caverns National Park to El Paso. Cute little place and nice quaint atmosphere. We enjoyed looking at the trinkets and mounts on the walls. We were promptly served by a very nice waitress--very nice and polite. We are with our three teenage sons. The menu was very meat heavy--which is to be expected--so if you eat here be sure you are in a carnivorous mood! We had the ribs which we had to send back, the loaded potato and the meat platter.
