I was extremely impressed then, but now it is time to try the new concoctions Gabriel Mason has added to his successful endeavor of feeding us locals. So today we tried the Loaded Texas Nachos and the Bull Sandwhich with potato salad and Mexican corn. I am absolutely in love with their blueberry chipotle bbq sauce. It is a perfectly balanced, slightly sweet bbq sauce; which is on all of their bbq offerings. This massive pile of crispy salty chips with their over the top, smoke ringed, ultra moist, cure your craving Texas brisket with melted cheese, sour cream, jalapeños, bbq sauce, and hot sauce was out of this world; and is more than enough for four people to eat. The Bull sandwich was loaded with moist smokey pulled pork and some of the best gator sausage I have ever had; which was stuffed in between a super soft cheddar jalapeño bun. The chunky ultra creamy sour cream based potato salad was amazingly fresh, but the street corn was just as fresh with a light dusting of seasoning goodness. The wagyu beef was perfectly seasoned, stacked with jalapeños and pepper jack cheese, and cooked just right. The patty was so big it was hanging off the bun all the way around--easily one of the most massive burgers I've had. I could only eat half, but every bite was packed with flavor. The fries were also seasoned really well and paired perfectly with the burger. I also got a full order of chicken tenders, and they did not disappoint--super juicy, flavorful, and cooked perfectly. The soup of the day was a green chili chicken stew that sounded too good to pass on, so I ordered that along with a side of Gouda grits and a side of sautéed green beans. The grits were delicious! The green beans were very good; and the soup was good. My wife ordered the Philly Cheesesteak with sweet potato criss-cut fries. The fries were bomb! The sandwich was okay, she was trying to figure out what was missing. On the way home she realized it was missing cheese. A cheesesteak without cheese?!?! Service was very good. Our server was attentive without being overbearing. This bistro is not cheap by any stretch, but it is good and I'm sure we'll return.
