It was a four course meal and it used the local recipes: Plus the red wine selection was his recommendation too. During the flambé three meat it was was presented and explained. When you are here in Old Quebec make sure you satisfy your tastebuds. For me I never had a venison puff pastry to start a meal and a maple pie to end.
