The neutral flavor of chicken lets the smoke flavor shine through really well and was a surprising hit. Sausage: A freshly-cut full link. Nice firm texture, medium smoke, and almost with a little snap to the casing which is enjoyable. Brisket: Of all the meats, this has the strongest smoke flavor with a nice charred bark on the outside and no fattiness at all in my cut. It easily pulls apart by hand. BBQ sauce: Texans are not known for their sauces and this is not exception. It texturally looks like a coarse pizza sauce and is sugary sweet. Personally not a fan. Potato salad: Not too much mayo, it basically tastes like a baked potato which helps clean your palate between meats. Beans: Very simple beans, not sweet at all and basically tastes like refried beans which I liked but some may find boring. Overall this place is solid, it's not the best BBQ I've had but it's a good option for being in a tiny rustic town. You get a large amount of food that justifies the price and the meats genuinely stand on their own without sauce. The seasonings are on the simpler side which is classic for Texas style BBQ. I think as long as you're not expecting KC style bbq with heavy rubs and tomato based sauces, you'll find someonething to like.
