This restaurant is pretty good. So let start with the not so great and end with the good stuff Not so great: there Mole is good, traditional made with chocolate. The issue is, is that mole should be slow cooked with the chicken for hours so the ingredients fuse. Here, they take the mole sauce and put it on top of the chicken like a bbq sauce The price. The prices are a pretty high. We have the mole, nachos and enchiladas. The bill came to $60 so with a tip you're looking at about $75. Good: The food overall is very good. The nacho chips are fresh and delicious. You could get the nachos and eat them as the meal. The enchiladas with chicken were very well made. It would have been awesome to have some re-fried beans but the beans were good and the way they make their rice...it was perfect. The corn tortillas and the enchiladas sauce were spot on. Would have like a tortilla with my mole though They also offer a pretty extensive bar and drinks. The environment is surprisingly authentic. They have done a great job with outside patio seating and the inside is decorated so you know you're in a Mexican restaurant The staff is really friendly but do tend to not check on your drinks as often as maybe they should but the service is overall very good If you get a chance, you should check this restaurant out. I just went here with my best friend we were excited to try their margarita flight. It was really good I tried 6 of 9 of their margaritas which were spectacular. I also got 3 different tacos while my friend tried their quesabirria. We also has the avocado. Everything was really good and their service was good not great. After about 5-10 minutes of waiting, I got up to check on our salsa request and I was told that they hadn't given us any because they didn't know if we wanted mild or spicy. I have gone to Rosa's a couple of times and probably would go more often with business associates from Denver but the music is too loud. The first time I went I met a business woman and we had to shout at each other. My second time I went I had people who were hearing impaired. I asked if we could have a quiet table and explained why. Love this place!! From the moment you walk in you feel like you are no longer in a strip mall but in a trendy little taco bar. The decor is super cute and cozy.
