Rosalee's definitely gets 5 stars from me! We went here for my wife's birthday recently, and we had put our name in and waited to be sat, and twice the host came up and said they had room at their community tables. We said we were ok and would wait for own table because it was a bday dinner! We finally got sat at this beautiful table by all these flowers and awesome plants on the back patio, and immediately order the sausage knots which were cooked to perfection and absolutely delicious. We then order the specialty square pizza that night knowing it would take longer to come out. When it came out it was perfect, delicious and everything we were craving. Needless to say it exceeded my expectations! When we got the bill the server had taken off our drinks and appetizers for the "long wait time", even though it was my wife and I's choice to wait longer for a separate table and the longer timed pizza!! This little surprise was honestly very kind and the cherry on top of my wife's bday dinner, and was not expected or needed at all from the Rosalee's staff, but they did it anyways, and that in itself is a great reason to visit Rosalee's. One of my favorite pizzas in the Denver area. The Sicilian crust was nice and dense, the toppings were excellent, service was great. They did charge for a side of the cold marinara sauce, and it was almost $12 extra to do the pizza 1/2 and 1/2, despite both pizzas costing the same. The pizza did not heat up as well as I would have liked, so avoiding leftovers if you can is a good idea. I liked the white pizza a little bit more than the salami and basil, but both were good. Don't love the communal seating, but we were lucky to get a table to ourselves on the beautiful back patio. All of the staff seemed so happy, like they really like working there. Stopped in here while chasing storms. I'm a big fan of downtown Longmont to begin with, and the Friday lunch crowd around the bar was some of the friendliest folks I met in a while, both the customers and the bartenders. Slices were great. I didn't realize how big they were and I ordered two of them, which was more than plenty, but I certainly didn't waste any of this excellent pizza. Great pizza, no doubt. Thin crust was excellent. Just don't split the pizza, especially if you get 1/2 white 1/2 red sauce. They warn you it will cost extra but THIS is ridiculous. They charged for EVERY item on both sides of the pizza. Take a look at this receipt. Ordered 1/2 white pizza with sausage, and 1/2 Margherita with pepperoni. The White pizza with sausage half was charged $6.50 for sausage. The Margherita half with pepperoni was charged $1 for red sauce, $4.25 for the mozzarella, $4.25 for the basil, and $3.15 for the pepperoni. Every single item was added as an "extra". Total bill for the one pizza, one lemonade and a can of cider was $60.77. As good as it was, probably not going back. read more

We made the drive from Denver due to the recommendations and it did not disappoint! We went around noon and it was already getting busy, we were able to walk in without a reservation and the service was great. We got to seat in the front patio and were served right away, very friendly environment. The ambiance is great, they are quick to serve you and come around. We started with a couple of Caesar's salads and they had homemade croutons that were delicious. You are able to order by the slice or a whole piece. Keep in mind there are only 3 options by the slice (pepperoni, cheese and the pizza of the day) the pizza was delicious! Thin style. I would recommend this place to anyone! I came into town due to an overnight layover in Denver, it was a whole thing with frontier cancelling my direct flight and re-routing me, but this is not a review of frontier. That would definitely not be 5 stars. Rosalee's pizza however IS 5 stars. My friends picked me up from airport and we headed out for dinner. They picked Rosalee's since they had been craving this pizza. I can see why. It's a small restaurant with not a ton of seating so we waited about 30 mins to get a table. I was pretty hungry when we arrived so to kill the wait time, I ordered a beer on tap, I believe I had juicy bits from Weld Works? Maybe that's right, either way it was good. They sat us at the area with a couch and coffee table. It's not a great seat for eating. If you're just having a beer it's fine but an actual table seat would have been better. The hostess said "some people love this low, lounge area and others don't like it at all". We fell into the latter but whatever, I was so hungry by then. Just wanted to eat. We ordered a round style half and half pizza and an order of garlic sausage knots. I tried a local cider which was tasty as well. They also have wine on the menu. We got the soprasetta & basil and bacon & ricotta pizza. Both sides were delish. I liked the bacon & ricotta a bit better. And for desert the only item they have on the menu is the pudding, which I would have never even thought of ordering cause it's just pudding! I don't love or hate pudding, it reminds me of being a kid in the 80s, and it's nothing something I eat anymore. But I'm glad I listened to my friend's recommendation because it was super light & airy and full of flavor!! Very rich chocolate mixed with the creamy flavor of the whipped cream. I ate the whole thing. So good! The pizza at Rosalee's is legit. The round style is a thin crust - crunchy and just right. I saw the square pizza on someone's table and that looked great also. The square is deep dish and I love that style also. I like all pizza styles... pizza is awesome. Be leery of someone that doesn't like pizza. It's a universally loved food. Pro tip- save the butter and garlic sauce from the sausage knots and use for the pizza. It's so good. We are not in Longmont often. But I had read about Rosalie's pizza on Reddit, so many people on the r/denverfood said Rosalee's was absolutely the best restaurant in Longmont. Well, we found ourselves up in this part of town one day and decided to check it out. We walked in and the vibe here is so chill. We took a seat at the bar and a young man with a lot of personality helped us out and took our order. Service was prompt. He kept our drinks filled, but the star of the show is the sausage pizza. They make the sausage in house and it is phenomenal. The pizza was perfectly cooked, thin crust, not overcooked with just a little bit of flop so it can easily be folded over. My New Yorker dining companion was very pleased. Highly recommend we will absolutely come here again next time we're up in this area. read more

This place was highly recommended by a couple of friends. So...I just happened to be in the area (well, I drove about an hour-but what's an hour for great pizza, right?) Well, let's get to business here. The cheese-great. The sauce-great. The crust-freakin' GREAT. You know pizza is at a high level when you like eating the crust. I always judge my pizza with a plain pie; but I got a half plain and half sauseeg-because I LOVE sauseeg...and I am glad I did. They didn't use that shredded cheap fake sausage. This was the real stuff, and it was also GREAT! Here's the kicker. The texture and crisp looked like an oven fired pizza, but I didn't taste that slight "smoke" flavor...so I AKSED the waitress (I think her name was Echo)..."what kind of oven are you cooking these in?" She says to me-she says..."it's a high tech ELECTRIC oven." WHAT?!?! I'm telling you, I was blown AWAY. This pizza was consistently crispy, but not overdone. It had the burn on the top, but not overly burnt. It was worth the HOUR DRIVE...that's how good this was. I'm giving this the nickname "The Electric Slide" and it is LEGIT. It wasn't burnt; it was over cooked. Therefore lacking flavor. [It should have never been served to us. To complain may have gotten us a properly cooked pizza. But then this would have been thrown out. Which I don't like; I don't like to see food Wasted. And I teach my 3 kids that Principle.)] My son mentioned it before I did. And when he did I said "I wasn't going to say anything". And that made me feel comfortable to write a note on the ticket "It was dry!". We had dinner here last week when we were in town visiting family. The sausage knots were calling our name, so we got two orders! The housemade sausage was so yummy, with the soft and crunchy dough surrounding it, covered in a garlic parm butter sauce. Need to know before you go: for lunch they offer pepperoni slices, cheese slices, and their special of the day slices. They also offer whole pizzas.For individual slices, that's all you have to choose from along with their sausage and garlic knots. Their menu has toppings listed but the waitress said I wasn't allowed to order mushrooms on my individual cheese slice. I'm assuming the toppings are only for whole pizzas. Didn't make sense to me so I ordered just the sausage knots and plain cheese slices. The waitress was nice but seemed irritated that we sat at an unclean table. It was the only small table left at prime lunchtime. We wanted to grab it and leave the bigger table for any bigger parties that may come in for lunch. Would I eat here again? Yes. The place has a great local and party vibe. The bar was filled and as I already said, there wasn't a seat to be had so it's obvious this is a much loved local favorite. I was impressed with how quickly we were greeted and seated because we walked in and it was VERY busy. It's a cute little restaurant that's set up more like a bar than a pizzeria but it's comfortable. We quickly found out why it was so packed, we ordered the garlic knots, and sausage pizza. The knots tasted fresh and were cooked to perfection. We did not expect for our pizza to be so big when it came out! I do not like crispy thin crusts at all and my husband loves it but this crust was amazing. Not so crunchy to where I felt like I was eating a cracker, but also not soggy and limp. The crust didn't offer a lot of flavor but the pizza sauce, cheese and toppings were DELICIOUS! It came out nice and hot and the sauce didn't overpower everything. The slices were huge and we could each ol let manage two of them. Once we were done they kindly boxed up our leftovers for us and quickly brought us our check. My husband and I went to the Longmont Art Walk on a very cool and damp evening so when we finished shopping we wanted a drink and hot comfort food. Rosalee's Pizzeria was close and last time we tried to eat there, they were out of dough. We had a wait but it was a Saturday night. We sat on a couch and had a drink while we waited for our table. And the best thing was that there were no televisions in the area. This might be a negative for some but for us it would be a reason to go back. We talked and I had a glass of wine while my husband had a beer. We got seated after about 30 minutes and they had put our pizza order in already so it arrived in about 15 minutes or so. Pepperoni, mushroom and roasted jalapeños make for a delicious dinner and the dough was perfect. Crunchy crust with soft dough and chewy. No soggy bottom here!
