Came home to visit family. Came here and they upgraded from the small shop they had behind Walmart to a big restaurant that used to be the clubhouse of the golf course that no longer exists. I'm glad they used the old business for good. There was open seating and the servers were sure fast and friendly. The kitchen is out in the open and you can see the chefs cooking . I found this little gem right here on Yelp! There is ample parking at this location. The inside is comfortable and modern, a very spacious dining room. I was greeted by a lovely lady with a happy and welcoming smile, she brought out warm chips and delicious salsa along with our tea and coffee. The menu had a very good selection of meals and we were impressed with the menu. We ordered the Chilaquiles and the beef chimichanga. Our meals were excellent, the rice and beans were authentic and flavorful the salsa and guacamole are fresh and delicious as well. I highly recommend this restaurant! The welcoming atmosphere and delicious food are some of the best in Pahrump! I know we are looking forward to coming back to try other menu items. read more

This place has fantastic Mexican food and is a nice restaurant in Pahrump. I've been here about five times, and it's never crowded. I ordered two tacos and had the breakfast scramble. Service is not super quick, so expect to hang out and talk with your friends and family. Order a margarita & relax. They serve you chips, bean dip, and salsa. This used to be a golf course clubhouse. They have a really large outdoor patio area, but sadly there are no chairs or tables outside. They might use it for events, and there is also a larger fine dining style room that seems to be unused. I imagine this restaurant would do really well with tables outside during the cooler months. I also observed quite a few people coming in for takeout orders. If you are looking for good ambience, and a fancy restaurant in Pahrump, this would qualify. read more

We were extremely disappointed in the food here. My sister got the 2 cheese enchilada plate. The enchilada sauce tasted like eating raw, tasteless flour. I got the enchilada-taco plate, and a side of Crispy potato taco. All I can say about that potato taco is Yuk. If you like a Hash Browns taco with zero seasoning and slap some sour cream on it. Then this is the place. The beans and salsa were fair, just lacked any seasoning or garlic or anything. The oil they fried the chips and taco's in made the food tasted old. The service was great. I hesitate to leave any negative review anytime. Not a local. 2 day visitor to Spring Mountain Raceway/Ron Fellows. Arrived on a Wednesday @6:45pm. Not a single other soul in the restaurant. (?) Usual chips and salsa were brought to the table immediately. Ordered two margaritas, one blended, one on the rocks plus an order of guacamole for the chips. Margaritas were worst ever, blended tasted like water, rocks was too concentrated. Guacamole was worst ever. Paid for drinks and guacamole and left without finishing either for another nearby and quite authentic Mexican restaurant. It was very busy with much better drinks and guacamole, plus we had two very good Carne Asada y Chile Rellano. Maybe this was just a bad night for Rubalcaba. Running a restaurant is a big risk. I'm so glad I found this Mexican restaurant in Pahrump! It's such a nice big clean atmosphere inside! You can order at front or sit down & they will come take your order. My son loved his breakfast burrito & I loved the menudo so flavorful but you must ask if you want hominy, so grateful they will add it because that's how I like my menudo! The complimentary chips are fresh, thin & crispy, the salsa is delicious! Very friendly staff ensuring all was well throughout our meal! I had the carnitas plate and the boss had the machaca plate. The plates include rice and beans with tortillas. The machaca is a beef/egg dish and it was our server's favorite - for good reason. The carnitas was cubed and was crisp on the outside with lots of flavor. The crunchy texture reminded me of pork cracklings and I really enjoyed it. Came here at 8:00 am for some breakfast deliciousness and they fulfilled. They have only a few breakfast items and we enjoyed them all. I had the Huevos Rancheros and they were really good. The red sauce was very mild, but add a bit of their red hot sauce and it was spot on. My husband racked about the breakfast burrito and he is a critic! Great environment with lots of beautiful decor and friendly service, the restaurant was pretty clean , food was pretty good , I had the Chile relleno , which is a stuffed pepper with cheese , drenched in a tomato sauce , the pepper was extra cheesy and the sauce was creamy not spicy more of a tomato flavor but good , also rice n beans pretty good .. my husband had the Camarones (shrimp) a la Diabla , which is shrimp in a spicy red sauce, he said it was really spicy but good . We also had flan for dessert , it was moist n sweet but not too sweet just right , loved this place definitely will be returning. read more

I've eaten at Rubalcaba's a few times. I'm not an enchilada guy but actually judge Mexican by its posole. Posole here is hit and miss. Sometimes it's robust nice broth. Seems always to have pleasant of meat and hominy but again posole is a soup/stew. Also traditionally posole is served with cabbage, lime , & cilantro/onion dice. There's comes with lettuce, onions, and some lime. The service is sometimes excellent sometimes lacking as with most small restaurants. The place is festive I've in mood but it's just above fast food joints. I've eaten at other Rubacalba's which are more like Roberto's but this one is a little better dolining area.
