I've said this before and probably have countless times: there's nothing more I love than Filipino breakfast food. Pancakes in the morning are too dull and too sweet for mornings, waffles too heavy and a crepe unthinkable. In fact, I am so bowled over by the heartiness of a "log" that I would be lying if I say that I only have it during breakfast. Whether it's a tapsilog, longsilog, adsilog or bangsilog- Nothing satisfies Filipinos more than that rich buttery silkiness of the egg, the garlicky fried rice and the savory meat that goes with it. This rustic breakfast/ lunch/ dinner dish is best eaten at Rufo's Famous Tapa. I don't know exactly who came up with the first plate of tapsilog but I do know that Rufo's has been making tapsilog for decades. They make it so well that their famous tapa actually has an iconic following. It has survived coups, revolutions and even bad 80's movies and it will probably survive the years to come because really, how can it not? read more
