I'll preface by saying I'm a tough critic on beef noodle soup. The noodles here are solid. They do have a hand pulled feel. The soup is just decent for me. All the meat toppings are enjoyable. Visited Ruyi during the Yelp event to support local businesses. Found out they took over the Crandall's location 2 years ago. The place looks familiar. We ordered more than we can eat for lunch but I wanted to sample the food they serve. We decided that the noodles will be hand pulled, not cut, not udon - after all that's the shop's name. I was lucky to witness the chef making the noodles - twisting, slapping, and of course pulling. It was fun to watch. First, we had two different types of hand pulled noodles. One that looks like fettuccine, used in the minced pork with soy bean paste dish. It is served without broth and in a brown sauce. Tasty and would taste better if it is served hot. Maybe it is because we ordered too much, the dish was lukewarm when we got it. The other hand pulled noodles is thinner, like spaghetti. It was used for the beef tendon dish and is served with hot broth. The hot broth keep the dish nice and hot throughout the meal. Lots of beef tendon pieces and tasty. Just the right level of saltiness for me. We are the complimentary mixed sweet buns (baos) me the next day at home. They were good. The bao skin is soft and nice. The fillings were tasty and not just the right level of sweetness. We had red beans, yam and matcha. The matcha fillings is the least of the three. Scallions pancakes were tasty too. Greasy but tasty. I think it can be less greasy. Maybe soaking up the extra oil before serving might fix that. It is crispy and has a palatable texture. Xiao long baos, the soupy version is also good. There's enough juice inside the wrapper. Wrapper is just thick enough to contain the juices without breaking when lifted with chopsticks. I've had versions with thinner skins. Lots of juice so put the whole thing in your mouth (careful it's hot) before biting, else the juice will squirt out onto your dining partners. Cold spicy (ma lah) chicken is also a good. A tad pricey for the amount to get but flavorful. The chili oil is the ma lah part. If you are not into spicy food, eat the chicken pieces (dark meat) with little too no chili oil. I did that and no numb lips. I would return to try the other noodles in the future. This is one of those restaurants that makes State Street so charming and enjoyable! When I tell you that my soul was rejuvenated after eating here, I hope you believe me. Honestly, it reminded me of home. My father makes hand pulled noodles and as a family we make dumplings together. The broth for the braised beef soup was divine. Noodles were fresh and chewy. Not too thick or thin. The scallion pancakes were super crispy. Cucumber salad was refreshing as well. Drinks are by bottle or can in a cooler up front or water self serve. I love how they have fresh scallions and cilantro on the side as well as hot chili oil so you can add what you need. They will call out your number when your order is done so go to the counter to pick it up. As of now, they will clean the tables for you when you leave. I'm definitely going to be a regular! Ruyi's noodles are a interpretation of the famous Lanzhou dish. I've had the luck of actually trying these noodles in Lanzhou, and while Ruyi's aren't quite at the same level, they certainly are a respectable version of them. It's quite a site seeing the man in the kitchen pull the noodles into thinner and thinner strands. I suppose it makes me appreciate the level of effort that has gone into the noodles, knowing that they really are that fresh. I ordered a bowl of spicy beef noodles. The bowl had a nice, flavorful broth with a good amount of beef and bok-choy, although I was missing the radishes that should have come with it. The spice wasn't overwhleming and still maintained a nice kick, although the broth got fairly oily over time. Because of how many students frequent the shop, it can be a bit of a wait to both order and receive your bowl. It's also an order and pick up at the counter type restaurant, so hopefully you don't spill your bowl while walking back to your table! Ruyi's noodles definitely have no direct competition in Madison as there's no other restaurant quite like it. He ordered the chicken and I ordered the spicy beef. I suspect the soup broths were the same, except that mine had the spicy ingredient. The noodles were really good; fresh. Highly popular casual noodle spot on State street. I am visiting Madison and let me say....this is an authentic Taiwanese noodle shop! I got the Braised Pork over rice noodles which was SO DELICIOUS. The sauce and the saltiness of the pork fare well with the vermicelli rice noodle. The popcorn chicken had a good amount of meat to crisp ratio and hit the spot as an appetizer! There are a few Asian restaurants in the area. Some are more nicely appointed, upscale. Some the service is not so great, nor is the food. For me, an Asian American born overseas, having sampled San Francisco Chinatown, New York Chinatown, Denver Chinese restaurants (a spectrum!) this one is =just right=. Food is delicious, piping hot. The hand pulled noodles are a must. The BBQ pork buns and the scallion pancakes: authentic and just like home. The soup dumplings were very good, hot pot was plenty spicy. Never had a bad entree here. The indoor seating, decor, disposable chopsticks and plastic silverware is Chinatown-adequate (even more authentic) and outdoor on the street was perfect weather for August. While walking down State Street I couldn't help but notice the delicious smells wafting from Ruyi when the door opened so I just had to stop in. I got lunch with a friend here on a weekend and there were a couple open seats we were able to snag. I opted for the duck noodle soup and him the chicken noodle soup. Both had great flavor and perfectly cooked veggies and meat. The only thing I would recommend would be a bit more veggies and meat to the soup, otherwise it was perfect! You could definitely tell the noodles were fresh, and you could even watch them make the noodles in the back behind the glass. We also got some baos to share that took me back to NYC Chinatown days. I was fortunate to be invited to try this place by Yelp- thanks Alli! I don't know why I haven't gotten myself here sooner. We tried the spicy beef noodle and picked hand pulled as my noodle of choice, mix buns, beef cold noodle and a scallion pancake. The Spicy beef noodle had the perfect amount of spice- if you need to add more, they give you hot chili, vinegar, soy sauce and sriracha on the side as well for you to pick yourself. The beef was tender and melts in your mouth, the noodles had a good chew and was perfectly andante. The cold beef noodle was surprisingly good. I am not usually a fan of cold noodles but wanted to give this try. I wasn't disappointed. In fact- I am picking this next time I am here. The scallion pancake was thin and extremely crispy. I wished I had room in my stomach to go for second. The mix buns were of matcha, red bean and taro. My favorite was the match- it even had bobas in it. Loved the addition! All in all, this was an extremely pleasant stop. We will definitely be back. Anyone who is craving for a good authentic noodle- must try this place. I was lucky enough to have been invited to try Ruyi for a Yelp event, and I'm super glad that I was chosen because this place knows how to make noodles and they have a customer for life! I can't say enough about the hand Pulled noodles, I tried a couple of them by themselves and almost forgot to add the duck and broth. Once I did remember to add the broth it took everything to a whole other level! The flavors were spot on for what I was expecting- hearty and flavorful. I did wish there would have been pieces of duck with more meat (many of them were quite bony). We also had trio of their sweet buns... These were also tasty, but not as big fan of the buns as the noodles. The Taro paste was by far my favorite. The bun was nice and fluffy and the filling was a tasty addition. The only downfall in my mind was that there just wasn't enough filling. I also tried the BBQ pork buns. What can I say I'm a sucker for these! These buns were great, close to as good as my mother-in-law makes them. The filling to bun ratio was spot on! Overall Ruyi Hand Pulled Noodles is a must try, you will not be disappointed. Lovely little place on State St that is accessible for the disabled (door is a bit tricky for wheelchair/motorized chairs and scooters - there's a turn to get in. The menu is not currently friendly for people with vision issues (7/21). They had recently added cold noodles to their offerings, and that's exactly what sounded good on a warm summer afternoon. I had beef as my protein. The noodles were chewy - in that al dente way - and dressed well in the sauce that it comes in. Veggies were also still decently crisp. I also ordered dumplings (gyoza as I know them) that were filled with pork and scallions. Very tasty and fresh! I did not try for a drink, as it appears they do not offer a soda fountain, and had a cooler with bottled options that appeared to be either Chinese or Japanese in nature. Bathroom appeared accessible, but perhaps not to those of us using mobility devices aside from rollators and similar. It is a decent size at least. Overall a good place to grab a bite on State St! The broth was somewhat flavorful after I added my home fish sauce. There was not much going on with it. I don't even know if broccoli even in traditional Chinese food. I love broccoli but I don't think it should be in soups because it tends to be a bit mushy. Also, the ratio was off because the dish had too much noodles than beef and broth. Next, their version of xiao long bao is not what I've seen before. I got xiao long bao before and it was supposed to be soup dumplings not actual buns. The pork and chives dumplings were so dry. The best Chinese food in Madison. The noodles are so delicious and the broth is to die for, especially the spicy beef noodle soup. It's got that spicy Szechwan peppercorn flavor that is absolutely amazing. Their pork buns are also amazing. You order your food at the front and they bring it out to you after - the service was quick and the space was very clean. We ordered the spicy beef hand pulled noodles and the braised beef noodles. Both were hot, flavorful, and the texture of the noodles was amazing. These noodles are unmatched! We tried the matcha tapioca, red bean paste, and the taro paste buns. All were sweet and subtle, with great texture. You can tell the dough is tasty even by itself. I've had the pleasure of eating here multiple times. I usually get the hand pulled noodles with any variation of the beef and a side of the scallion pancake. I more recently had the hand pull noodles with the duck and was blown away at how tasty it was for the price point. They have the crispiest and flakiest scallion pancake that I've had in Madison. Chili oil reminded me of what I I had while visiting Taiwan; floral and filled with just the right amount of heat. Definitely my favorite non-ramen noodle soup place in Madison. The only critical aspects that I'd hope to see improved is perhaps a fresher container of the self serve green onion and cilantro at the condiment table and larger non-styrofoam water cups. Regardless of that, still a 5/5 star place in my opinion for a quick and affordable noodle soup place. read more
