    Santiam moved from the downtrodden digs on Commercial to an even gloomier neighborhood ... now next to a non-EPA compliant auto body shop, and across the street from a ramshackle genuine Oregon Deerskin Glove workshop. But the biggest surprise discovered upon stepping into the best wine shop in Salem was the strong bouquet of roasted capers, garlic & balsamic ... yes they have food now. And its not diminished their great breadth of wine choices at all price points. So you can now get a $120 Brunello and a Charcuterie Plate - all while next to a cash-only body shop. I did not try the food ... but I did survey the crowd (and it was packed). Very mid-to late career aged. Demo seems to be about mid 50's with decent paying jobs. A smattering of folks in their 40's. Mostly coupled-up. Definitely a crowd that Considers All Things (i.e. lots of Prius' in the lot). Its very unlikely I will eat here for a variety or reasons, none having to do with the food I saw served (which looked very wine-bistroy). I think its cool to have a killer wine store with a nice selection of smoked pork in a run down blue collar part of suburbia. Makes it real for some reason. Screw Portlandia, we got Salemania.

    Wine Wednesday six Sauvignon Blancs

    My wife has been coming in here for lunch often and hit their Wine Wednesday a few weeks ago while I was out of town, her pictures of the food looked amazing(that night it was a crab macaroni and cheese) and it didn't take much to convince her to return for a wine Wednesday when I was back home. They did a 6 sample tasting of Sauvignon Blancs from a variety of regions, France, Australia, Oregon, and Washington and had a few specials that were paired with the wines for that evening. They have a wide selection of cheeses on the regular menu and had 3 picked out on the special menu which we ordered, really loved the Triple Creme. She got their special dish, a tempura shrimp (An awesome seafood/fish market is right next door, Fitt's, so super fresh) that was served with an Asian coleslaw. Got to try one of her shrimp and it was perfectly cooked and the tangy sauce paired perfectly with the Sauv Blancs. I went with the Italian Sausage lasagna, best lasagna I have found in Salem! Staff gave a wonderful recommendation for a red that paired well with my entree, darn it, can't remember what it was now. They do all their own baking here as well, so we got the limoncello cheesecake that was topped with a Swiss meringue, so incredible! I got a white port from Kopke to go along and the honey sweetness of the port was a great counter to the tangy sourness of the lemon. Also grabbed the last 3 fresh snicker-doodles from their bakery case to take home, and picked out 2 bottles of port to save for Christmas Eve because, yes, it's a wine shop as well.

    Have to downgrade my review from before. Made a 630 reservation for their NYE Champagne tasting. Arrived on-time and were seated. Didn't leave till 830. We were served room temp champagne for $18. Wayyyy overpriced for the splash of a pour. They ran out of the Lobster Bisque, which was heavily advertised as the special of the evening on social network sites, emails, etc. (Only made a pot of it). Service was spotty and honestly the person waiting on us, (who I think it maybe the owner?) was awful. She has waited on me before and she is just not friendly. No smiles, nothing. They were understaffed to say the least. From what I heard from another in my party the amount of people there was no different then any other Friday night. Disappointing to say the least.

They cook personally came out and raved about how he came up with this recipe and was the best in the northwest. It was just bbq sauce mixed with some ranch. Since then, and on a less busy day, The Vault has cleaned up beautifully. The barman was welcoming and quick on his feet. The sign out front read "BBQ is ready" and, sure enough, when I asked for the run-down, he talked me through the spread. In the end, a 1-meat 1-side plate won out. I requested the brisket (which was great, and generously portioned, though a bit dry to be the best in town) and the street corn (which was incredible, and definitely the best in town). It seems BBQ is becoming a competitive business in Salem! The Vault is keeping up with the best of them, but here's the real kicker: the plate came out to only $15. For meat of that caliber and quantity, not to mention the elotes, that's beyond a steal. If The Vault continues to offer this level of quality in service, food, and drink, any early-days missteps while finding their footing will be drowned out by the good times they roll out. I hope they can keep this momentum and continue to offer exceptional service complementary to great good and drink.
