This food truck was by my apartment so I decided to give it a try again and I am glad I did. It was less busy this time, and I had a much better experience. I ordered a cheese pizza. It was ready in a few minutes, and was really good! I liked the wood fire flavor on the crust, and was just an overall solid pizza. Would recommend if it's in your area. read more

Hands-down, the best pizza in Boulder! I can't say enough good things about Seb's. The ingredients taste super fresh and the crust is the perfect pillowy texture. While I've tried several of their pies, I keep going back to my personal faves week after week: the margarita and the white pizza. The red sauce on the margarita pizza is well-balanced (not too sweet, not too pasty) and melds perfectly with the fresh mozzarella, creating pockets of creamy richness where they meet. Fresh basil is always plentiful (some places are sparing with fresh herbs, but not Seb's!). Topped with a drizzle of olive oil, you 100% can't go wrong with this classic. The white pizza, while also fairly simple ingredient-wise, tastes *simply amazing*. If you're a fan of garlic and rosemary, this is your pie! The "sauce" on this one is a drizzle of olive oil and reminds me of the best cheesy garlic flatbread you've ever had, transcended to another level by the fresh rosemary. Finally, Seb himself is such a joy to chat with. If ever he's not too busy, we'll talk about anything from pizza and the weather to current events and life, and it's always fun to hear his unique perspective on things. Soggy pizza and warm water. Flavor was okay but too soggy to hold. Warm water with 93 degrees out was not okay.

Truly fantastic 'French Chef level' crafting by Seb's Pizza truck (and he is a French chef to boot). Love going locally in my neighborhood, each Wednesday, to get another (sometimes 2) of his pizza creations! I am vegetarian and his choice of sauce and locally grown vegetables is always stellar and tasty. My partner get's a meaty pizza also and loves it as well. My rating is one star, at least for the food quality. Other than that, my experience using Sebastian as a wedding caterer was very less than pleasing. Communication was always delayed by days/week, and questions were never answered (not a great position to be in for my wedding planner or as a bride), everything on their end was last minute. To top it off, he added extras to our finalized menu (and budget) during the wedding without discussion or approval, then harshly demanded payment on the spot from my dad and sister during the reception. The ending payment was +600 more than what we discussed, and he made false accusations about communicating changes. To this day (almost a year later), he will not resolve this issue. I wish I can say more positive things because the food was great, but he is the only wedding vendor I had issues with. The uptick and blindsiding of the agreed budget came at a terrible financial time for my family and I, and we tried to be reasonable and professional. Just tried Seb's pizza for the first time. It will definitely not be the last time! This is how pizza is supposed to be made - "pizza napoletana". I was stationed in Italy for four years and this is how I remember it. Wood fired at some crazy temp like 800 degrees. Great dough made from great flour and starter. Great ingredients. Super fast service since it only takes about three minutes in the oven. Hope he gets his restaurant here in Gunbarrel! read more

Good friendly service is a good way to start lunch. They had a food truck at a scooter tournament in Boulder and the delicious smell coming from the wood oven lured me in. I ordered a cheeses pizza and it could have been hotter but it was very tasty. The crust was thin and crispy and the mixtures of cheese were just right. I'd def return. This is some of the best pizza I've had. I prefer the European style handmade pizzas like this over the NY style pizza that most places have. So far I've found about 2 or 3 places in Colorado that have what I like and this is among the best. The sauce is light and fresh. The cheese is nice and not over covered. The crust is perfect with nice bubbles and a few blackened edges. 3 minutes to perfection. Love it. My only "complaint" is that they don't have a restaurant and operate solely out of a food truck which means I can't get it all time. If you see this place, go there. Simple as that. read more

Personally, I think Seb has the best pizza in Boulder. I order the Med, and I like to get it a little undercooked because I'm not a fan of the typical crunch that comes with wood-fired pizzas. The food is consistent, excellent quality, and delicious every time! Pizzas run $9-$10. read more

Obviously with this 1 star rating, I am not a fan. I'm sure your mileage may vary, but overall, this was was a very poor experience for a 1st time customer. Seb's Wood Fired Pizza stopped by my office in Louisville so it was nice and convenient to stop by and try them out. Let's start off with the service. This was during your typical lunch hour so I had already anticipated a long wait, but in my case, this was especially longer due to a mix up (due to customers not paying attention to who came/ordered first, Seb also not paying attention and/or losing track of who came first, etc.) The biggest problem with their service is that there needs to be some type of working system for when your order is ready. Their current system is basically: "Hey, your pepperoni pizza is ready, whoever ordered it, come and get it." I can see this type of system working in a low-volume environment, but this does NOT work during a peak lunch time period. In Seb's ideal world, we all should be ordering different pizzas within a given timeframe. Person1, you order pepperoni. Person2, you get Hawaiian. Person3, you get plain cheese. This way, there would be no mix-up because everything got different kinds of pizza. Now imagine a real world scenario... how many mix-ups are there going to be during a high-volume lunch hour? Needless to say, there was a mix-up where someone who came 20 minutes after me claimed MY pizza. I spoke up and Seb took the other customer's side (I have no idea why), which is silly since I had ordered way before said customer. In fact, when I had finished ordering, I could see the other guy still parking their car. So overall, the order took about 50 minutes total (30 minutes for the regular wait time + 20 more minutes to wait for the next guy's pizza). My advice for customers, order a pizza with pickles and anchovies... you'll at least get your pizza on time, eh? For the food quality, their ingredients seem fresh enough. Seb hand tosses it when you order and the pizza dough is fluffy and has good texture coming out of the wood-fired oven. I would say though that it was way too burnt. I was not able to eat the crust since it was way too charred. I probably would not repeat or try again since I don't feel like it's anything special. My advice for future customers is to try them during non-peak hours to avoid mix-ups. Or if you go during peak-hours, get a pizza with crazy ingredients so you can be sure no one else orders like you. read more

First, it's great pizza, the toppings were quality ingredients and the crust tastes great. My experience was with his catering. We hired him for our wedding, he emailed a "contract" a few days before, after not hearing from him for weeks leading up to our date. The contract was basically just a total, not an itemized list. We had ordered salmon as a SIDE for our guests so we ordered it for about half of our guests. Once the salmon ran out, we expected that to be it but Seb, without asking us or our wedding coordinator decided to cook more salmon the morning of our wedding and proceeded to charge us an extra $650 for the salmon that WE DIDN'T ORDER! After rudely DEMANDING payment the second after serving dinner from the bride's father he left without us knowing that we paid more than what was in our "contract". After the wedding we tried to talk to him about this extra charge that no one but him authorized and he would not respond to us. He definitely knows how to make some good pizza but he absolutely does not know how to run a business. read more

It is always a nice treat when the Seb's trailer roles to our office. The pizza is always amazing and consistent. Cooked in the mobile, wood-burning oven, the crust of the pie is amazing. It is never under or over cooked...always just right. My go to is the pesto pizza but have ventured to a few others from time to time. The service is beyond top notch and love chatting with crew. One of the best Food Trucks. The pizza is delicious, it is cooked fresh right in front of you, and I've never had to wait long for my food. I'm rarely motivated to eat at food trucks because they are so frequently slow and overpriced. The point of a food truck is supposed to be convenience but at many food trucks I could drive to a restaurant and pick up food faster (and cheaper) than waiting at the food truck. This pizza food truck is ahhhhhmazing! This French guy, Chef Seb - the owner - is a super freak about fresh, organic DELiCiOUS pizza!!!! I've tried a couple of different pizza flavors of his, but my all-time favorite is his simple magnificent Margherita - with slices of fresh mozzarella and organic basil!!! I add-on Italian Prosciutto and it is To. Die. For!!! I asked him about his 4 Cheese pizza, you know - like that 4 cheese, or quattro formaggi flavor - but, his isn't just 4 cheeses, it's 7 cheeses, people! And he is so fast. He told me it would take 5 minutes to cook (yeah sure, I thought). He was right - he told me his 800° wood-fired oven helped. I also very much appreciated his attention for health and safety - he and his staff wear gloves and masks - super clean. The last pizza I got, I pre-ordered and paid for it from his website - not sure how that works, but I didn't have to touch anything... except, of course, my steaming hot, bubbly delicious pizza!!!! We started out loving Seb's and would get it each time he showed up at Prospect Eats in Longmont, CO. Although over time the quality of the food drastically dropped. It almost feels like to keep up with the crowds he turned up the heat on the oven to crank food out faster. With that you end up with a burnt and soggy pizza at the same time. Every once and awhile we still test the burnt / soggy pizza to see if it has improved. I think with Seb's success the quality of his product was lost. read more
