I've driven past this barbecue place countless times and always told myself I'd try it, but somehow never caught it when I was actually hungry. This time I finally stopped, and since it's called Serious Texas Barbecue--and I'm from Texas--I had high hopes. I ordered the ribs and brisket, along with cheesy potatoes and beans. The beans were originally just regular pinto beans (not sweet), so I asked them to add brown sugar. Once they did that, they were phenomenal. Easily my favorite side after the adjustment. The cheesy potatoes, unfortunately, were a miss. They tasted a bit soggy and like they'd been sitting out for a while, so those weren't great. As for the meats: The ribs were okay. They didn't have much seasoning, but they were very tender, so I'll give them that. The brisket was the standout for me--definitely the best thing I ordered. It was absolutely delicious in terms of texture and flavor, though even that could've used a bit more seasoning. Now...the barbecue sauce. This was the biggest letdown for me. It honestly tasted like applesauce, which just isn't my thing at all. They only had two sauce options, and I really wish there was more variety, especially for a place branding itself as Texas barbecue. Overall, it was just okay. I don't think I'd go back--not because it was terrible, but because I'm from Texas and I'm very picky about my barbecue, especially the sauce. That said, the staff was friendly, and I can't complain about the service at all. If you're not super picky about BBQ, you might enjoy it more than I did--but for me, it didn't quite hit the mark I forgot to mention the apple cobbler. We were visit Fort Collins on a trip but my wife graduated from CSU. She knew all the spots to have me try and Serious Texas Bar-B-Q didn't disappoint! The restaurant was clean and well kept. The staff were kind, quick and professional. I was not prepared for this experience but was so glad we came. Brisket and pulled pork were the stars besides that Marion berry cobbler! As a Texan visiting Colorado, I felt I had to give this one a go. I've been craving ribs and that was the highlight of this meal. So tender and good flavor. The brisket was a miss for me. It was so fatty it was gross. The potato salad was great but the chipotle Cole slaw was a miss. It didn't have any flavor, just a delayed burn. My husband liked his potato and we decided the pulled pork was better than the brisket. Overall I'd go again and just get a slab of ribs. I'm from Texas is this is nothing like it. Ordered a 2 meat plate but they change extra if you ask for brisket. Found this out when paying. Brisket was overcooked. Pulled pork was very bland. Beans were overcooked and starting to form into a paste. BBQ sauce has overwhelmingly heavy on vinegar. In summary I felt that my $26 dollar 2 meat plate was only worth about $9. read more

Probably the best brisket in town. I always ask for chopped, moist and leave the fat and bark on it. So far it's never disappointed me. Ribs can be hit or miss, sometimes overcooked. All were completely delicious- but my favorite was the cheesy potatoes! The folks that work there were super friendly and informative. We even bought some frozen sausages to bring home. Very disappointed with service, quality of food and the store was not the cleanest. First the service...nice but teenagers (maybe early 20's, but I can't tell). So don't want to be there. Food..ordered 1/2 chicken and was stunned! It looked like they opened a bag of sliced chicken breast and put it on a plate. No way you can call that 1/2 a chicken. Ok, you put "Serious Texan" in your name and as a proud, native Texan that is the standard against which you will be judged. The brisket was flavorful even without any sauce, as was the sausage. The pinto beans had more of a ranch-style flavor which was an unexpected surprise! The potato salad was served chilled and not room temperature which was also a nice surprise. Finished off with a good cup of cherry cobbler and if the sweet tea had actually been sweeter, you might have earned that fifth star and a capital "T" for Texan. Our favorite Thanksgiving tradition is getting a Serious Texas Bar-B-Q whole smoked turkey. We look forward to it every year-it eliminates the stress of cooking a turkey ourselves so we can be more present with our family, and is by far one of the tastiest things we've ever eaten. I eat here occasionally. I've never had a negative experience. Super friendly staff of mostly youngsters. It's the usual thing with Route 66 and tractor/farm shit on the walls. And of course paper towels on the table. The music sucks at this location. I think they were blasting Coldplay type stuff last time I was there. Not my tempo. They should be blasting Stevie Ray Vaughan or ZZ Top at a Texas themed restaurant. Anyway, the food? I get the sausage link sandwich and a loaded baked potato. A lot of tasty food for good value. Big portions, and the stuffed baked potato is a meal in itself. Their bbq sauce is great. Not spicy but not tame. Just the right amount of hot. And the food is really fresh. So it's way above average for a bbq joint in Colorado. Ultimately, in a Texas town the same size as Loveland, it would probably be the 3rd best bbq in town. But in Loveland it's ace and the food is excellent. Great service too. Give them your money. I'll always go back. read more

This place isn't too bad. As soon as you walk into the shop, the smoke hits you. I feel like it is a little smokier than another famous BBQ joint in the state (same name as a famous football movie). I do love the smell and I definitely smelled like it afterwards. Price seems to be along the same lines as that place as well. One big difference is that there isn't a choice between a leaner or fattier cut. I definitely prefer the fattier meats. This place has cuts that claim to have both the lean and fat in the same cut. I personally felt like the meat was leaner and even drier. I ended up putting more sauce on it to get some moisture. My friend got the loaded potato. It was absolutely loaded! I would never pay as much as he did for a baked potato, but apparently it is a must try at this place. They have a sign that says once it's gone it's gone, so it must be pretty popular. He said that it probably isn't worth the price paid. One thing I liked is they have an automatic handwashing station. Pretty cool! read more

Came here on a recommendation from friends. I ordered the pulled pork taco and it was fantastic, the sauce that you can pour on top tastes to me like a Carolina bbq. I came back a second time and ordered the taco and brisket sandwich. I was a little disappointed on the brisket because the fat on the bottom of the brisket was left on and I got a mouthful of fat. I got the 2 meat platter with brisket and pulled pork. Starting from the top: brisket was dry, overcooked, did have a nice Smokey bark, but relied heavily on the sauce. The pulled pork was slightly better, kinda peppery, good but nothing great. For sides I got the cheesy potatoes and the potato salad. Cheesy potatoes taste great, but are unimaginative and get cold quickly. The potato salad was non-offensive but easily forgettable. Good bbq doesn't need sauce, but this bbq was begging for it. Their normal house sauce is vinegar based but has no weight to it. Their peppery sauce is intentionally over flavorful to compensate for their overcooked meats. Had the pecan pie- you can skip that too. They did do a great job curating the space and the outdoor seating area looks amazing, but I won't be coming back for just their patio when there is far better BBQ in town. read more

This is absolutely one of the best BBQ spots in Colorado. I had the brisket which was super tender, Smokey and fatty and the pulled pork which literally melted in my mouth. Even the sauce is next level. Not that ketchup-y style, more like Carolina sauce that was perfect with the pork. Even the slaw was fabulous, with a spicy spin on it and just enough sauce so the cabbage isn't swimming in it. Seriously, I've had Texas BBQ many times IN Texas and this is just that. This place is seriously (no pun intended) the best barbecue I've had in Colorado, hands down. The food here is so good, it runs a very close second to some of my favorite barbecue restaurants in Dallas. Trust me, I know that's a very bold statement, but it's true. I highly recommend the turkey sandwich. This thing is piled with juicy turkey and has a cranberry habanero sauce, as well as a jalapeño mayo. The restaurant has a very cool decor and was very clean! The staff are also pretty nice and knowledgeable about their menu as this was the first of many times at this establishment. Everything is priced fairly and portioned well! Very so so food. We went on a Saturday evening and it was pretty empty. The food concept is very fast but the meat came out fairly dry. We got the two meal combo along with the pulled pork sandwich and the wings. The wings came out a little hard as if they were under a heat lamp for a while.
