I tried the brisket and it didn't disappoint. The Mac and Cheese was on point and portions fair. I also tried the Coleslaw it needed a little salt and could have use a dash more of flavor. I've been to the Durango locations and had much better experiences there, so this Fort Collins spot was a real disappointment. The service was friendly and efficient -- no complaints at all about the staff. They were polite and welcoming. Unfortunately, the food just didn't measure up. The brisket sandwich was honestly horrible. The meat didn't resemble sliced brisket at all -- it was more like ground-up meat mixed with fat. It lacked texture, structure, and that classic smoked brisket quality you expect from a place calling itself "Serious" Texas BBQ. The potato salad was bland and forgettable, with very little flavor. If you're looking for good barbecue in Fort Collins or Northern Colorado, I'd recommend choosing somewhere else. This location is nowhere near as good as the Durango stores. read more

Excellent options and never cheated with portions (the tacos are STUFFED)! Absolutely love The Bird and Texas Taco. Can't make a trip there without getting at least 1 of The Bird. The pork nachos are a nice change, but I've had better. We order turkey, brisket and pork by the pounds to eat for a couple of meals. The turkey breast is our favorite. The BBQ sauce is very sweet and we love it. We decided to order a turkey breast from here for Thanksgiving and it was a brilliant idea!!! We hosted for family and everyone loved it. The pulled pork is just okay. Certainly not great but far from the worst I've ever had. The brisket is very tasty but the VAST majority of the cut i received was fat. And it wasn't just "fatty meat", it was giant slabs of gelatinous fat. After reading some other reviews, this seems like the norm. So I paid $9 for 3 bites of meat.... really wish I could have tried more because the taste IS on point. The sauces were interesting... the barbecue sauce was watery and inedible but the orange-japapeno mustard was excellent. The pepper sauce was unique and spicy and salty. We were here on a Saturday mid-afternoon. There were three employees handling orders, two male, one female. They were pleasant and put together our order in a short amount of time. My husband got a brisket sandwich, I ordered mac & cheese with smoked sausage. Our food was good and the pickles are tasty. I wanted to use the restroom after we ate because we had a long drive home. The reason for loss of stars was there was no toilet paper in the women's restroom. To the point where someone had made a cardboard sign and taped it to the door noting there was no toilet paper making it pointless to ask the employees if there was more. There was no such sign on the men's room. So I question how does the female employee get through her shift without using the bathroom? Or does she have to bring napkins in with her? This is an unacceptable state for a restroom in a restaurant. This being mid-day also meant they would be going into dinner rush with a bathroom with no toilet paper. Our favorite BBQ in Fort Collins/Loveland area. The BBQ sauce is on the tangy side--not sweet and thick as many think it should be. I prefer less sugar in my diet. The meat is tender and NOT fatty. If you order brisket, there will be a marginal amount of fat on the edge. If you want "fat free" order turkey. The service is ALWAYS great and if there are any issues with our order they fix it! We've rare had any issues with our order. I have a number of allergies and so I ask questions about food at every restaurant. They always do their best to answer me AND recommend substitutions when possible. The ambience is casual--like sitting on the patio for a family BBQ gathering--wood tables, folding chairs, and paper towels instead of napkins. You're going to leave with BBQ smoke smell in your hair just as if you were out sitting around the campfire!! I love the experience and whenever we have out of town guests, we bring them here. The food was ok at best. The chipotle cole slaw was flavorless and Mac and cheese tasted like grocery store deli stuff that they get from a bag. The menu looked good! when we were looking we saw BBQ nachos sandwiches meat plates . I chose the 2 meat plate with sausage and brisket for 15$ i got 4 piece of brisket cold and a sausage cold . Texas BBQ? Right..... My husband and I both ordered the two meat plates for $13 but both paid up for basic sides like a side salad and a small bag of chips...You also pay separately for a drink. I couldn't believe the portion size for how much we paid, I got two ribs and 1/3 of a sausage. He got 3 smaller ribs 2-3 pieces of brisket. The barbecue sauce tasted like sweet n sour but you have to use it because the meat is so dry and tough. I really can't believe how much we spent for how bad the food was, but I had to give it two stars because the restaurant was very clean and had a nice atmosphere, and the employees were friendly and quick to serve us. We both ordered the cheesy potatoes because reviews supported them; however, this is something you would get served in a school cafeteria. They scooped a large, dry lump onto our trays and I immediately knew they were going to be disgusting. People have strong opinions about BBQ and so do I. These guys have great BBQ! I've ordered their meat plate a few times, so I think that I've tried everything. Beef brisket is a fair test of smoked meat know-how and their brisket is consistently some of the best I've tried. They have a regular cut or a slightly fattier cut. The ribs are also a favorite of mine. The smokiness and flavor couldn't be any better. Yes, I've had BBQ in Houston, Dallas, Austin, Beaumont, and in between. These folks know what they're doing, in my opinion. Always friendly and efficient service at the counter or on the phone. I wish I'd read the Yelp reviews on this place before going there. The quality of the food sounds pretty abysmal. But, it was my lucky day. I ended up not eating there due to something I saw in the kitchen for which I filed a complaint with the county health department. As I walked toward the ordering point, I saw a guy in the back who was making up meals. He was wearing food handling gloves but he had his cell phone in his gloved hands. Gross! We've all heard the stories about all the bacteria, including fecal bacteria, that's found on many cell phones. I turned around and left, never to return. As I drove away I noticed an exterior door at the back of the building that was propped wide open and there was no screen door. This is a violation of county health code since flies, mice, etc. can easily enter through open doors. read more

If you're from Texas...don't get too excited...it's not that serious! This is a "get in, fill your belly with meat, and get out" type of place. That's why I come here, it's pretty good for that, and that's what you should expect. There is a small parking lot for this location and it is designed to cater to lunchtime folks, for the most part. At lunchtime, there will likely be a line to the register where you order your food. There are some pretty decent options and the prices are reasonable. I like to get the Texas taco (meat, potatoes and cheese), the pulled-pork sandwich, or the loaded potato option. The loaded potato has pulled-pork, queso, sour cream and some other delicious crap piled on...it's wonderful! There are some bottled beer varieties and soft drink options. The service is always friendly and you can get through that line pretty quickly. You will pick up your meal as you check out at the register. There are several picnic tables in the dining area and an outdoor patio as well. Each table has a roll of paper towels attached, a couple bottles of their standard BBQ sauces, and you will pick up your plastic utensils from a dispenser by the soda machine. The meat is smoked nicely and pretty delicious! This is not upscale, not a full service place, designed as a franchise, and all that works pretty well. Used to live in Texas so my standards are high when its claimed to be "Texas BBQ". The Brisket while a bit fatty was tender and flavor while lacking a true smoke ring I found to be good. The link style sausage had solid flavor but the pulled pork was bland like much of it is. Understand that Texas BBQ is about beef and that pork and ribs are just an add on. Now the Pinto beans were just nasty it was more like sauced BBQ pork with some Pinto beans added in. Cooking Pintos is an skill lost with this dish. The potato salad is bland with no particular flavor. The coleslaw is pretty standard but should never be added to a Texas BBQ sandwich thats more Carolina style. Now for BBQ sauce which appeared to be some what watery and thin not what I'm used from Texas and only two flavors neither of which met my standards. My recommendation would be to go for the brisket sandwich and side of coleslaw. read more

This place is hit or miss. We've had some good meals here, but the last few have been awful, especially the ribs. Really dry and chewy. It's frustrating because we've had good pork ribs here. Our most recent experience with the brisket was it was super fatty. The sausage and pulled pork are usually good, and they make some of the best potato salad in town. I was so excited to try their brisket stuffed potato my friend told me about. It was our first time in, we got there at 7:00pm and the place was empty. The girl serving us was helpful and nice. Once we sat down with our food, a younger staff member started very loudly stacking all the chairs up around us. They are all metal and it was so loud, and he seemed annoyed we were there. I'm not sensitive to noises but it felt like we were being pushed out. They close at 9:00pm mind you. We got three sides (beans, potato salad, coleslaw) and all of them were very bland. The brisket had a good flavor but was extremely fatty and I had more fat pieces picked off than meat. We both got beers and they were barely cold and the sauces on the table were sticky and dirty. I try to see the good in most things but I was really disappointed and wanted to complain but knew these high school students didn't want that on a Friday night so maybe management sees this. All this to say that I had better hopes for this place and in a world where restaurants close at the flick of a switch you need to do better. We won't be returning. read more

I came in here at 4pm in the afternoon on 7-November & it was completely empty, however that did not deter me from jamming some of their meat down my throat. I ordered some brisket & pulled pork & they had it on the tray in front of me so god damned fast it made my friggin' head spin. I was in a rush but the place was so lovely i decided to dine in anyways & im delighted that i did cause everything was clean as fuck. After the meal i had to take a whiz so i went into the mens room & lemme Tell you something brother, i was proud to be pissing in there cause it was the cleanest public shitter i have seen in quite some time.
