Michelle led us through the distillery, which is a pretty small operation, teaching us about their distilling process and the history of the company. The tastings were fantastic and it felt like the appropriate number for the 60-70 minutes of the tour. After the tour we got a drink at the bar to try another whisky that wasn't sampled on the tour. All the staff were friendly, knowledgeable, and laid back on our Sunday evening visit. They have other events that sound really fun to come back for! It was interesting to learn that they bottle by hand. We came to our tasting set up. At each couple there were jars with items to smell that would be aromas or tastes we would experience, like rose, leather, tobacco, and cinnamon. There were four tastes paired with caramel, cheese, chocolate and fig. Each pairing brought out different flavors in the whiskey samples.
