There's finally a nice restaurant on the southwest side of Fort Collins. Definitely the kind of place residents are used to having in Old Town. A group of friends had lunch here last week and enjoyed it immensely. Lots of variety on the menu and lovely presentations. Every one had something different and each one looked so good. First time here, and it was spectacular. Split a Simmer Burger and also a Caprese Grilled Cheese with a friend, so got to try both. The burger has lamb and bacon mixed in with the beef, which was incredibly moist and flavorful. The grilled cheese had tasty toppings - not your typical grilled cheese - and we both loved it. Very nice experience. I went with a friend for a late brunch yesterday around 115. It was busy but not over crowded. We ordered off the brunch menu (until 2 pm on Saturdays and sundays) I ordered the surf and turf Benedict and my friend ordered the Nashville hot chicken and waffles. Benedicts are usually my go to to test a restaurant on their balance of flavors and technique in poasching eggs and making hollandaise. Both were delicious and well made. Plus the sweet potato waffle on my friends plate was scrumptuous. We also split the tempura fried shishito and peppadew peppers which were excellent. The peppedew peppers especially had such a velvety texture. We also each got fizzy drink from the drink menu. I ordered a vodka one and my friend ordered the gin one. Both were well balanced and satisfying. Also wait staff was well organized and attentive. Our waiter Patrick was great. I will definitely be back and I bet at night it would call for a great date night. Excited to give this experience 5 stars. read more

The food was mediocre and food that I cook myself at home nothing special or out of the ordinary and the food wasn't very filling either I'm pretty disappointed with the money I paid for this food when I could of stayed at home and made top ramen and gotten the same out come. Last night my high school friend and I decided to catch up. We enjoyed the nicest evening in a new spot. Simmer is a new locally owned and operated restaurant that serves delicious food. We were heading to Old Town, but decided to eat closer to my air bnb. The menu had an excellent selection. Our very friendly waitress was knowledgeable about her wines. She chose our wine for us and lead us right. We had small plates of vegetables although we are both meat lovers. We had thought we would eat the tapas first then order a something else, but the butternut squash, the fried zucchini and the Brussels sprouts with bacon filled us up. We visited for a couple of hours and the waitress never made us feel like she wanted our table or wanted to go home. We realized we were closing down the place and decided to let them close up. I really liked the vibe and atmosphere of Simmer during our first visit for dinner on a hot summer evening, especially with the walls opened so that the restaurant spilled out onto the covered patio. And service from Kyle was top notch. I also like the variety of menu items - inventive cocktails, salads, sandwiches, a large variety of small plates, unique entrees, and desserts (pretty much something to please everyone). There's also an extensive brunch menu for the weekends. But although the menu, atmosphere, and service had me primed for an excellent meal, the kitchen didn't deliver on that expectation -- the food was only OK. Both my meal (scallops, the daily special) and my wife's (butternut squash ravioli) had problems with seasoning and balance of flavors. For example, the huge quantity of cubed butternut squash totally covered the raviolli and completely overpowered the other flavors in the balsamic glaze and brown butter sauce. And the bed of napa cabbage under my nicely seared scallops just didn't seem to go with the other flavors (and I love napa cabbage, it just didn't seem to work in that dish). I'll go back to Simmer another couple of times before I draw any definitive conclusions, but my initial reaction is that the food doesn't live up to the rest of the experience. read more

We were really looking forward to this place but sadley we must have come on an off night. Waitress forgot our drink order, caesar salad was warm and not crisp. The pasta primavera was bland and the pasta was not cooked. The signature ravioli dish was just bad. I always clean my plate along with my wifes but could not get half way through our plates. Our wine glasses sat empty long enough for us to finish our water. Overall bad waitressing. Too many other places where you can spend $100 on a meal between two people and get much better food. I really hope this was an off night as the place is a good idea but I wont be coming back anytime soon if ever. One star is generous. read more

So I find myself transported in on a new level of gastronomy. This place is by far the best place in Fort Collins. From the simple atmosphere to the outstanding service from Willow, the food and libations are equally as fantastic as their rapport they build while you're in house. The coconut shrimp appetizer is out of this world and essentially changes your life. I had the Nashville chicken sandwich and the jalepeno popper things(Devils in horseback or whatever) and how delicious and fresh everything tasted. Ended on the creame brûlée and there flourless cake. Just wow. Wonderful place that makes your tummy and brain happy. Ask for Willow, she is wonderful and super informative and friendly. Nice atmosphere and staff but food was meh. The zucchini straws were super greasy--too cold of oil being used to fry them--but the lemon touch was tasty. The fish bites were just really bad--the fish was obviously very, very old. The hot chicken with sweet potato waffle was alright. I wanted more flavor layers in the chicken. The waffle was not fluffy due to the sweet potato addition but tasty nonetheless. Only having two beers on tap is a problem in Fort Collins too. We had several dishes at simmer between 4 people and for the most part the food was delicious. The Brussel sprout appetizer was a bit wet and underwhelming, but the main courses were spot on. The drinks were also phenomenal. Our experience really fell flat in the service. While the manager was very attentive and accommodating our server had no idea what was on the menu or how to serve. Despite reading our food and drink orders back to us 3 times EACH... they each came out with error, even a simple vodka soda. Then at the end of the meal when I told him he had charged me for a substituted side item he said that while he didn't inform me, that item could not be substituted. We visited this restaurant simply because we were starving and in an area of town we never frequent. Yelp brought us in the door. What a wonderful surprise. We were served carefully crafted cuisine.....thoughtfully prepared fresh ingredients, beautifully presented, and graciously served. The vibe was very "neighborhood" in nature, with young millennials finishing happy hour to older and elderly couples having dinner. What really blew me away was the humble service and attitude of the staff. A restaurant with this quality of the food might tend to have snooty or pretentious staff in Denver or larger cities, but this was food well-prepared with true service. Some Denver restaurant staff drone on and on about their ingredients as though heirloom vegetables were the makings of a Picasso painting. One can tell that this staff is trained by owners that care about hospitality. We arrived simply wanting a bit to eat and left having had an evening that was a wonderful experience for all the senses. Highly recommended. read more

The food is just excellent here and not the run-of-the-mill stuff that you usually find in Fort Collins. We've gone here at least a dozen times in the last 6 months. The one thing that we've noticed in our visits is that the staffing level is inadequate most of the time. Having said that we are not usually there after 8 p.m. Often times this summer when we enjoyed lunch on the patio we could place our order for food because they had enough wait staff, but we couldn't get drinks for maybe 20 or 30 minutes because they only had 1 bartender. Today for brunch there were 3 people trying to cover everything. The person behind the bar couldn't even keep up with drink orders but yet had to wait tables too. We saw drinks sitting at the bar for 15 minutes or more because there wasn't time to deliver them to the tables. Occasionally a person came out from the kitchen area to help out but the process just wasn't efficient. We weren't even asked if we wanted a drink but once we saw what was going on we decided not to try to order one. In about 30 minutes after arrival we placed our order and the food was delicious, hot, and delivered in a timely manner. We were out of water, and when we paid our check that took another 20 minutes because there was just nobody to deal with it. Don't get me wrong, the bartender/waitperson did what they could and seemed courteous and efficient but there just weren't enough people. Meanwhile the place wasn't busy when we arrived but by now it was almost at full capacity. This has happened most times we've been there so it seems to us that they don't have enough staff and they also don't always strike a good balance between bar staff and wait staff so food and drinks can be handled in a timely manner. We've had dinner there before when we could get a first drink but not a second, because our food would be long gone before they could manage to serve a 2nd drink. People who can't order drinks are just keeping the money in their pocket that would go to the business otherwise. Still, I would like to give this place 5 stars on food and 3 stars on staffing. One other little frustrating thing is the fact that they don't use the same online reservation system that most restaurants in town are using. We tried for 3 days to get a reservation through Yelp and it wasn't working (though it has worked in the past). There is another reservation app that works much better and most people use it. read more

My husband took me to Simmer for dinner on my birthday last Wednesday night. It wasn't busy at all, but the service was incredibly slow, took quite a while to receive our drinks, appetizers, and entrees. Our waitress, though not rude, was not overly friendly and when she checked my ID for drinks, didn't even notice it was my birthday. My husband said something, and she tried to muster up some emotion to pretend she cared. She told us I could get a free dessert or glass of Prosecco, so I chose the drink. In the end she charged us for it, it was $8, which is a rather expensive mistake (wish we would have noticed that before we left). The food was mediocre. I'm giving two stars because the waitress that refilled our water glasses was incredibly friendly, as was the chef who dropped off our entrees. Overall, for a $70 birthday dinner, it was a big disappointment, and we won't be returning. read more

There are a few great things about this restaurants, but I experienced many bad things too. As we walked in the door we were offered a booth or a table but not an outside seat and I'm not sure why. It was a nice day and we would've loved to sit outside. After this we were sat at a table, and got our drink orders taken. After a long time we got our drinks but to my dissatisfaction they were out of the drink I wanted. I opted for a soda but waited even longer for that to come. After this our waitress took our order. We waited for what felt like an eternity to get our considerably small and overpriced dishes. The food was phenomenal but lacked the power to make up for our experience. Our waitress was nice but l at her job. She didn't greet us or suggest certain dishes or do much of anything. This day of the year is special for me and my family, so naturally we always go out for a nice dinner. We were going to go to the 415 tapas joint, but decided to try something different. This was "different"from what we usually do, but I would consider going back if they change things up a bit. read more

Loved everything we tried! Watermelon arugula salad was fresh and bright, filet medallions melted in your mouth, grilled mojito shrimp and watermelon was a great combination, caprese with burata was something I'd never seen and we gobbled it up, cheese plate was well balanced and different. But my favorite was one the server recommended-the Devils on Horseback. Not usually a fan of peppers, but these peppadews stuffed with Marconi almonds and goat cheese wrapped in bacon with Gorgonzola fondue was outstanding! We fought over the last one and sopped up the remaining fondue with crostinis. The servers KNEW the food and wine and were attentive, friendly and fast. Desserts were beautifully plated and yummy. I'm usually a chocolate girl, and I did love the mousse and the flourless chocolate cake. But again, my favorite turned out to be a surprise-the fruit tart stuffed with marscapone drizzled with fig jam and topped with fresh fruit. Pasty crust was perfectly cooked. The fig jam and basil in the topping were what set it apart. I appreciate being pleasantly surprised by new combinations of food when I go out. Simmer does that really well.
