I happened to find this gem after a quick yelp search for a restaurant in our area for a date night with my fiancé. The atmosphere off the bat felt upscale while remaining relaxing and family friendly. We ordered the Brussels appetizer, butternut squash ravioli, and the bone in pork chop, and as a chef myself I found that not only the food but the staff and the experience in its entirety was phenomenal. As a scratch kitchen, the food came to our table in great timing with beautiful presentation. Our waiter was Kyle and his service was nothing short of phenomenal itself, and we could tell he does a great job connecting with his customers on a personal level. To find out the executive Chef is only 21, and boasts a full schedule outside of this, speaks to his talent and creativity as a Chef and proves that he is a rising star on the Fort Collins food scene. Good, but not worth the incredible wait. We were there on a Sunday for lunch and the place was maybe 50% full when we arrived. Although we were seated immediately, everything moved at glacial speed from that point on. Three visible dining room staff seemed busy but disorganized. Menus took 10 minutes to come, someone taking our order was 20 more minutes, food (2 of 5 meals) took another 40 minutes. Oddly, when the first two meals were brought to our table, they asked "Is there anything else I can bring you?" Yes, our remaining three meals (which we had to ask about 10 minutes later). Turns out, they were ready - they just hadn't been brought out for some reason. And one of orders wasn't right. We noticed several other frustrated patrons as well. To be fair, they took a bit off our bill and gave us some coupons for the inconvenience. The food just wasn't great enough for us to give it another try, I'm afraid. read more

Food and wine were great! Service was unbearably slow. I'm pretty sure our waitress was taking care of almost the entire restaurant by herself on a Friday night. We had also had to ask several times for water refills and for the check. On a plus note though- Our group tried a bunch of tapas and they were all very good! The Brie Quesadilla and the Bacon Wrapped Dates were probably my most favorite. I would go back but maybe for Happy Hour or brunch instead.. less busy maybe? read more

I give Simmer 5 stars for the food, service & pricing, & 21/2 stars for the ambience. 6 Of us went last Sat. nite, & sat 3 abreast facing each other. The house is very nicely appointed, but to speak diagonally across the table I had to raise my voice. I suppose that everyone in the room had to do the same. I was involved for over 30 years in construction working w/ acoustics. Acoustic wall panels & clouds would be a BIG help. Because of the acoustics I don't think I'll make Simmer my go to place, but I'll come back. I prefer places like Canino's where I can talk to my companions @ normal levels. In Simmer's defense, Bar Louie & the Blind Pig are noisier. read more

Great food, friendly staff, nice atmosphere. They have many small plate options for those who like to taste multiple items. Great place for foodies as well as someone who just wants a full delicious plate of food. The inside opens to the patio, so if you can't decide on inside or out you are in luck. A place that has an eclectic, tasty menu, a great server (hi, Kristie!), a limited but imaginative drink menu, but also a poor seating arrangement and really bad music. Also, the staff offers less-than attention to detail. Yes, the menu items proved as delicious each description. The drinks were "new", different and intriguing. But the music was oddly annoying and both my wife's and my menu had food smashed and dried on the surface(s). Oh, and IMO the lighting was two shades too bright for casual dining. I want to go back for the menu. The drinks I can live with or without. I don't want to go back for the ambiance or lack thereof. I will likely eat at Tokyo Joes (next door) 10 times more than Simmer, and will be totally cool with it. (TCBY had better seating.) read more

What a welcomed casual fine dining option here in southwest Fort Collins!! The food was spectacular! We had the pork chop and Nashville hot chicken and waffles. The flavor combinations were divine!! I went for happy hour which offers a nice selection of food at discounted prices. It's worth going then so you can try a variety of dishes because the menu is HUGE! I'd love to go back and sample most everything on the menu. I had one of the specialty salads which I would have loved except the lettuce, described as a "mix" turned out to be mostly the purple leafy lettuce, frisée, and mesclun. Not the best combination for a huge salad.everything else looked amazing. My dad, also my lunch date, was perfectly happy with his. The service made all the difference in the world. Absolutely wonderful. Every time I come in I never know what to get because everything in the menu is just so delicious. If you go in you HAVE to try the devils on horseback dish. It's life changing. There drink choices are great as well. It's a very chill, but also classy vibe. I love going there on nice days because they life up their garage door windows at the bar and then have an outside bar! How cool is that?! One of the coolest patios I've been on for sure. The service was very good. The chicken and waffles was too spicy to even taste the food. My bacon grilled cheese was very good. The blue cheese dressing on the side salad was bland. The coleslaw on the chicken sandwich was basically dry chopped cabbage. The server offered to get us a replacement coleslaw but it was too late in the meal. Went to Simmer for a friend's birthday and this place blew my mind! We got an assortment of apps- ALL DELICIOUS!! I am from the South and have found it difficult to find food in Colorado that tickles my tastebuds, but this place knocked it out of the park on most things. We got the pesto pasta for our meal and it was delayed about ten minutes, and lackluster, but the scallops that came with- perfection!! We tried multiple desserts and all were absolutely divine. The restaurant staff went above and beyond to make sure we were taken care of- really was so pleased! Will have to go again! read more

Went in for lunch last week to this new restaurant. Awesome menu....not the usual gruel so many joints have these days. Had the grilled cheese with amazng Pesto sauce and Caprese cheese! Girl friend's dish was excellent too. Nice atmosphere, and Megan our server was terrific. Will go back very soon. read more

We went here for a girls night the other day. We had heard great things and had to see for ourselves and it was as good as everyone said. All of our food was amazing (the first and third round) we just couldn't stop ordering plates to share and entrees just for ourselves. I have to admit, I had high expectations for this place, but left slightly underwhelmed. Made a 6pm reservation for Thursday. While there were enough tables available, it felt awkward finding our seats and getting a server to us. On a side note, we were not offered a patio spot, even though there were obviously seats and it was a beautiful evening. We didn't receive our drinks until 6:30 (a half hour to pour a beer?!) and we were not eating food until 7:00pm. Mind you, it was our anniversary, so we wanted a leisurely meal, but a disorganized server was the reason for our wait. She was nice, don't get me wrong, but did not introduce herself, did not check up on us at the appropriate times, didn't re-fill our waters, gave no recommendations, and basically left us to fend for ourselves. The menu is daunting (a simple sheet of paper would have sufficed, without the confusing brunch items included) but...the food! The FOOD WAS AMAZING! The scallops were delicious (especially the "scallop gravy" that I continued to eat on crostini after the scallops were gone). The lamb meatballs were good and the watermelon mojito shrimp skewers were original, light and tasty. I loved the caprese salad with fresh mozzarella and basil, and the quinoa salad was also good. We had a shrimp po'boy Vietnamese-style slider that was spicy and very yummy. The decor was tasteful however the bathroom was out of paper towels. All in all, I would come back for a second try, maybe after they have been open for a bit longer and have worked out some of the kinks. Suggestions: have wait staff rotate on tables, so all servers are looking out for one another (filling up waters, clearing dishes, etc) and not just in the main room OR patio--that way if one server is lacking or is too busy, the other servers can help out. Maybe try pairing some wines/beers/cocktails and dishes--the extensive alcohol menu and gorgeous bar lend themselves to it. I really like the location of this place and I can't wait to see it flourish, but unfortunately we ended up leaving a bit disappointed this time. read more

Went to happy hour, very excited by what I'd seen on the website. Decor was nice, good location and the bathrooms were clean and well designed. I was underwhelmed by the small plates and happy hour offerings. Too many items had gorgonzola cheese. I do like that cheese, but only wanted it on one item. Several dishes sounded good, but had that same cheese. The shishito peppers were just a pile of peppers and the bruschetta only had 2 pieces. The sizes of the apps seemed inconsistent. And, unfortunately, our server wasn't that great either. I may try again, but I'm in no hurry. read more

Been twice. Once for dinner, once for brunch. Dinner was fine- nothing mind blowing but nothing terrible either. The night started wonderfully. We didn't have a reservation for 4 and it looked like it was going to be quite the wait but they rearranged their reservations to include us with no wait. Spectacular customer service. BUT after that moment, our server absolutely ruined the experience for the table. He didn't seem to have a clue about the menu or drinks and suggested that we were to blame for any lack of communication on his part. It disgusted me. He had no business being on the floor that night. Needed significantly more training. Brunch - the potato/sweet potato home fries were soooo delicious. I ordered a benedict, which was very tasty but had no where near enough hollandaise. Our server this time around was significantly more competent and pleasant. He took great care of our group and everyone else was very satisfied with their food. I would like to give it another try for happy hour snacks or sitting at the bar. This was our third visit there. Needless to say they did NOT disappoint. Kristen (sp) was our server and Alex was in training. We decided to do tapas. We devoured the Grilled Mojito Shrimp, Roasted Sweet Potato & Goat Cheese Dip, Cheese Board and our desert ;). The Marinated Filet Mignon Tips. The tips were cooked exactly as we wanted, tender and super falvorful. Shrimp was tender and watermelon - flavorful and charred to perfection. The Sweet Potato & Goat cheese dip was something new I wanted to try, there was a sauce that was added which helped with the flavor. I would suggest more of the sauce? Food is good, but the service has been well below par both times my wife and I have visited. During our last visit, the printer "ran out of tape" so it was never placed with the kitchen. After 40 minutes we received our meal and my wife's was wrong. Which meant my meal was taken back and placed under a heat lamp while hers was remade. Ultimately, they comped her meal, but no attempt by management was made to come and discuss the experience or apologize for the cascade of errors that led to an hour wait between ordering and receiving our meal. To top it off it was a late brunch on Saturday and they were NOT busy. The table next to us also seemed to be experiencing similar frustrations as they finally broke down and asked if they could ever expect to receive the coffee they ordered. I was so delighted to have lunch here when I met my sister & went out for lunch. The Palisade peach menu was enticing. I wanted the grilled burata & peach sandwich. However, due to food allergies, I needed to have it without the pesto. The server was happy to accommodate my needs & made suggestions to assure a perfect experience. The sandwich was amazing! I've been to Simmer twice since it opened. This restaurant is a wonderful addition to the west side of town! Great service and great food. I cook a lot at home and prepare homemade waffles at least once a week. I was hesitant to try the chicken and waffles but I have to say, this entree was delicious! I was pleasantly surprised. My only tips for improvement would be to modify the acoustics and improve the draft beer selection. The dining area gets quite loud. Maybe some sound panels could be added? Fort Collins is a craft beer mecca. Having only two taps available is a bit disappointing. I'm hoping more taps can be added soon. Kudos, though, for offering a fun and tasty dining experience from the get go! You obviously made the effort to hire and train quality staff. read more

Food was fantastic! We had the spicy coconut shrimp and it was amazing! My date's steak was overcooked but tasty. Ambiance was great. Only real reason for 4 stars was that our service was super awkward. Our server didn't really seem to know what was going on and kept saying how tired she was and how she had been working so much she was just on auto pilot. At one point some other server came up to check on us saying our server was busy and asking us if we needed anything. Not sure what she could've been busy with...we were basically the only table left in the restaurant. You can tell they're new and still working out some kinks which is totally normal but all the potential is there. read more

Terrible experience today Simmer restaurant. I ordered the sweet potato hash with gluten free toast. When I realized there were NO POTATOES--neither sweet nor plain--in my HASH (isn't the main ingredient of a hash potatoes??) I got up and said to a server: "I ordered the hash and there are no potatoes in it." The place was pretty much empty at this point, so not a lot for the two wait staff on duty to DO. She replied, "Just one moment, ma'am. We'll be right with you and get you situated." I returned to my seat and picked at my cooling food. No one appeared at our table, so I got up again to speak to that same waitress. Now she and the male manager were cooling their heels; talking and laughing, just taking it easy together and having a moment of fun and levity. "WHAT?" I thought. "Why is no one concerned about the fact that I've been served hash with no potatoes?" I speak to the manager. He assured me they will bring me a side of sweet potatoes to mix into my now lukewarm meal. Cut to: I get served a side of sweet potato fries. I get up again to ask the manager: Are these DEEP Fried? Do they have gluten? Yes to both. I can't eat that. I really wish you had asked me what I wanted, before you decided to order sweet potato fries for me. Then the manager says, "I bought your breakfast to make up for the fact that this happened." Like it's a big favor he is doing me. I was pissed by then. Ruined my visit with my table mates, and we were all uncomfortable about the terrible, terrible service. The manager SHOULD have comped our whole table, since our experience was ruined. Belatedly, the manager then went and fried me up some sweet potato. By then there were two tablespoons of my original meal left on my plate (it was mostly fried tomatoes and zucchini...blech). It is so great to have some good quality food in West Midtown. As the area is close to the university, we tend to have a lot of bad food, fast food, sandwich, and pizza places. I'm glad the owner thought about putting a nice "adult fare" place in this area. A bit pricey but that's what you pay for unique epicurean delights.
