Simply Pho is such a welcome addition to Belterra Village, let's just get that out in the open. I'm so elated that we didn't get our millionth fast food establishment, and Vietnamese food is a wonderfully eclectic choice for this side of Austin. There's a Vietnamese spot in the Y that literally didn't know what vermicelli was years ago, and I've always just driven 40 minutes for proper Vietnamese food if that's what I wanted (in order to avoid the lesser establishments). But yeah, when I am in the mood for Vietnamese food these days I just drive 15 minutes away instead to Simply Pho. Let me give you a tip about Vietnamese food from a simple white boy perspective: all items should be numbered A1, A2, A3, B1, B2, etc. Additionally, that A1 better say "Pork and Egg Roll Vermicelli". First time trying this place. I first have to say I'm jaded by authentic Vietnamese cuisine and this, though owners are Vietnamese and their recipes the cooks are not. Yes it does make a difference. The Thai tea was watered down and had no flavor, bland. The Vietnamese egg rolls were ok, not great and not as crispy as traditional rice paper egg rolls. You get 2 thinly rolled egg rolls as appetizer with a large lettuce leaf, missing the cilantro. The pork though it taste good it lacks the true spices that's it's usually grilled with. It came with lettuce carrots cucumber and bean sprouts. The fish sauce was a little too vinegar but add hot sauce it was better. I can't review the general Tao dish because I didn't try it. My husband however liked it and took home his leftovers. I would try it again when in the area but not go out of my way as I do to go to San Marcos for pho. Staff was pleasant enough but very rushed. We like the casual atmosphere with tv playing sports over the nice bar. Look like a full bar menu. Prices are higher than you'd expect to pay but you are in Belterra. read more

Disappointing visit to Simply Pho in Belterra. We'd been there one e before and been,pleased enough for an encore visit. They failed to make the mark. First, we ordered spring rolls for an appetizer. They were slow to come out. So slow that our entrees arrived before we'd eaten half out spring rolls. So we were faced with finishing the spring rolls while trying to get to the main dish before it got cold. While the spring rolls were excellent, the entree were very mediocre. I had the Dancing Seafood, a medley of squid, fake crab and shrimp with veggies. My friend had the Wok on Fire #1 flat noodles with chicken. Both were unremarkable. My seafood combo was over sauced, which smothered the seafood. The same can be said for the Wok on Fire dish. The sauces were more similar than different - a cloying thick sweet overlay that masked the flavor of the underlying dish. Service was credible, except for the overlap of appetizer over entree. Ambience was noisy and busy. Our server waited on us as attentively as possible in a very busy setting. Maybe the multiple pho offerings would have been more satisfying in a menu that is blended between Thai, Vietnamese and Chinese. Or maybe they need to focus. Are you Thai? Vietnam? I'm so sad that the service here was this horrible. There were 6 workers and 7 parties dining in. I could see they were getting a lot of take out orders too but goodness. This was pretty bad. I came at 4pm on a Sunday, when one would expect great and attentive service.. I had 4 in my party. We ordered 2 appetizers, 2 order of spring rolls and 1 order of Thai chicken wings. These came out relatively slow. But we were long done with these and no one had taken our main order. After flagging down someone, we ordered 2 combination pho, 1 pork banh mi, and 1 salt and pepper squid entree. Nothing was written down. One of the 2 phos came out 10 minutes before anything else, then a shrimp dish (that no one ordered) the banh mi, and then another bowl of pho. The squid plate came out last, the vegetables were very well cut and presented by the portion and size of squid pieces were underwhelming. The pho was good but there were no herb/veggie plate to accompany it. After asking for some, a very sad plate came out that looked half eaten/unused by another person. I was very sadden by this experience bc I love Vietnamese food and this location is so close to us. I hope they are able to hire more help/train their current staff better... This was a first-time takeout order (we live 10 minutes away), and perhaps they were not so busy and the order sat too long. Either way the food was largely lukewarm, soggy where it should have been crisp (egg rolls and sweet and sour chicken - I know, I know), and dry where it should have been tender and moist. And yet the ribeye pho broth was very hot - like it was prepped last/later than the rest of the food? The Chicken Vermicelli had decent flavor, if a little bland, but was cold. North Hays County getting a McDonalds....meh. NHC getting a Simply Pho...OMG OMG OMG. I've been a fan of this restaurant for awhile. Have dined at Bee Cave for years and also Marble Falls because my BFF lives out there. They couldn't build this place fast enough for me! Girlfriend and I hadn't visited any of them together; we went a few weeks after the opening. Charcoal Pork Spring Rolls started our dining adventure. Very fresh ingredients paired with a peanut dipping sauce. Cream Cheese Wontons were next; perfect golden exterior with a gooey center. Pho has never been my thing; Bun on the other hand is a personal favorite. Always B2 at Simply Pho with Charcoal Pork and grilled Shrimp. Dump in the fish sauce, toss the ingredients, zig zag some sriracha across the top and dive in! Tom Kha soup with Shrimp is also a personal favorite. Girlfriend chose Combination Pad Thai and liked her first visit. Leftovers made it home too so I got a few bites. Could have been spicier for me; luckily they will adjust spice to taste if you ask. Finally a place in Dripping Springs where I can enjoy a big hearty bowl of Pho! Sort of hidden from 290, this restaurant has some great in house appeal that you can't see from the highway. Interesting floating philodendron suspended from the ceiling in moss balls with dangling roots, a divided house with comfy dining seating on one side and a bar too with TVs in the other. The service was fantastic from our table server. Super friendly, very attentive even though she was running from table to table and even offered us tea to go! The front hostess was young and cold at greeting which is the only reason for the 4. Fortunately a different greeter came forward and went out of her way to get the booth seating cleaned up that my husband wanted to sit at. We also had a grilled pork Bahn Mi that was on fresh flaky bread and full of meat and veggies. Absolutely delicious! The iced tea is a jasmine tea which we had at least three servings of PLUS the to-go. There is such a variety of Asian cuisine even for the little kids that it will be hard not to go back just for the wonderful Pho. We always order the black pepper beef and and the amount of beef has been shrinking. Today was laughable. They charge $17 for this dish which is now mostly peppers and onions. I love Pho. It's delicious broth, the choice of meats / protein for each bowl and the noodles are great!! I love getting a bag of toppings for me to make mine taste the way I want. My husband prefers extremely spicy and I don't, so we each have ours our own way! Simply Pho was my go to in Bee Caves but now I am lucky to get to go to Dripping Springs for it! I moved from GA where there was at least 10 pho restaurants within a 5 mile radius, so I was happy to know there was a pho place nearby instead of having to drive 25 mins elsewhere. I first tried this place for their drinks. I really enjoy the happy lychee drink. I've been in a lychee tea kick lately, and this absolutely satisfies that craving. I love that they even throw in a few canned lychee. Those things aren't cheap anymore! $3-4 a can. I recently tried their meatball pho for take out. I was really impressed with the flavor. I don't mean to judge the pho restaurant for its location, but I went in not having high expectations. It definitely exceeded them. The broth was very flavorful, and I really like that they pack some of the stuff in ziploc bags. It's much more clean and organized. We have tried Simply Pho a few times over the last year and overall it's pretty decent. Lots of options on the menu, which is helpful when trying to find something everyone in our family likes.
