The meat had zero smell and seemed like it was frozen fresh. It could be packaged better however. With a true vacuum seal. The muskrat comes whole, was already gutted and skinned, no head, no tail. So it's basically ready to go. I trimmed as much silver skin and fat from the muskrats as possible. I salt brined the muskrats overnight. Solid amount of blood leached out. Mission accomplished. I boiled them for 1.5 hours. Then seasoned with Old Bay and smoked them for around 1.5 hours. Perhaps over smoked. But I wasn't taking chances for the first time. Turned out well still. Very iron rich food. If you're lacking iron you will find your body craving this. If you're a fan of liver, you'll love muskrat. It has a bit of an aquatic taste, rich iron heavy meat like liver. I enjoyed it and would absolutely eat again.

I got two crabcakes and she received two platters of crab unseasoned cooked so that we could travel for the next four hours today I put one of my crabcakes in the oven to cook and gave it a good taste, and it was impeccable. This location had two stars, but I'm not quite clear on why. The people were friendly enough it was early in the morning. They got the thing done and the quality was good not trying to be picky, but I love it when mustard is in a good crabcake. I would definitely recommend.

That's not how this industry works. It looks like they are likely having cash flow problems in addition to their lack of sales acumen as well as poor accounting practices. The product is usually good, but I have had some shipments where 2-5% of the items are bad. Prepaying gives no ability for recourse should their be product issues. I offered to do a deposit on top of my Terms, but that was not good enough for them. There are a lot of seafood companies out there, don't waste your time with these clowns.
