I've been back in the area for about 2 months and going to Sol Verde about once a week. Have had their Breakfast Burrito , the Chile Verde Burrito and the Chile Verde Bowl . The bowl has meat, rice, beans, cheese, chile sauce, tomatoes, cilantro, onion& topped with mexi-slaw for $15. I have a love affair with the Chile Verde. Anything I order has to have it in it. The service from the ladies who run the truck do a great job in making your order. Sometimes you might have to wait for your order but it's worth waiting for. They have a couple of seats on side of the truck where you might get to sit in . Most people take there food to work or home. read more

Had a flavorful and delicious breakfast burrito here with Xmas style salsas, bacon, and sour cream. Potatoes were blackened yet soft in the middle and bacon was crunchy. My partner had sausage and loves that the sausage was broken up and throughout the burrito. Kid size is plenty! read more

Continually top notch New Mexico style food from this food truck. My first review a year ago said five stars on the horizon. A year later, five star update is overdue. With the Spork truck moving their business to bricks and mortar location (yahoo), Sol Verde remains one of the two best food trucks in Bend (along with Real Food Street Bistro). Either the menu here has expanded or my definition of what smaller menu means has changed because I note how many wonderful things there are to order and enjoy. Including vegetarian options. Prices remain very reasonable for high quality. The New Mexico style chile adovada enchilada dish that comes with salad and pinto beans for only $8 is easily shareable by by husband and me as one example. (Most perfectly cooked pinto beans I have ever had.) Beef is locally sourced. So is the pork sausage. New hours since my last review may be permanent or seasonal. But now open from about 8:30a to 2:30p Tuesday through Saturday. Yep. Saturday has been added. Other great changes, salsas are also now available to purchase in larger sizes and breakfast burritos are available all day. This remains a "mom shop" that is owner operated. It's an added bonus that she's so nice given her delicious food is not only among the best of food trucks but arguably the best of Mexican styled food of any kind in Bend. And the only New Mexican food in Bend. Pride of ownership is evident here along with cooking skill. In nicer weather there is a small picnic table and a couple of chairs outside the food truck if you want to "eat in". read more

I got a breakfast burrito with sausage and spinach. It was just okay. It was pretty bland. I had higher expectations, but was slightly let down. The burrito had nice fresh ingredients but it just didn't make me excited. There was barely any spinach in it and it just seemed a little watery. read more

I'd rate the food here 4 stars, but I knock a point off for the relatively high prices and small portion on the breakfast burrito. I guess the others who have reviewed this place and have concluded that it is "very reasonable" have a different approach to eating lunch at food trucks. I expect the price at a food truck to be cheaper than it would be at a sit down restaurant, but this truck charges more for burritos than you'd pay at many bricks and mortar places. I had the breakfast burrito and it was tasty but it cost $8 and it didn't fill me up. If I"m paying $8 for a burrito at lunch, I don't expect that I'm going to need to order something else to feel full. (By the way, I weigh about 170 lbs- not 300) Compared to other breakfast burritos in town, I think this one comes up short. At Super Burrito, they cost $5.50 and are bigger and pretty comparable in quality/taste. At Brother John's- the breakfast burrito costs $9.50 but comes with two sides and it is absolutely massive, not to mention delicious. So, in short, I'd like to see lower prices and better portions. read more

So wonderful! First of all Kat is the nicest woman. She works hard in that truck and the food tastes like it. Her breakfast burritos are delicious and perfect road good if you are on your way out of town. Her tacos are amazing as well as her gordita's. My husband always snags a burrito and says they're the best in town. Our daughter devours her rice and little quesadillas. She even carries kombucha! This food cart fills a niche SO difficult to find outside of the Southwest! New Mexican cuisine is similar to Mexican, but not really. It's all about green and red chiles, and the owner here gets her chiles straight from New Mexico-she even sells the green chiles in bulk if you are interested. The menu is small but impressive, considering this is a one-woman operation. It includes burritos, carne adovada, enchiladas, green chile stew and much more. I tried the carne adovada ( cubed pork simmered in red chile) in a burrito smothered in green chile for just a dollar more. The meat was tender and full of red chile heat without being overly spicy, and it was finished with just the right amount of cheese and diced tomatoes. The green chile sauce on top pretty much sealed the deal-this food will make you smile for hours! Really. Pretty sure chiles release endorphins! The burrito was served with a side of slaw, and she also gave me a sample of her green chile stew-totally awesome! All items are very reasonably priced, and it is a bonus to note that she also takes cards, as not all food carts do. The only bummer is that she is closed on weekends (like I mentioned, this is a one-woman operation!) . Hopefully she will become so busy that she will have to hire employees, and then we can get our chile fix every day of the week! read more
