Back in 2012/2013 I talked about opening up a wine bar in downtown Waukesha because we needed one here. Then Crush opened and shortly after that Spring City. Both have different business plans. Spring City offers a way for you to try, sample, taste and drink a wide variety of wines that changes frequently. It is more about learning more about wines from all over the world. Other places, you simply order the wine and then find out you don't like it but are forced to finish it because you just paid $X for it. Here you pay by the ounce. 1, 2 or 3 ounces. It is set up as wine on tap with Aerators. Get a card with your credit card linked to it, read about the wines and start tasting. 75 different wines and varying prices. If you like what you are tasting, they will sell you bottles. If you don't like wines, they have a full bar as well. They also have a limited appetizer menu and nights with live music. Just a great spot to unwind with your significant other or with a larger group. Plenty of parking around the corner or up the street a bit. Yes, downtown Waukesha can be difficult to drive and find parking but there really is plenty of parking. Cheers! read more

What fun! I had no idea this shop was so nearby, and a blast to be in. A friend and I came early in a Saturday (4pm) and learned a bit about the process. We ordered a pretzel and a scrumptious cheese plate ($12 each!) and set a path toward trying as many of the red wines as possible. They make it easy to pick and add your wines to your tab card, and the descriptions for each are pretty spot on. We can't wait to go back and explore their changing lineup. read more

Wasn't sure what to think of this place but when I walked in I was so surprised of how cool it was. Wine on tap with Aerators! How cool is this. And if you just want to taste you can buy 1 ounce 2 ounce 3 ounces which is just great for me as I am a lightweight drinker. This is a great little wine bar in downtown Waukesha. Love the concept of the serve yourself wine dispensers which give you the ability to sample a lot of different wines. Forty something wines in the dispensers and they give you a card that keeps track of what you pour. You can pour 1, 3, or 6oz of each wine. I'll admit that I enjoyed getting a lot of 1oz pours so I could try several of the wines before choosing one. Good assortment of snack foods available including a few charcuterie boards, a few flatbreads and assorted cheese platters. We opted for the large pretzel which was unique, baked perfectly and served with a seedy mustard and the large charcuterie board with 3 meats, 3 cheeses, crackers, nuts, and cranberries. Beware some of the meats are dried out and a bit chewy but the cheeses were all robust and full of flavor. If anything I would have liked to see a couple more dipping sauces with a pretzel that large. For a wine bar they have a pretty good selection of beers as well. This is a nice, cozy spot in downtown Waukesha. They have a "serve yourself" system for wine - load a card and try a variety of wines - or don't and get a glass from the bartender. While I was there they had an acoustic guitar player as the entertainment. They do offer a full kitchen and though I didn't have any of the food, I plan on going back to try their cheese plate which looked absolutely stacked. Overall they have a decent selection of wines though smaller than other bars I have seen that share the concept. This is a great date spot and one which I plan on returning to soon. read more

Excellent service. The wine selection is wonderful and they have a good selection of bourbon as well. The wine tasting is uniquely done with a card that tracks your glasses and quantity so you are overcharged and don't have to ask the bartender for a new drink each time. Really nice spot visited with friends after dinner late. Place was packed comfortably, great solo guitarist playing and singing - he rocked. Nice mix of people- not too homogeneous. Comfortable atmosphere and owner was very welcoming, attending to patrons and wine equally well. Wines purchases are automated through vending type dispensers which are great with selections by taste, half glass, full glass with a full selection by varietal and price point. Something for everyone. Waukesha is getting nicer by the day and will soon offer enough variety of quality establishments that it will be a viable alternative to Milwaukee. read more

It is pay as you go, so you get a card and can test out whatever wines you want in three different sizes. The selection is always great and always changing, and the owners even take customer suggestions and will sometimes get wines that you request. They also have a huge beer selection, so bring your husbands and boyfriends! The owners will probably know you by name after coming in a few times, which is always really nice. This place is so great!! I lived in the area for 6 months and didn't discover Spring City until the last 6 weeks of my time, and I so wish I had discovered it sooner. I went several times with friends, including once with a group of 8. It's an excellent place to go with groups because everyone can choose their own wine and have fun testing out different samples. Each person gets a card that's assigned to his or her tab, and then you insert your card next to the specific dispenser each time you want to test out a type. You can choose a sample, half glass, or full glass. I had never been to any place like this and my friends and I had fun testing out different options and comparing notes. Spring City doesn't have full entrees but does have a good cheese and meat selection, and I found the cheese offerings to be particularly delicious. They accommodated a gluten-free member of our party well. I don't live in the area anymore and I miss this place! Will hope to go back one day :) read more

My favorite part is the atmosphere! So cozy and well decorated; makes it feel like you're sitting in someone's home! There was live music the night I went, which really added to the ambiance. Was greeted by friendly hostess. Great selection of wine, very good variety. The only thing I was weirded out by was the self serve wine. Though the cases looked nice, I just couldn't get past the fact it was very much like a vending machine. The card system was slightly confusing at first too. This is a great place to relax and have some good wine. Me and my wife come here fairly often. They have a decent selection of both red and whites. You can try it by the glass, 1/2 glass or taste through their wine dispensing machines. Beer is available too. The seating is very comfortable and they also have a nice bar too. The owners, Tom and Stacy Hockel, are very friendly and helpful. On certain nights they also have music. This place is becoming more and more popular so get there early. read more

I've been here twice now and I've been impressed both times. The concept of choosing a taste, half pour, or full pour of a wide variety of wines is a lot of fun and the self serve stations are neat and easy to use. The first time I went was for an after-work meeting and it was quite busy, the second time was for date night and it was pretty quiet. Both times, the atmosphere was very welcoming and warm. The wine selection is excellent, with a good mix of classic and unique and low and high end wines, there's something for everyone. We stopped in last night and were able to taste a number of really great wines. The selection is excellent, and the ability to taste wines for $3-$5 on a pre-paid card is a great feature. The pouring devices are incredibly cool and easy to use, the staff was very helpful, passionate, and very knowledgeable about their products. I'm told the wines will change regularly, so I'm looking forward to making this a regular stop. read more
