Stop #3 on our Paso late Feb 2010 Tour. Oh man, what a great stop!! First, I should mention when I was looking at places to go in Paso, I noticed Still Waters for the beautiful photos of their grounds. I thought, how could can their wines be with such lovely grounds? What a mistaken thought! Not only are the grounds lovely, with various garden and flower loveliness around, the wines are great! Add to that a friendly and welcoming staff, and it's a wonderful place to go! We tasted the Viognier, Merlot, Cab Franc, Cab Sauv, Reflections (blend), Barrel Select Cabernet, and Petite Sirah. I was pleasantly surprised by how good the Viognier was-- it's one of my favorite whites, and they did it here quite well. The reds were all good and most were smooth and full of flavor. The prices, too were really reasonable as they hovered around $18-30. We ended up with bottles of Viognier and Cab Franc. After we tasted, we dined at the picnic benches on the nice lawn area and the winemaker himself, Paul Hoover, came out to talk to us while we dined. When we finished eating, he gave us a tour of the winery. He showed us what the workers in the field were doing, why and how they were trimming the vines the way they were, and took us into the barrel room for a barrel tasting. Without trying to sound too cheesy, it was really special! Wonderful view of the vineyards and great greenery to walk around. Has nice outdoor seating that faces the vineyards along the hillside. You also will see old olive trees. Walking inside, very friendly, warm staff. Wines were great. I enjoyed their Chardonnay and Viognier and their Syrah. I ended up taking a bottle of each. While we did our tasting, we also got to taste their estate olive oil with fresh bread. Their chardonnay has a very rich creme brulee, buttery flavor, with hints of pineapple with a little coconut finish on the end. The Viognier was very floral, citrus, honeysuckle. The palate was clean, crisp, asian pear, not syrupy or oily - perfectly balanced. Compared to the other wineries in Paso, this would rank near the top. read more

This was my first time to this winery. I was magically surprised at their grounds, they were so beautiful and inviting. Our server Nikki, was amazing...she was super nice, attentive and shared with us different wines for us to try. I am not a fan or white wines, but I had to buy their Rose and the Blanc...they were sooo good. Their reds where amazing as well. So all around it was the best experience in Paso Robles I have had. I came here for a wedding. The location and grounds are absolutely gorgeous. It was perfect for a wedding. This place is really beautiful and romantic. The food was also fantastic. There were great appetizers, including yummy cheeses and chicken skewers. The main course was also really delicious. I drank their wines all night and liked them (although I am not the pickiest wine drinker). Chardonnay and sauvignon blank were good, as was the Zin. read more

What a great winery! Every staff member we encountered was friendly and genuinely seemed happy to serve their guests. I joined their wine club since everything we tasted was yummy. While looking for a place to propose to my now fiancé I came across still water vineyard. The scenery is amazing perfect for what I was looking for. We Drove up on a Friday unfortunately due to weather and traffic we arrived near closing time. We pulled into the vineyard right when they were flipping the outside closed sign. We walked in right at 5 expecting to be told sorry we are closed, but we received the total opposite Patty(owner) greeted us and told us to step on up for a tasting. After trying a few great tasting wines. I walked my girlfriend outside and popped the question.( she said yes). Nancy took pictures of us with he camera and was nice enough to email them to us. When returned to the tasting room we were greeted by Patty, Paul and Nancy with a glass of great wine to toast. Lovely setting for a wine tasting, a picnic, or special occasion. We were there for a tasting on a weekend with family. The winery attendants were very friendly and helpful. I enjoyed the tasting and bought a bottle of chardonnay, but I feel that this winery still has a lot of maturing in its wine offerings. The whites we tasted for the 2014 winter season were fresh, bright, and crisp. The reds were generally predictable as single varietals. They have some Bordeaux varietals used in the Cuvee blend, as well as have Spanish ones and of course Zinfandel. I personally prefer blends that allow a winemaker to create a more complex wine using different types of grapes. While the red blend was nice, it was still very young. So I think the wines themselves need to be further developed. read more

Owners, Paul and Patty Hoover are both California natives who came to Cal Poly in the late seventies. Paul graduated with a degree in Agriculture and Pat graduated from the Child Development Program. The original label is a picture that Pat took of their son, Ben, fishing on a quiet lake of still water above Lake Tahoe. Large line-up of both reds and whites. Great comfortable facilities and a perfect picnic location with lots of shade trees. It is one of the most eastern locations for tasting outside of Paso Robles, but still only 15 minutes from town. We met Patty the day before at Shadow Run Winery. Paul was the host for our tasting and he does the wine tour. I would recommend to go here just to meet Paul, take the tour and hear him talk about the world he loves. Genuinely nice people. read more

We found Still Waters by chance due to a recommendation from another winery when we asked where we can get some quality whites. When I looked it up I saw only one review on Yelp and after coming here, I don't understand how people CAN'T come to this winery by mandate. The pino gris? Spectacular. The voigner? I could sit in a bathtub of it and drink myself to death. The petite syrah? Losing my virginity was less rewarding. The cuvee blanc could be used by Hitler to bribe St. Peter into allowing him into Heaven... and I say this as a Jew! These are sublime traditional wines at a ridiculously low price. Think of Still Waters as a liquid Kia: reasonable, economical, high quality, reliable... but you don't exactly feel bad for abusing it in order to turn your frown upside down. Here's what really made the experience, though. See, anyone can make a good wine. What Still Waters does better than anyone is run a tasting room that feels like a family gathering. It's literally in a kitchen. There is an immediate comfort and tangible familiarity with gathering in a kitchen to drink, talk, and snack. Instead of vendors, the staff felt like cousins and aunts and uncles. It truly is special, and when combined with the views... when asked to create a room I could die in like Richard Pryor did in Brewster's Millions, I wouldn't have done anything different about the grounds at Still Waters. This is what I imagine the first moments of Heaven are like. The attention to detail without an air of pretention is touching and a sincere reflection of what makes the vineyards of Paso Robles such a unique experience. These are special people, truly salt of the Earth. And here's another thing: they started out growing and selling off grapes. I love the wineries that start out of experimentation instead of business plan because agriculture is what makes wine. You can feel the connection between the farming and the fermentation in wines that come from vineyards with a similar history to Still Waters. What's unique, though, is how Still Waters still manages to deliver that sublime intangible wholeness of their product with the level of refinement and polish they deliver. read more

I went wine tasting with about 30 guests from my wedding on a Friday June 3, 2011 here at Still Waters. I had a hard time finding wineries that could accommodate that many guests without charging a higher tasting fee. I was at first hesitant because I had never been to Still Waters, but I heard good things about it and they were open on the phone to such a big group. I was so glad I chose to come here. The views are spectacular. They serve inside and outside. The wines were great. My guests lounged on the grass and some played bocce ball. The biggest highlight was the tour. They gave us an awesome tour and let us taste wine from the barrel to compare different years, different barrels, etc. I will certainly be coming back! read more

We have been wine club members for years and just got married at this beautiful Vineyard. Everything could not have been more prefect or beautiful. The rentals we used from them were very reasonably priced and beautiful. The lighting they set up was also breathtaking and added so much ambiance. All of our guests loved their wine and their service. They were so accommodating to us and our needs. We felt like family. The only thing that would have made our event more prefect would have been if we could have been more event time, 4 hours flew by!! The pricing for all their services were extremely reasonable. Every single person we spoke with at their venue was amazing and helpful. Some times there would be a slight lag time in responding but nothing compared to what we experienced with multiple other vendors. I would recommend this winery to anyone for wine tasting, picnicking, and for any event that required a beautiful venue!! We stop by Still Waters every time we're in the area for wine tasting. The wine is moderately priced and consistently good. Only a few have been "blow-my-mind" impressive, but otherwise I'd say they are a very reliable winery (which is a good thing). Things to check out: Cabernet Sauvignon, Voignier, Malbec, Petite Syrah. Their bread is delicious too. They are rather proud of their olive oils. I think they're OK, but not my favorite. I find them to have a rather astringent after-taste (and strangely kind of leaves an astringent feeling in my mouth, similar to how spinach makes my teeth feel). I prefer the olive oils from Robbins Family, which are sold at Chamisal Winery (south of the Paso Robles area, in Edna Valley). Also, for the last two trips, we have gotten the same sales staff. She doesn't seem as into giving us the stories behind the wines and the winery (which is why I go wine tasting in the first place) or going out of her way to provide excellent customer service. She'll just agree with you if you say the wine is good. C'mon, I'm there to spend money - sell me on it! read more

We tend to gravitate towards the smaller wineries and this one was no exception. Our pourer was actually the owner and winemaker Paul who regaled us with stories about their winery as well as Paso Robles in general. It is not often you find the owner/winemaker in the tasting room chatting and getting super excited talking about his wines and with no hint of condescension to us folks who know not much about wines. Stillwater was our last vineyard after a weekend of wine tasting so I think I was a bit wined out at that point but we did walk away with their 08 cab which was on sale for $20. read more

We got married at Still Waters Vineyard less than a week ago, and if you're looking for a venue with a romantic garden/backyard feel, you've found it! The ceremony site under the olive trees is just spectacular and wowed all our out of town guests. But at the same time, they're not the kind of winery that feels uptight. We had 12 kids at our wedding, all different ages, and they were able to run around and play in the informal setting we created. I haven't seen my photography yet, but I'm betting it's fabulous in this setting. What sold me on this venue for our wedding, besides the layout and view, is the contingency plan. In case of bad weather, they will move your reception into the Barrel room. Knowing this took some stress out of planning an outdoor wedding. They also include a fair bit of rentals, such as chairs and tables, in their contract. And the icing on the cake, is Kasey. She was just great in helping us with any and everything we needed to know about what our contract included, and what the venue had to offer. She guided us on timeline and next steps. We were clueless when we started planning, and asked about 100 questions to try and understanding everything. She answered every question in detail and always answered promptly. 8/6/2020 - Called in the morning to make sure we could get a seat. When we arrived at 3 Pm we had a choice of a number of seats. The sitting areas are well laid out in attractive gardens. We ate one of their cheese plates with bread and olive oil. The hostess, including the owners were all wearing their masks and were friendly and informative. The seating was way more than 6 feet apart between parties. The location has excellent views, easy parking, and plenty of shaded or sunny areas to sit and enjoy the day, the wine, the food. They also have a fairly extensive gift shop on site. read more
