Just build the cost into the menu prices and pay the back-of-house staff accordingly. Credit cards are also not something new -- restaurants have been accepting them for years, so adding a separate fee now feels unnecessary. Unfortunately, these added charges can also hurt the wait staff because some customers may reduce the tip amount to offset the extra fees, which isn't fair to the servers who provided great service.
