One of the rolls was still very tasty, the second roll could not have had more than 2 oz. of meat on it. When I asked the server, who rudely asked the chef is this was correct, the chef responded with "Yeah, just like the last time you asked me." I've wanted to eat here from the first time that I saw it 4 months ago. We literally came here because the place we were gonna go was too crowded. We came in and they said 30 minute wait. We were seated 60 minutes later. Our waitress took our drink and appetizer order after about 5 minutes. After 20 minutes, sitting with zero drinks or appetizers, we flagged down the hostess. Our appetizer finally showed up and it was lackluster. We ordered ramen, a sushi roll minus an ingredient, chicken katsu, and steak with shrimp entree. At this point, we had waited so long that we were told that the manager was watching our table to help. The sushi roll showed up wrong so I turned it away. The ramen was correct and delicious. The chicken katsu was correct but mediocre. The steak and shrimp was correct and mediocre at best. After all of this trouble, with the roll not included, our bill was over $100. We paid the bill and left a generous tip but we will never be back as this is a complete and total rip-off for this quality of food and service. If you love yourself, family, and friends do not bring them to this place. Waited for over 2 hours to get seated and receive our food. My family and I had to ask the server several times if the food is ready from the appetizers. The waitress forgot them and brought the food cold. We had to return food several times, as it was not edible. It was to the point that we had to return our food due to the quality and they were still trying to charge us for the awful food. My sushi was as big as a salami slice, salmon was 1/2 fresh and 1/2 brown?? I asked why the rollers were not wearing gloves and she said it was common. I have been to many many sushi restaurants and they always wear gloves, especially with Covid. My waitress tried to gaslight me about glove usage! We had walked past this restaurant going through the park along the river to check out a few shops and decided we would eat there one night while we were on vacation. It was our favorite place we ate at during our stay in Chattanooga! The food was the best we had eaten as far as Japanese cuisine is concerned. The service was fantastic and we even got to meet the owner Nabe who was making his rounds greeting guests. You don't see a lot of restaurant owners work the kitchen or greet guests so when he came over and was extremely humble and friendly it made the whole experience. Nabe-san, you had me at hamachi. I love sushi and I have been a fan of Nabe's since he was on Lee Highway. Because he taught me about sushi, I generally score all other sushi against his. Our last visit was after an unintended hiatus, and he still can craft nigiri that make my eyes roll back in my head. The hamachi was definitely the star of the show. So much so we ordered another round. It's was that good. The conch and scallop were both sweet and delicate. The mackerel was on point. But the toro. OMFG. Mind = Blown. The only dull moment on our plate was the tako. It was a little dry and tough. The rice was a bit wet, but it was fresh, well cooked, and wonderfully seasoned. I highly suggest ordering a flight of sake and sipping them in the order they are given. There's a reason they're placed in a specific order. Let it happen and enjoy the show! He's expanded the menu to meet the desires of his customers, so if you like rolls that cover up the flavor of the sashimi, by all means he has them. And a plethora at that. It's more of an izakaya now than he used to be, but he hasn't lost his touch on the classics. Be prepared to open your wallet, but it's worth it. See you tomorrow! read more

Came here for some birthday takeout picnic in the park. We got a 3 roll lunch special (Spicy Tuna, Dynamite, Crunchy Crab), a volcano roll, and a 2nd Dynamite roll. This came with 2 miso soups, and there was more than enough food for two people. The miso was delicious and has bits of soft tofu, seaweed, and fresh green onion throughout. The fish in the raw rolls looked anemic, mealy and smelled bad. We both braved a bite that was not swallowable. 3 whole rolls of sushi went to waste. The volcano roll was great but our appetites were diminished by the sight taste and smell of the spoiled raw fish in front of us. read more

Went Tuesday, sushi buffet night. Got there right at 5:30. Didn't know you needed reservations and waited for 70 minutes for a table. They should not have reservations on buffet night. You are a 2nd class customer if you walk in. The buffet menu didn't represent Japanese Sushi. They had a bunch of fried "stuff". No real sushi. Why do they call it sushi buffet? What a mess. As for the food, I love how many options there are on the menu, and as a nice touch, they have rolls named after local high schools! Been a long time customer. Almost six years. Not too frequent but at least 6-10 times a year. I have to admit I have had a lot of good sushi since I travel a lot for work but last saturday's lunch was just acceptable. I ordered one crazy roll(basically a California with shrimp) and one rock and roll ( California with eel on top) and Miguel of salmon negehamachi and amaebi. The crazy roll tasted like it was pre made two hours before. Rice was all slimy and cold like a grocery store bought california roll. Rock n roll maki had eel that was barely warm. The texture was chewy and sauce was overly sweet. Then the nigiri came and the fish was so cold as if Nabe didn't expect anyone would order anything other than California rolla and chicken teriyaki. Also I don't know if Nabe or his sous chef decided to put a huge glob of wasabi under the amaebi(sweet shrimp) which is the most delicate of nigiris flavor wise. All in all, an awful, awful meal. I mean come on. You have a reputation to up keep after all these best sushi of chattanooga year awards. This is really worse than third rate. I shall not be returning which is unfortunate because I like the Nabe couple and their always friendly staff. But I do go out to eat good food. I really wanted to like this place, as it is situated in a cool, self standing structure beside Coolidge Park. I chose a fairly basic, easy take-out order (no specialty rolls) in an attempt to spend less. Ha. We split a spicy tuna roll, a cucumber roll, and a California roll. My husband had eel nigiri and I got a miso soup. Soup was exactly what I expected. The rolls were just sad - overcooked rice, and too much of it. The ingredients were so paltry, even in the cucumber roll! The spicy sauce tasted like Ketchup with a dash of Tobasco (or was it Heinz Chili Sauce?). I can't say much about the eel except that the flopped over presentation in an oversized styrofoam container was a letdown. Our bill was $26, which is the same amount I'd expect to pay for a really good version of what I got. This is a poor value. The lady who got my order together was so sweet and the bartender who chatted with me while I waited for the eel to be prepared was also very friendly. The staff and atmosphere seem great. Nabe is the best in Chattanooga. I've been here several times with my wife and we have enjoyed it each time. The prep and presentation is on par with any big-city sushi joint. The food is fresh and quality. The atmosphere is nice too, it feels more Asian than other sushi places and that ads to the experience. Nabe is great. Once when after a good long evening at Nabe, Nabe-san actually walked us to the door (he was probably wanting to close). He stood on the stoop outside and yelled out to us, "thanks for coming, I see you tomorrow, I be here!" It was just a classic Nabe moment. Another time we were eating at the sushi bar and it was actually my birthday dinner. We hadn't told anyone it was, but somehow Nabe-san overheard this. And on the next plate served to us with the roll was written in Rooster sauce around the edge of the plate, "Happy Birthday!". Another classic Nabe moment. The place is great. The only reason I'm giving it 4 stars is because it is in Chattanooga. The place could hang in a big city, no problem. I am fortunate in that my job allows me to travel around the country, and indeed the world where I am afforded an opportunity to experience different foods and culture. I can--and will--say with absolute confidence that Sushi-Nabe is the best sushi that I have ever had. Period. (I say this though acknowledging the fact that I have never been to Japan for sushi) Now, if your idea of sushi is some deep fried, mayonnaise concoction dripping with eel sauce, well then I am sure Sushi-Nabe is indistinguishable from the ubiquitous sushi haunts you will find in any city. But if you know what you are doing, this place is an absolute gem. First, skip the the table and head straight to the sushi bar. Nabe-san (the owner) will be happy to greet you. Next, don't even bother glancing at the Maki rolls. They are good, but that is not what you are here for. Ask Nabe-san what he has gotten in fresh that day from Japan. It may not even be on the menu. And whatever he says, you order it. No questions asked. For example, the other day he offered me a deep-water King Crab Nigiri that was caught off the waters of Western Japan. I remember, one time I had the opportunity to shake the hand of Bob Dylan. I didn't want to wash my hand for a week. After eating this crab, I felt much the same sensation in that anything else I could put in my mouth would simply be unworthy. The Uni was incredible. It was creamy and sweet and fresh. The Mirugai (giant clam) was the best I have ever had. And of course the Toro. I can't forget the Toro. My God, it was like good Foie Gras. No soy sauce needed. Plus, if you are friendly, Nabe-San is all too willing to give you a free sample of whatever concoction he made for the day to go along with your sake. Today it was something resembling a Hawaiian Poke. I get to Chattanooga every few months and this is by far my favorite part of my trip. You all are very lucky to have this place. read more

The atmosphere is acceptable; it's about the only thing that keeps this place from being on par with big-city sushi. I would highly recommend this location if you are in the area. My wife is a vegetarian and Chef Nabe made a special chefs choice sushi roll for her. She said it was the best she ever had and unique (Japanese pumpkin and marinated shitake mushroom.) I myself cook for a living and ordered the miso ramen for an entree. It's the best I've ever had. The broth was rich in flavor and had noodles, pork belly and dumplings in it. Very filling.
