My daughter, my and myself were traveling to the Palm Springs Street Fair last night. As we were approaching, my daughter saw the company truck parked and she was EXCITED. She told us about the amazing food they had and that the first place we needed to visit was this place. She mentioned the chicken and ribs were really good, but couldn't stop talking about the potatoes. She was correct. Although the meats were really good, don't get me wrong, I think the potatoes with the mixed vegetables were AMAZING. Even my grandson was all about the baby carrots. They even had some cornbread that was not dry, at all. Very delicious all around. Will definitely have to go back the next time we get up that way to the street fair. In case you don't know, the Palm Springs Street Fair is Thursday nights. If you happen to find your way there, I highly recommend you try this food truck. Free range chicken, polish sausage, roast potatoes, broccoli, every aspect of my plate was better cooked than many restaurants that I've ever eaten at. However, one thing to note, this meal IS GREASY. So dieters, keep an eye out for how much oil he uses, because the potatoes have so much oil that there is a lot in those. any personal favorite of my dish was the polish sausage, it's just bursting with flavor, perfectly cooks so that it's slightly crispy with the bite, followed by a juicy interior. For an extra kick of grease, ask for a fried egg. You can crack the yolk over your potatoes for a delicious heart attack. Quite simply the tastiest chicken I have ever had. I am not exaggerating. It is cooked so perfectly. We make it a point to eat chicken sandwiches almost every Saturday for lunch after going to the Vista farmer's market. The amazing taste has one setback, though--my 2-year-old daughter, who seems to be a picky eater, doesn't like any chicken but Rollswisserie anymore. Oh well. This is BY FAR the best rotisserie chicken I've ever had! They are at the Encinitas farmer's market every Wednesday and there's always about a 20 min wait. Don't let that deter you, it's always worth it! Not to mention it's free range, it is a little on the pricey side but when the quality is beyond worth it. The potatoes are unbelievable and are seasoned by the drippings from the chicken, the pairing of the two with the coleslaw is where it's at! I have never been disappointed. My neighbors got me hooked but I never seem to be able to break away on Wednesday to go to the Encinitas Farmers Market in time to get some Rollswisserie chicken. It is the best Chicken I think I have ever had and that includes the Red Tracton's Sunday Night Fried Chicken Special. This tastes better than that and it costs a less. No surprise there. Also the rosemary potatoes are incredible. and the ribs seem to be great though I am not a rib expert. We recently had Daniel and his Rollswisserie truck cater my daughter's wedding. We'd first tasted his food at the Carlsbad Village Faire and the Encinitas Farmers Market. If the amazing presentation isn't enough, the food was excellent!! The portions are beyond generous and even feeding 200+ people in under an hour everything was hot and ready! I was invited to a graduation party and was told it would be catered by a food truck. I immediately imagined the typical food truck that you see going businesses every day. I'm wasn't about to complain about free food, but I was thinking that there may had been a better choice at the time. I was way wrong. The chosen menu for this party was rotisserie chicken, seasoned potatoes and broccoli. The chicken was fantastic! Juicy and tasty and just GOOOOOOOD! The broccoli was tender and flavorful, but not overcooked as is often the case elsewhere. The potatoes seemed to be everybody's favorite. They were cut up and well seasoned and cooked to perfection in a giant wok. I can't leave out what could be, the tastiest barbecue sauce I've ever had. It was tangy or zingy or however it best be described. All I can say for certain is that it was so good, I had to pour some over my entire second helping. What about the service though? Excellent! All this was brought to us by Daniel and Wilma. They were very kind, engaging and pleasant people. Professional, quick, efficient and cared very much about presenting us with excellent food and service. Every person at the party spoke very highly of the food and of Wilma & Daniel as well. The rotisserie chickens are moist and delicious, far superior to any grocery store rotisserie. Then there are the potatoes, which cook under the rotisserie so they are flavored by the drippings that fall from above. It's ALL good here! read more

Lucky for Encinitans, Dan parks his truck at the entry to the Encinitas Farmer's Market on Wednesday nights. The chicken and ribs that he cooks are to die for. I wish I knew how he does it, but the ribs are just a slight bit spicy and don't need the barbecue sauce he provides. They are meaty, generous proportions, tender and seasoned perfectly. The meat practically falls off the bone, but it doesn't so you can eat them with your hands. The chicken is moist and tastes great. The roast potatoes and cole slaw are also terrific sides. Daniel and his team catered for our company lunch meeting and it might have been the best catering experience I have ever had! I spoke to his assistant prior and made all the arrangements. Two days before the lunch Daniel personally called to verify the count of people and food. The day came for our luncheon and everything went so smoothly. Him and his assistant came and didn't waste any time. They made sure the truck was in the place that we wanted and they handled the rest. Everything was perfect! Went to Vista Farmers Market and as I was walking enjoying my shopping, I smell their very tasty-looking rotisserie. I don't eat chicken often and if I do, it has to be free-range or organic fed chicken. I purchased just the half-size.
