I know what elite, holy-grail Mexican food tastes like, and Tacos Michoacan absolutely clears the bar. You don't need to drive to the actual border when this highway gem is right here. I ordered the Super Burrito (pro tip: hold the rice filler, add guacamole) and paired it with two ice-cold Mexican sodas. The carne asada was tender AF. Most importantly, there were zero mystery chewy chunks. You know exactly what I mean...that one rubbery piece of gristle that sneaks up on you, makes you question your life choices, and forces you to secretly gag into a napkin. None of that here... just pure, delicious steak. Also, do NOT sleep on their green salsa! It goes incredibly well with the burrito and it is completely white people-friendly. It gives you all the authentic flavor without making you cry or question your spice tolerance. This is a rock-solid 4.5/5 experience. And since I actually passed third-grade math, that rounds right up to a 5-star review. Fix your tastebuds, internet. This place is a masterpiece!

Let's start with the salsa. I don't know what they put in their salsa. I know the main ingredients of salsa, but their salsa? Oh my gosh. It is delicious. It's my favorite salsa. I'm sitting here stuffed from dinner, and I still want some right now. My husband loves the chorizo burrito. He's ordered it both times we've visited. It's this big, gigantic burrito that looks impossible to eat, but somehow he manages. On our most recent visit, we ordered the chicken flautas as an appetizer. First of all, the flautas themselves were delicious. The seasoning on the chicken had flavors that felt familiar, but with a twist of something I've never had before. And the smokiness of the sauce on the flautas? Delicious. Just absolutely delicious. I also ordered the salmon, which was perfectly seasoned. I believe it normally comes with vegetables, but mine came with a salad instead. Whatever the reason, that salad was outstanding. It was so fresh and flavorful. There may have been apple, pear, or jicama in it... I honestly couldn't tell... but every bite was delicious. The atmosphere is fantastic, too. Elena took care of us on both visits. She makes it feel like you're visiting somebody's home. She is absolutely warm and hilarious at the same time. What really surprised me was that she remembered the beverage my husband ordered on our previous visit. I was like, "How long ago was that? Three months ago?" Another young lady came around and asked how we were doing as well. Very hospitable. Again, I really can't believe there weren't lines out the door. I mean, it's a cool crowd, don't get me wrong. But y'all are asleep. Don't sleep on this place. Y'all need to get there. I'm telling you... just wait.

The steak is flavorful and honestly some of the best carne asada I've had in a Mexican dish. The street tacos were simple and good. Carne Asada and chicken with , cilantro, onions, and their hot sauce on top. And I have to mention their hot sauce! It has been one of my favorite things about Taco Jalisco for years. It adds so much flavor without taking away from the food. The super burrito was good too, although it was on the smaller side compared to super burritos I've gotten at other places. Still, the flavor was there. The seasoned steak, rice, and house sauce all blend together really well. Their rice especially seems to soak up some of that sauce, and when you get everything together in one bite, it makes for a really flavorful burrito. After 20 years, Taco Jalisco is still one of my favorite places in Vallejo to grab a burrito and some tacos. I wouldn't necessarily call it the best anymore, especially with so many other good Mexican spots around Vallejo now, but it will always be one of my favorites and a place I'll continue coming back to.

I even had to add my own sour cream because there was so little inside. As for the California burrito, it was just okay. It honestly reminded me more of a breakfast burrito than a California burrito, and I wasn't a fan. Overall, the flavors are definitely there, and it's clear the food has potential. However, the portions felt skimpy for the price, making the burritos feel overpriced.
