The prik nam pla (fish sauce, chiles, maybe a little lime?) was really great -- something about the flavor really popped for me and was tasty. And everything was served hot and fresh. But the pork belly sucked, and that kinda ruined the dish for me. The fatty parts weren't melt-in-your-mouth at all. They were just chewy. The skin wasn't crispy, it also was chewy. The meaty parts weren't juicy at all, they were tough. I dunno, everything about it seemed wrong. And getting the pork belly right seems like a crucial part of the overall dish. After eating maybe 1/3 of the pieces of pork belly, hoping each time that the bad pieces were just outliers, I gave up and just pushed the rest of them to the side while I ate the rest of the dish. The hand-stretched noodles have the best texture and the flavor was indescribable, honestly. One order was almost 3 meals for me (I don't eat big lunches) and the quality was unmatched. It's only been a week since I went to the cart and I've been craving it again ever since. I didn't even take a picture of my meal, I just dove in. The smell was just too tantalizing.
