Simply put: Chris is THE MAN. Stop whatever you are doing, call him, and get him in your house…read more Now. My sister got my mother and I a gift certificate for Christmas 2009 for 'personal chef services.' She had heard of this dude from some friends, and since my mother and I are very much into eating, drinking, and being merry, this was a perfect present. According to his press packet, we had the choice of hosting a dinner party, taking private culinary classes with Chris (knife skills, learning basic sauces, creating a meal step by step right beside him), or having him prepare us a series of meals for the week that he will package up and be ready for heating whenever we wanted. We didn't get around to scheduling something with Chris until November 2010. We decided to do a simple dinner party. Chris was super-easy to work with regarding scheduling, and then went over and above the necessary service in designing the perfect menu for our party of five. Despite a shellfish allergy, a nut allergy, one guy who doesn't eat most vegetables, and a mushroom hater -- he put together a menu that made all five of our mouths water. On the day of the party, he arrived at my mother's house three hours early to prep. At first, because she has an open kitchen, dining room, and living room set-up I thought it was going to be weird to have Chris cooking and all of us lounging around, chatting about everything from can-can dance to cancer, and drinking in his earshot. It couldn't have been better. Chris was personable, chill, and really easy to talk to PLUS he was a total ninja in the kitchen and prepared a four-course meal from scratch without so much as a clang of a pan. The best part: the food was INCREDIBLE! Appetizer: Sausage, peppers and white bean ragout over Asiago polenta Pasta: Penne alla Vodka - Penne tossed with pancetta in a light vodka tomato cream and topped with parmagiana. Entrée: Choice of Garlic and Fennel-Encrusted Filet Mignon topped with Gorgonzola and Pancetta Chip OR Veal Osso Buco in wine and tomatoes topped with gremolata Sides: Cabernet-Saffron Risotto, Rosemary-Honey Cream, Seared Garlicky Spinach Dessert: Cannoli di Ricotta with Espresso Sauce and Orange Marmellata The second best part: This cost $60 PER PERSON! (We also tipped Chris because we were so happy with the service. It is not required, but I can't imagine not tipping him. He was just so AWESOME!) Not only is working with Chris a pleasure, but he is a hugely talented chef that was more than willing to personalize his art and work to fit our goals, AND it's a great value! Not to mention that I got to chill in the comfort of my mother's home...so it was much easier to pass out on the couch to let my full, happy belly settle!

First he met with me and did an extensive interview about what I liked to eat, what I didn't like to eat and what I was willing to try. Every other week Chris would come to my condo on Monday while I was at work and prepare individual meals and leave them in my freezer. They were all labeled and ready to go. I would come home from work and pop one in the microwave and get to my schoolwork. The food was always amazing and and my kitchen looked better after he left than before he came...seriously. Chris can cook anything- my brother in law took a day long cooking class with him and said it was one of the best ever. Hire Chris. You won't be sorry.

But I had a gift card so off I went. Patty welcomed me into her beautiful home ... a fire going and nice music, and I met the three others in our class, one of whom also came alone. A sip of wine later and I was facing my own naked bird at my own station in her huge kitchen -- on my own board with my own knives -- waiting to be cut up. Patty was so patient with me ... helping me hold the knife, find the joints ... and before I knew it I had six beautiful pieces ready to be prepared in 3 different recipes. We cooked every last part of those birds along with a delicious rice dish and sat down a few hours later to a leisurely meal admiring our work. We could have stayed there until the wee hours at her table, the four of us and Patty; we felt completely at home. (Except that she cleaned up!) She also does children's classes. My kids went this summer. She was excellent with keeping them all on task and managing her kitchen with six messy little ones having a ball. Oh --- and she does a Thai class ... that's the one I want to do next. I ate as much as I could. I left with the rest of my food in to go containers ready to serve my family today, and with the confidence to cook again tomorrow. I feel so confident now ... I want to try chopping onions and swirling butter and making my own stock at home.

I had the chance to try some of her appetizers and desserts at an event. I asked the event host who made all the delicious treats and was introduced to Patty. She was very kind, personable, and encouraged me to keep eating! I hope to take one of her classes or use her talents for one of my own events.

Our class happened at the start of a snow storm so only about 14-16 out of 20 people came which helped create a more intimate setting.
