Okay, the Gibson Room and I have a complicated history. I used to love this place, then it went through a phase where it felt like it was trying to be a fine dining restaurant -- which, on Coral Way, never quite clicked for me. I quietly stopped going for a while. But a friend convinced me to give it another shot and honestly? Really glad I did. It feels like it's back to what it does best -- a laid-back cocktail bar with really solid food. The drinks were well-made, the burger was awesome, the chicken parm sando was legit, and I got a kick out of seeing Miami Slice pizza by the slice on the menu. Service was fantastic too -- friendly, attentive, always checking in without hovering. One honest piece of feedback: the prices are still a little steep for the neighborhood. This is Coral Way -- a real, working-class Miami community -- not South Beach or Brickell. Hard to be a regular here at these prices. This is quickly become a new favorite staple. I went for the buzz surrounding the burgers and came to find that not only was the buzz so well earned, but they also have some of the best fries I've had in the city. The server told me they resemble McDonald's fries but elevated and I felt like that would be a very high standard to set. But let me tell you... Not only was she right but the fries are so ridiculously good that I could come here just to get the fries. As a metter of fact I did the other night and they were sadly sold out but I got to have some of their Miami Slice pizzas and was satisfied non the less. This was the first Miami Spice we attended this year in 2024 and it was a great Spice to start with! We came during happy hour so we got double the deals! We got the chicken truffle croquetas with the chutney sauce from the happy hour menu -- sooooo good. To add to the experience, the waiter was sweet enough to give us two complimentary mini bites of some kind of hors d'ouerves, my memory escapes me -- but I do recall liking it because it has TRUFFLE. So from the 2024 Miami Spice Menu (we each ordered something different so we can try more food): Appetizer #1: Grilled Oysters -- it was very buttery and wine-forward, like an upscale Rockafeller Appetizer #2 Maduros -- sweet plantain with pork cheek, garlic chips, and fish sauce caramel... an unexpected combo that went amazing well together Entree #1: Shrimp and Ham Hock Mezzaluna -- a tiny dish, to be quite frank, but it did have amazing flavor (but then we'd get a $35 pasta dish from an Italian place that's bigger than this, so if you have a smaller appetite, this is for you!) Entree #2: Pork Schnitzel -- this was impressively yummy and large, that I was able to share with my hubby who ordered the smaller dish Dessert #1: Lemon Tart -- the perfect amount of tart and creaminess with what appears to be like a baked Alaska on top Dessert #2: Sticky Toffee Pudding -- a bit firm on the sides but enjoyable with the vanilla ice cream ala mode Because we came on a weekday, it wasn't so busy and it was intimate. Been here before the Miami Slice takeover twice. Today, I went solely to get pizza and do a vibe check. I will say it's attracting a young professional crowd now which is nice to see. But the service was disappointing. I was skipped over and forgotten about for a while. They only have two bartenders that were clearly in the weeds even with support behind the bar. The mezcal cocktail was great while I waited for my pizza. But the pizza was disappointing. I ordered "the works" which I think the bartender messed up my order and their form of recovery was putting a tiny cup of "the works" on the side. The hot honey is not spicy whatsoever and tasted like regular sweet honey. Love Miami Slice, was definitely authentic to them as far as the pizza itself but bummer to mess up something so easy. Perfect dim lit bar with great cocktails and friendly service. (And now serving Miami Slice pizza) Located on Coral Way and sw 22nd ave parking seems to be mostly street parking. Upon entering, you are immediately immersed into the dim lighting and impressive display of bottles available. We got there just when they opened and the bartenders were setting up. It was quite a selection. Staff were super friendly and went over the drink specials and food options. I had been wanting to stop by and when I heard about Miami Slice being part of their food menu it was just the final push I needed. I had a lager and my wife had a glass of white wine. Both were ice cold and the perfect combo with the Miami Slice pizzas. We ordered one of each pizza offering. They had the margherita, the pepperoni and the mushroom truffle. You can get them upgraded with the stracciatella for an additional charge. I did that with thr pepperoni. All the pizzas slices were really good. They were thin and crispy. It was my first time trying Miami Slice and I know there is a lot of hype. I would say the pepperoni was amazing. I loved the combination of pepperoni and the hot honey and adding the stracciatella just put it into another stratosphere. It was an easy 10 out of 10 on the pepperoni with the stracciatella. As for the mushroom and truffle slice and the margherita they were good but in my opinion not amazing. I would definitely come back to The Gibson Room. Wife also agreed. The Gibson has become my go to bar in the gables. When you're trying to catch a vibe and some bites, I'd recommended coming here. What truly made me come here was once i heard Miami Slice became a resident; yes you read that correctly. Miami Slice is now also at The Gibson, however they don't have all their slices, but still have Cheese, Pepp & Shrooms slices with the option of adding all the fixings. Aside from having pizza available, the Gibson provides a surprising food menu, from yummy small bites like buffalo cauliflower, an amazing burger (not smashed) and all the way to a delicious steak and that is not crazy talk. Lately I've been recommending my friends to come here, I've been here already like four times. On weekends, it is usually slammed and there is a good chance, you'll have to put your name on a list and wait, but meantime you can at least grab a nice cocktail from the bar as you wait. The times I've gone i was able to secure two seats at the bar, but last time i went i did want a table and it took me like roughly 30 mins but the time went by fast, especially while i waited for my friend to arrive. Think of the Gibson Room as your neighborhood watering hole but with a dark, classy, smooth twist - it's a whole vibe in there. I usually hit up this spot for their HH, which is served at the bar and at the 2 high tops on the side if you have a party of 4. The vino glasses and cocktails are $10 a pop and they change. I was a fan of the Dark and Hoppy and The Track Day, myself. Don't get too excited about the online menu, because things change and what you are eying may no longer be served. There are also a good number of snacks on the menu. $1.50 chargrilled oysters are reminiscent of escargots-like delicious herby garlic butter vessels. The smash burger is also perfectly sized and at the $8 price point, hard to beat. But my heart is with the house made ricotta - a generous serving of whipped cheese drizzled with delicious olive oil and flakes of salt - So simple, yet SO good! How this spot only has 3.9 so far on Yelp is anyone's guess. I came here last night with my friend and we both LOVED it. Sexy, dark, sultry decor awaits you. We were transported out of Miami and felt we were in a New Orleans or New York speakeasy. We were delighted to discover they had live Jazz too. Apparently, they offer live Jazz from Wednesday to Saturday! The service was fantastic, friendly and personable. The food, again Fantastic. To be noted the Chef and restauranteur is Michael Beltran. He has a Michelin Star for his highly acclaimed restaurant Ariete. The food quality here is as good as Ariete and also his Chugs diner. See my other reviews of these other gems. WE tried their Caesar salad - and as my friend put it "a real one", as it came with anchovies, which takes it to that next level! We tried a cheese board with all their dreamy trimmings. The Gibson Room in Coral Gables is an excellent pub/bar and kitchen. If I lived closer I'd go there every night! This place is part of Michael Beltran's Ariete Hospitality Group, which I am a fan of. Excellent vibes dark, dimply lit and classy with chandeliers and dear heads on the wall. A great selection of classic cocktails, and wide selection of spirits. There is live music usually Jazzy, and a DJ every night they are open, the music starts up after 7 or later so if you're looking to start low key go early. If you're looking for vibrant go later, they're open late night as well. It's so nice to have a live music venue so close to the Grove. When you enter your first impression is intimate and dark. Keep in mind do not go here if you want to catch up with a friend or engage in meaningful conversation. Once the music starts you won't hear a thing! I'm still dreaming of the food here! Sharing multiple dishes is the best way to experience the menu, which features imaginative iterations of familiar dishes. It makes so much sense when I found out that this restaurant is the latest creation from the Ariete Hospitality Group. Our server did an incredible job taking care of a group of six ladies eating + one having a drink. She was incredibly knowledgeable about the menu and gave us a good idea of what each dish we were interested in was. She voluntarily offered to and expertly divided our checks according to who shared what dishes without any issues. Our water glasses were always checked on and refilled without asking. We shared Grilled Oysters that I could eat again and again because of its dense, broiled parmesan flavor. The Short Rib was as tender and full of flavor as I could have imagined, and its caramelized onion sauce was so heightened when we dipped crusty, buttered thick loaf bread in it. The Chicken Croquetas were worth it to order, more for the rooster shaped jar that they came in than the actual pieces. But they were packed with shredded chicken to make it satisfying enough to share half of one. I could do without the sweet peach chutney that it came with. The Hasselback Potato hides in the menu as a side dish, yet sits on an airy, creamy sauce that makes it a standout. The Big Ass Caesar Salad comes tossed in a vibrantly citrus accented dressing that I could eat anything with. I'm glad I snuck my spoon into the Sticky Toffee Pudding because believe it or not, I can't get over the density of the vanilla ice cream at the top of it! Happy hour runs from 5-7 PM at the bar, where carefully crafted signature cocktails are $10 each, along with select wines. The Espresso Martini is delightful to look at and drink---solid flavor and foam layering. The House Gibson is their martini, and the addition of a pearl onion garnish gives it another dimension of savory flavor. Sadly, we did not realize the live music starts around 10ish weekends which is about the time I was ready to be heading back home. We grabbed some happy hour cocktails at the bar. They have a small selection of cocktails for $10 until 7pm. We then headed to the small dining area for some appetizers and entrees. We had the grilled oysters which were definitely the highlight. We still decided to sit at a table and started with their version of Old Fashioned's which were very good. They brought us a small starter with ricotta and jam was delicious. We ordered the croquetas which were dry and flavorless and at $16 for two are a definite skip. The crab salad was very good as were the stuffed dates. The beet salad with Brie cheese was amazing. This is such a hidden gem. This is a sultry, sexy, restaurant, and a perfect setting for a date. My boyfriend had planned a date here and I had no idea what to expect but the mood was set from the moment we stepped foot. If you know me, you know I'm a major stan for all things Ariete Hospitality Group. Enter the Gibson Room, which may be my current fave of all of their concepts. Why? It's sexy, it's got great cocktails, delicious food, and live music almost every night. What's not to love? My fave cocktails here are their Gibson Martini and dirty martini, but I've always enjoyed whatever I have tried there. The burger is a must if you're looking for a good smash patty. Dare I say, I like this one more than the infamous Chug burger. What I love about the Gibson room is that its elevated bar food at it's finest. chargrilled oysters, Foie sausage, trout rillette, the list of unusual menu items goes on and on. Some of my fave dishes are: +Big ass Caesar salad - the anchovy mousse is what gets me here. So good. +Boquerones + Anything on the charcuterie menu +Pure de malanga - this isn't your abuela's variation, this one comes with Caviar. +Chicken Schnitzel +Hasselback Potato As you can see, it's kind of hard to go wrong here menu wise. They also have industry nights on Thursday where they do new menu items and drink specials late night. The best part about this spot is that it's open late night and you can eat until 11 pm. They don't take reservations, so if you're going on a weekend be prepared to wait. Trust, it's worth it. read more

I had an opportunity to visit the Gibson room with a group of 8 friends. Despite being a large group, the service was excellent. Timing of the food was adequate, bills were handled well and most important of all- we had a great time and enjoyed wonderful food. We got started at the bar enjoying happy hour cocktails, they feature $10 drink specials. For dinner, our overall favorite were definitely the baked oysters- we got two orders, dessert was definitely a favorite as well. I do enjoy this place a lot. Cocktails are yummy, but to my surprise, so is the food. Since I've been they've changed the menu, so no point I feel in recommending different dishes, I suggest you try as many as you can. A girlfriend had her birthday gathering here two Fridays ago and I was excited as an Ariete fan - it's in my top 5 Miami restaurants - but also the negative reviews peaked my curiosity as to this place. The vibe was awesome and the Kentucky River cocktail was a delightful surprise to my palette as bourbon isn't usually my go, it truly took the edge off. Through my friend was introduced to chef & owner Michael Beltran and it was a total fan girl moment of my gushing over his gastronomic genius. I am making way through eatery treasure map in dining at all his concepts. Liked the experience so much, I went back this past Friday with another friend and the House Gibson was on hit and delicious Tamal en Cazuela deconstructed tamale w/ with foie gras and crispy duck and chicharron. The service was great. Our waitress was very knowledgeable and very sweet and she even told us on the weekend is the best From Thursday to Saturday. They have musicians that come in starting at 8 PM and the best way is to make a reservation at 6:37 eat and then sit back and enjoy live music which I think is wonderful. We will come back and try that again. can see my favorite was the oysters that we had was amazing and the crispy duck was the perfect crisp and the meat was juicy, and it was a great blend of greens, and the pierogi with the duck was stuffed with sweet potato, which I had never had, but it was a perfect blend with the duck and for dessert my favorite was the sticky toffee pudding! Fire. The Gibson Room is a great cocktail bar with a top notch food and live music. Coming in at 7 on a Saturday night I noticed the restaurant wasn't full and was worried! By 7:30 there wasn't a single seat to be had. I grabbed a Kentucky River and waited at the bar for family and was quickly seated once they arrived. The cocktail put me in a good mood and we quickly ordered grilled oysters and charcuterie to start off the night. The servers were attentive and were constantly filling water and making it seamless. I didn't ask for recommendations but the short rib caught my eye and we ordered half the menu. The food totally rocked. My favorite thing on the charcuterie board was the chicken liver mousse, so right on toasted baguette I still think about weeks later. The char grilled oysters reminded me of New Orleans and I followed up with a Mexican Razor a well balanced Mezcal libation. The short rib came with a Hasselback potato, sliced super thin and crispy, it was on an unctuous pepperjack mornay with great savory flavor. My taste buds were buzzing. The short rib was so tender with caramelized onions it was all in harmony and the food sang loudly. Such high level cuisine, a real pleasure! They are open till 3 am with a late night kitchen fyi .I will start by saying the place is fairly small but a very romantic dim lighting vibe. They had some jazz live on stage which made it a even better to enjoy and stay longer . We ordered a round of margaritas and mine was just not it. So maybe skip that choice and get bottle of wine instead . My only thing was they didn't have Riesling by the glass, which most places usually do. For apps we only tried the charcuterie board.
