I was lucky to find this place while searching online for good eats! This place is slightly out of the way from the typical tourist area but it is SOO worth it. I got the Mac & cheese grilled cheese and it was absolute perfection. The Mac $ cheese wasn't dry but not overly cheesy which can be just as bad. I did get caramelized onions which I liked but there was too much so I had to pick out what I didn't want. The bread was toasted just right and held up very well! You have to come here if you're in the city!!! This place is amazing! The owner is super friendly and helpful the customer service is iconic here! For the food my first visit here I order the turkey and had to have more! So I literally ordered half the menu to try them all and let me tell you these were by far the best grilled cheese sandwich I ever had sorry mom and the black sheep in cali! Oh so close! I really wanted to like this place a lot but it all comes down to the food: it just was not as good as it could have been. They've been open for about 7 months and its owned / operated by a group of sharply dressed, cool looking, and welcoming Parisian hipsters. It is a tiny place with wall-counter seating in the front and a couple tables in the back. As most Americans know (or at least those who ate lunch in my county's public school system), you must have your tomato soup to go along with your grilled cheese. They were out! Not just the "soupe de la saison" but also the tomato soup.. doh! I ordered both the "mac & cheese"(10Euro) and "pastrami" fabrication (14 Euro) (my wife is out of town so I have no one to talk me down!). With a bottle of Mimi's beer (another product of Paris) it came out to a total of 31 Euros. You need to pick from white or rye bread for the sandwiches (at least those were my available choices). The biggest issue I had was with the temperature of the sandwiches. The level of gooiness was inversely proportional to the depth of the sandwich from the surface (sorry, I'm back in school for my masters and this is how every professor talks). Both sandwiches were not hot or gooey in the center. There were unmelted cheese bits all over the place. So much potential gooiness gone to waste! And this is not because I brought the sandwich home (a 5 min walk). It was never melted to begin with! I thought about nuking the sandwich but my hunger (and laziness) prevented me from getting up. The guy preparing my sandwiches (can you really call someone preparing grilled cheese sandwiches "Chef"?) highly recommended the mac n cheese. It was my least favorite of the two. Both of the sandwiches came with some of their homemade tomato sauce which was a tasty sweet concoction. It worked better with the mac n cheese which was also a sweet sandwich (from the caramelized onions). The flavors were underwhelming in general but I could attribute that to my preference for bolder flavors. I preferred the pastrami sandwich but it again was missing something. I asked for bacon on top and that was definitely a good addition. I think offering hots or a kosher pickle with the pastrami would be a nice addition. I'll go again if someone wants to get a grilled cheese fix but there is so much more of Paris cuisine to try.... read more

Came here on a quest with both of my daughters while in Paris. My grilled cheese choice (the pastrami on wheat bread) was a meal, not just a sandwich! These were custom, made one at a time (lots of extras to choose), and you could watch the whole process. Crunchy outside, gooey (and for me, tasty pastrami) inside. Small place so they can't quite bring an order for multiple people at the same time. Benefit was that each grilled cheese was hot and fresh when it arrived. Workers were very friendly. Asked for tap water and they not only obliged, but offered to give refills. Fun, delicious, and filling! If I could give this place 6 stars I would! The service is so wonderful and the food was honestly exactly what I expected-- just a good grilled cheese. The woman at the counter was so sweet and after my friend commented on how she liked one of the songs they were playing the woman turned up the music! When I told my French friends I wanted to eat here they made fun of me for wanting to eat a 9€ croque monsieur. Inner eyeroll. A) Grilled cheese and croque monsieurs are objectively different B) Grilled cheese is subjectively better than croque monsieurs (not croque madames though... egg on top wins) We did a walk by to check out the menu and like everyone's already mentioned the owners are super friendly and welcoming. We went back a couple days later to try out the goods. We ordered the Grilled Mac and Cheese (better in theory than in execution) and the Grilled cheese Pastrami (omg melty cheese and salty meat heaven). Short story: get the pastrami Long story: the grilled mac n cheese suffered from overcooked mushy pasta. And there just weren't too many flavors going on except carbs and cheese. They serve a tiny ketchup cup filled with tomato soup (a bit on the sweet side but good). You'll need it for the Grilled Mac and Cheese and surprisingly, quantity is enough. The pastrami stands on its own. To reiterate other reviews, 3 cheese combo and choice of breads, each sandwich is made individually. No other alternative really because they've got only four burners and can cook only 4 sandwiches at a time. So decalage between the first sandwich and the second. Don't go there if there's already a crowd unless you're willing to wait. From my count, there were more people 'a workin' than sandwiches 'a makin' so I hope some dudes were just hanging out otherwise not sure how this place is going to stay in business. We stumbled across The Grilled Cheese Factory on a walk through the city. The sandwiches here are the best! I ordered the "chèvre" (goat cheese, fig jam, spinach) and my husband got the "bacon" (bacon, caramelized onions, bbq sauce). Both were made to order, each served on a wooden board with a small sauce cup of tomato soup on the side, for dipping. The soup was somewhere between actual tomato soup and marinara sauce and was very sweet, but it worked well with our sandwiches. Great comfort food on a chilly day. Next time we are in Paris, we will have to return. read more

While this place is obviously geared towards Americans, I ordered completely in French and even though I took a phone call in english, the man working still didn't speak to me in english. If you are an american french speaker you will know how much that means. The sandwhich was DELICIOUS! Anyone else love how much salmon they eat in France? The marinara was the best i've ever had! A variety of grilled cheese sandwiches to choose from with fresh ingredients. We ordered the tomato soup and soup of the day was Mushroom.... It was the best mushroom soup I have ever had! Service was very friendly, the restaurant is pretty much run off the mill modern-ish with tight seating - but you can also have your Grilled cheese as a take-away. Prices? It´s not cheap fast-food, but when you look at what you pay for a (in comparison tiny) Croque Monsieur at your typical french bistro around the corner - the huge & filling Fabrication Bacon for 11€50 is not that bad value for money. Where the prices are indeed too high, are the drinks. Top Tip: Stay away from the mac and cheese. Too much fat (even when you´re not counting calories), too little taste. read more

grilled cheese heaven! I got the mac and cheese one and it did not disappoint. The sweet caramelized onions inside were A-MAZINGGG. I wish there was more of it. If i go back I will definitely add extra onions in whatever sandwich i choose. Or maybe ill just ask for the onions stuffed inside the sandwich haha. It also comes with some tomato sauce to dip and the tomato sauce is sooooo good. SO sweet and SO good. I wish they would bottle it up and sell it to me so I could make pasta with it. ps the portion is quite big so its quite a good deal for the price in paris. read more

Definitely underwhelmed. The concept is fine but I really wasn't a fan of the Mac n cheese grilled cheese. It was heavy, slightly burnt and the seasoning wasn't well distributed so certain bites were tasteless. I haven't felt that gross after eating something in a long time. It was almost like I was back in the US, and not in a good nostalgic way as I would have liked. The chicken sandwich is pretty good and I did like the tomato sauce on the side. There are definitely better things in the area but not the worst thing either. read more

We really enjoyed our sandwiches, a pastrami and a bbq bacon. They were very filling and the homemade tomatoe sauce was delicious. I wanted to eat it by the bowlful. The staff was super nice and talked to us about our trip, and gave us advice about other places to eat in Paris.
