Same concept as Texas de Brazil, where diners can let the servers know when they are ready to eat more or just not ready by flipping the token to show red or green side. The servers will stop by the side of the table with various meats cooked to different temperatures to offer to diners. You can pass if you don't want or you can let them know how many slices you would like. The interior seemed really nice and cleanly maintained. They also have fried yuca, plantains, fried cheese that servers will bring to the side of your table and you can ask for however much you want. To me, this was like upgraded version of all you can eat. I really enjoyed the atmosphere, the food, and the hospitality. If something was lacking, I didn't notice it because all the other things that matter, like customer service and hospitality more than made up for it.
