Here's why I like all sorts of hashes and skillets as my preferred breakfast vehicle. As you know, I love eggs. I think a perfect egg is like the star of any breakfast and is definitely the headliner/closer of any perfect entree. But I also think good hash browns are the foundation any breakfast is built on. If the potatoes are off--too crunchy, sliced or shredded too big, bad seasoning, &c--the eggs often can't save it. That's why any dish built on the premise of potatoes on the bottom and eggs on top is the ideal dish for me. Paper Mill has a good skillet plate. The potatoes are chunky but not overly so. The sausage and ham are plentiful--definitely no skimping here. The veggies lend a good flavor but don't overstay their welcome. That sauce complements everything well. And my eggs were great. Once mixed it was perfect. I think the only complaint I have of the service was the coffee refills were a bit slow. I'm used to servers coming by and asking for a refill. This time we noticed I was a perfect four for four with having to ask for a refill. Combine that with their policy of not providing coffee to go and it was kind of disappointing. The coffee on the ride back to the hotel is a time-honored vacation tradition. The ambience was good. It was very welcoming. Even if we were sat at a high table, which is normally a deal breaker, this time wasn't so bad. I like the dim lighting. That's normally something you don't see in a breakfast/brunch food joint. I'd welcome more places to eat in the morning that aren't try to flood the space with natural lighting. All in all, this was a great place to get your first meal of the day. Came on a Sunday morning and it surprisingly wasn't that busy, we were able to get seated right away as a group of 4! The waitress was friendly and kept us updated on the wait time for our food. The biscuits are delicious and I recommend getting the sampler to try all the jams! I got the build your own omelette with extra cheese, onion, and tomato because I'm a vegetarian. Unfortunately I did find a few chunks of meat as I got towards the end of my omelette. I came for the Monday Night Bluegrass Jam, but I stayed for the Cheeseburger Fries, which are delightfully crunchy, battered French fries, topped with cheesy ground beef and scallions. Unexpectedly fabulous, considering I thought I was ordering a Cheeseburger and Fries special. Our waitress Kaylee outdid herself with southern hospitality and the occasional upsell. This is a cute diner-style place in Mt Juliet. It's old fashioned on the inside and a bit dark. We were greeted upon walking and sat immediately. Our server greeted us promptly and was very attentive during our dining experience. I got the Rise & Swine omelette with a biscuit and my husband got the loaded potato hash. Both were good, the potato hash had way too many tortilla strips on it, they had to be removed to find the rest of the food. It could benefit from a touch more scrambled eggs as well. The omelette was good, nothing spectacular, could have also used more cheese, but it was loaded with meat. The fresh biscuit was good and they offer fresh jam as well. I thought it was strange that there is no salt and pepper on the tables and I had to ask for that, and the hot sauce was brought to us in a small cup instead of the bottle? We have been here multiple times and enjoyed it but today was terrible! We came in ready to enjoy breakfast and that just didn't happen. We placed our order and it wasn't anything crazy then proceeded to wait 45 minutes for our food to arrive! Our child was over it by the time the food came and on top of that what came out was COLD. They have unique blends of ingredients I have never seen anywhere else and I love that. Our party of 5 were all pleased with their food and 3 had leftovers. I loved the idea of having fresh uncooked spinach added to the dish which was different from my previous visit. The restaurant is roomy with good spacing but I didn't like the booth. The booths are joined back to back with no separation; meaning we could hear the conversation of the family at the adjacent booth as if they were at our booth. Even with its casual vibe and setting in an unassuming strip mall, The Paper Mill deserves 4 stars for finally bringing some local creativity to Mt. Juliet. Beset with a plethora of chains, MtJ's sparse local offerings usually lean toward pub grub. But Paper Mill's tasty dishes make it a local favorite for all diners. Burgers, chicken tenders and sandwiches as well as salads, traditional breakfast fare and lots of sides usually means there is something for everyone. (Their kids portions are very generous.) After experimenting with various menu options and open/close times, they seem to have settled on one all-day brunch menu and a 2pm close. Which is a bummer - we'd love to have them as a dinner place too. The staff is chill, friendly and attentive. One unfortunate change with the new menu was removing the Beyond/Impossible burger option, and not adding any kind of veggie patty either, leaving vegans and vegetarians without a burger choice. With many egg and dairy options, this place is great for vegetarians. Not so much for vegans - although on one visit they kindly subbed avocado in for cheese and didn't up-charge. read more

It seemed the day may have just been off for this establishment. I wanted to truly enjoy the entire experience but just couldn't. The basket of biscuits were probably the star of the show. There were 3 kinds of jam (peach, strawberry, and blueberry), a cinnamon butter, and a tiny dollop of regular butter. I felt the peach jam was the best tasting. I had a very simple order and when it came out all of my food was cold. I did send it back to the kitchen and when they brought out new food it was ok. The hash brown casserole was very good however the eggs could've been better. Our server told us the kitchen was having an off day. We had to ask twice for silverware and my dining companion did not get her biscuit until we were ready to leave. She ordered a veggie omelet and the green stem was left on the tomatoes inside her omelet. I'm not sure if I'd go back. I'm so disappointed because there really isn't a good breakfast place near us.
