We were there on a Thursday night. It wasn't crowded and we were with friends from out of state. She had been there before and suggested it. The service was literally the worst service I've ever had in my entire life. The unfortunate thing is we saw the manager walking around the whole evening and never once checked in with anyone. If he checked in with us earlier, the evening could've been saved. This was the very important evening since I haven't seen my friend in a few years and unfortunately, we spent most of the evening, looking for a waitress and trying to get food or drinks. Then we complained after we paid the bill to the manager and he obviously talk to the waitress who then came out and asked us what the problem was. When we said her service was the problem she wanted to know exactly what our issues were. She would not leave our table, even though we kept asking her to leave and telling her best of luck. It is really hard for me to write this review because I really wanted to like it. I heard such wonderful things and was hoping it would live up to the hype considering the sheer number of review that this place has. First I have to say that the waiting staff and members are all attentive and great. They helped me get seated right away and was polite through the whole evening. However, that is the best thing I could say of my entire experience. I went for dinner and got the Chef's Menu, which includes 8-9 savory dishes (they say), and then 1 or 2 desserts on the side. To be honest, I don't remember the names of all of them, but I can tell you that we only got 7, but did not want to argue with the waiter as they repeated told us that we have received our savory dishes for the night, repeatedly. Aside from that, we received 3 vegetables (strawberries, asparagus, fried spring onions), 1 fish (squid), and 3 meat dishes (potted rilletes, porchetta, and some sausage that I don't remember the name of). Out of all those dishes, I can only confidently say that I would order the squid again, and do so happily. They were perfectly cooked and had a complex, yet light sauce that brought out the flavor of the squid. The rest of the food was either too salty (fried spring onions, asparagus), very bland (white looking sausage), or a poor blend of flavors (porchetta and also white looking sausage...) I will not even going into the details of the other dishes, as they were poorly executed and should not have money wasted on. For example, the fried spring onions were supposed to be "tempura" like, and yet it was oily and heavy as you would think of onion rings you get from the fair. It was very heavy and honestly I think a poor choice to give at the end of the meal. What was even more demoralizing was the desserts. We received a mint chocolate chip ice cream. Though it had been made with real mint leaves and dark chocolate, It did not taste great together. A few bites sure, but we left the rest to melt. The second dessert we received was the chocolate cake with a smear of peanut butter... oh my goodness I do not even know what I was eating because it was so salty and the texture just did not work. It was even saltier than some of our main dishes. I would've preferred if they just trashed the dessert and given me an ice cream cone from McDonalds. Though not something I considered for my rating of the restaurant, the decor and interior design of the place is interesting. I personally would not have boxed people into (they literally sit in a booth that the sides close on, nor would i have made long tables that make it difficult to work your way around and have to fight with your random neighbor you sit with. Though I would say it was intriguing nonetheless. This is a restaurant that I would say looks great on paper, and even when reading the menu, but does not work out well in real life. They tried to made the dishes too innovative and in turn ruined the harmony that these dishes could have had. The pace of the food was also obscure. We received 5 dishes within the span of 10 minutes, and the last 2 had a 15 minute delay from when we finished the first 5. That is definitely a miscommunication or misstep somewhere. For the price, I would highly recommend you walk 2 blocks south, and plead with the good people at Girl & The Goat for a standby spot. The food there is what good innovation and execution looks like. I ordered the buttermilk chicken and was not even a little bit sorry for getting chicken at a nice restaurant !! It was delicious. This was the most disappointing brunch I've ever had. I don't even know where to begin. I ordered the bread pudding, which was supposed to have sausage, gravy, and mushrooms. What I got was a burned piece of bread, with about 1/20th of an onion, 1 half of a small mushroom, and two tiny slices of sausage, about the same thickness as you'd find on pizza. Food cost should be about 30% of the menu price. On this item, they couldn't have had more than 50 cents invested in the $15 item. There was a half dead fly on the (half) mushroom. It struggled to get off the plate when I nudged it with my fork. I'm not one to send something back just because of a fly (and I didn't) -- but this just added insult to injury. My girlfriend ordered coffee. She asked for cream. No cream 10 minutes later. Asked again, 5 minutes later, no cream. Asked a third time, and finally got some. The place was also ridiculously hot. Like 85 degrees. When we walked outside after brunch, it was almost the same temperature in the shade (which was 88 degrees). We sat at the bar, near the kitchen, and I saw some other staff behavior that wasn't ideal. Most guys had lots of facial hair -- and many scratched their beards, without washing their hands after -- and then served food. One waiter touched a customer's cinnamon roll with his bare hands, another guy was texting, and also didn't wash his hands after. My husband and I went to The Publican this past weekend during the Memorial Day Weekend. It was an impromptu decision, and we only had to wait 20 minutes for a table during the peak hours of brunch. The Publican has an unique seating concept. There are closed off booths along the perimeter and cafeteria-style seating in the middle. The seating in the middle is very close, and conversations among different groups can easily be heard. I'm a vegetarian, and I was disappointed in the lack of vegetarian options at the Publican. I ended up getting the BLT sans bacon, which was very underwhelming. They ran out of the croissant, so substituted with a biscuit. The biscuit was undercooked. The portion size was very small. My husband had the pork belly hash. He found it okay, and not as tasty as he anticipated. Besides the food, the service was impeccable. Our waiter was great and extremely friendly. Overall, I'd def recommend this place to non-vegetarians. read more

My recent brunch at Publican was... life changing. Brunch was a whim after a workout class with my friend - we drove on over to Publican (made a 12:30 reservation on the drive over) and ended up valet parking after a 5-10 min hunt for west loop parking ($12 if I remember correctly). We were seated immediately at the end of a mostly empty communal table, and started in on the menu. Full disclosure, a close friend of my friend works here, and treated us to mini-mimosas and an olive oil cake to get started, and a good start it was indeed. The mimosas were translucent orange, which is the only way I think is right to serve a mimosa. We also ordered the spoon bread (temporary menu item) and the smoked Arctic char scramble, and I ordered a Bloody Mary. All was brought within a reasonable amount of time and our server was lovely. The food was like heaven to my mouth. First of all, the olive oil cake (or loaf? I can't remember what it was called) was like a mild lemon bundt - not too sugary at all - with a lemon curd and like candied ginger or something on the plate. OMG I continued to die over this the entire time we were there and until the plate was cleaned. (I've decided each of these food items deserves its own paragraph, so bear with me) My friend ordered the spoon bread because the server recommended it over the French toast, which is a menu staple. It came in this small cast iron skillet, and had a shredded brussel sprout slaw over it and it was divine. I admittedly didn't read the description on the menu, but whatever it said, it was amazing. Much more savory than I expected, just killer all the way around. I had the Arctic char scramble which, I don't have much to say about due to its pretty simple composition, but I really enjoyed it. Delicious smoked Arctic char (tasted a lot like smoked salmon/smoked anything) with eggs and shallots and dill, served with toast. Yummy and filling for sure. I also had the Bloody Mary (vodka version - they have a tequila version which I MUST try). It was the best bloody I've had in a long time if not ever. It had the perfect balance of spicyness, salty-vinegary-ness, and whatever else goes into a perfect Bloody Mary. Gah drooling thinking about it. So good, and had plenty of veg inside (I love to eat it). Basically my soul was just as happy as can be enjoying that meal. We paid ~$30 a person before tip (not including the freebies) which I felt was surprisingly reasonable and definitely worth it. I was enticed into brunch here. Prior to going I logged on to the website and reviewed the menu. My first thought was I don't like the offerings. Then I remembered this is Publican. If anyone can pull off such a bold menu, then this is the place. First off, they do everything from scratch. Yes, I do mean everything, the bread, preserves, butter, bacon, and the sausages. The last time I was in a restaurant that does this; I was in Indiana Amish country(Nappanee, Middlebury, Goshen, Shipswana). But just like everything else location, location, location. I live in Chicago and a trip out to the Amish is about 2.5 to 3 hours of driving. Also, don't expect a mimosa with your brunch in Amish country, which is a big minus with foodies like me. We arrived and were welcomed by the friendly host, then quickly seated at our reserved booth. Tess our server was very nice and menu knowlegable. We started with delicious mimosas, a very good bloody mary, and a excellent Spanish cidra. Then, we ordered some very fresh tasting oysters. Which we followed up with Char scramble which was simply outstanding; the waffle with preserves and in house butter were addictive; some very good bacon and perfect breakfast sausage. The hashbrowns were some of the best I have ever had. The carrot cake with apricot preserves and cream cheese was very good. The carrot cake was good but it was the toppings that made it memorable. Last but definitely not the least, the excellent bread produced here is some of the best in the city. Top their excellent baguette with in house made nutella and you have a simple, yet delicious sweet treat. When you pay attention to the details it doesn't just make a difference. Rather, it makes all of the difference, and this meals proves that. Everything was simple, straight forward and delicious. If you have not been here for brunch, then yes you are definitely missing out. Chef Paul Kahan and his group run some of the best high quality restaurants in Chicago (Avec, Big Star, Blackbird, Dove's Lunchenette, Nico Osteria, Publican Quality Meats, Publican Bakery, and The Violet Hour). What a disappointment. Celebrating someone's 50th birthday and thought this would be a fun place to go for the weekend. They placed us by the front door which was freezing and after our party of four was basically finished eating one of us finally got their entree. The food was ok. Nothing great. The Porschetta was very disappointing . The pork belly was mediocre The waiter was rushing to get us out even though many tables were empty. Literally if the waiter would have spent five more minutes with us could have upsold us on everything. We were able to get reservations a day before and we waited about 5 minutes before being seated. I had originally requested a booth (i was a party of 2), but they said the booths are more for bigger parties. She was able to give me a private table though which I appreciated. My experience at the Publican was slightly confusing. The food was very good and had the smaller portions you'd expect from a place with exquisite, higher-end food. The bathrooms (which were very cool, high-ceiling individual stalls) also felt super fancy, but the main atmosphere felt communal and rustic and did not match the prices of the food. It kind of felt like the restaurant was having an identity crisis. I enjoyed the food but would probably not go back. Family went here for brunch- it had a wide variety of options and plate sizes. Very unique combinations as well with more classic options you can put together as side dishes. Although I don't have a picture I tried the Bloody Mary which had a very spicy/horseradish bite with a good Pilsner as a chaser (6/10 rating for that). Otherwise we had the French toast which was super tasty if you like sweets for breakfast! I had the pecorino quiche with breakfast sausage, the omelette with salt and vinegar chips and crab on top (different but delicious), and the smoked salmon with hard boiled egg and brown butter and capers cream cheese. Surprisingly the food was mediocre. The music is great quite a mix of different genres. We never got the waitress name nor did she check up on us. We asked for the steak to be done medium instead of medium rare and it was rare. Not even medium rare. At the end the waitress didn't even apologize or say anything about the steak after we even said anything beside we can cook it some more. (Not that it makes a big difference but it's kinda gross to put something we have already started eating back on a grill) I only gave this place a 4 star because of how well the waitress, waiters, expo and host worked well together. This pains me to write as this place has so much good going for it. The ambiance is great! But we'll start at the beginning, made my brunch reservation and showed up and immediately got the feeling we were annoying to the host. Not sure why but they just seemed so over us being there. Then it took about 10 min to get our table which isn't a big deal. We get seated and our server comes over and took drink orders. We got drinks, placed our food order and that's where things got strange. Each of our 4 dishes came out at drastically different times. The first meal was done before the last even showed up. It was probably 20-25 min between the first meal and last. The last meal had clearly been sitting for a while. The eggs were completely set and luke warm. The rest of the food was tasty. Our server never came by while we were eating so we just dealt with it. Then when she did come back so we ordered more drinks to try to salvage the meal and they had no idea what beers were on the menu (at a German beer hall inspired place). I really wanted to love The Publican. I wanted to be blown away by the bacon and not feel awkward sitting in their communal, long Viking style tables. We came for brunch one Sunday morning. I tried the Apple cider doughnut muffin (amazing), the chicken and waffles (average), and the bacon. I mean, come one guys, we are REALLY stretching the definition of bacon. This takes thick cut to he next level, and it was not for me. Their "bacon" is basically a slab of pork - neither crispy nor chewy. At $7 a serving, I would skip it. We sat next to a family at our shared table, and had children starring at us and talking about us throughout our meal. I like the concept, but I do not like it in practice. Beef Tongue (5/5): this is the dish that was the highlight of the meal. the beef tongue was so thick yet so tender and the flavor meshed very well with the toast underneath Pork Ear Salad (3/5): while the crispy pork ears were good, the salad was very underwhelming Country ribs (4/5): the ribs had a nice flavor to it, but the meat was somewhat hard to chew. I really, really, really want to rate this place much better than three stars but our visit on Saturday was pretty upsetting. I decided to organize a quick group brunch before I went traveling for the holidays and heard nothing but great things about The Publican. I made a reservation almost a week in advanced and was extremely excited to try out the joint. When we arrived about 5 minutes before our reservation, we were told that we needed to wait a few minutes before our table was going to be ready which was fine. The wait turned into a 30 minute wait in a small corridor at its entrance where guest were walking in out of the restroom. I tried not to let that ruin the mood as we finally got seated at a very unique long communal table which I thought was very cool. Now, here comes the fun part - we look at the menu and two items are already sold out. Two items that most of us wanted to have and try out. There were about five other options available as the menu isn't too big so I decided to ask for the biscuits and chorizo gravy. Not so fast though, that was now sold out as well. At that point I was so frustrated and upset - I could not enjoy the rest of the brunch. Although the waiter did send over comp'd menu items it was nothing any of us wanted and it left all of us pretty upset. In fact a few even stating they wouldn't return. I would like to give these guys another chance as I really enjoyed the environment but unfortunately cannot give an accurate review for their popular menu items. If you've ever wanted to experience what it must've been like to eat in a Medieval communal dining hall -- with much better food -- you've come to the right place! The Publican is a unique communal dining experience that definitely helped top our recent trip to Chicago. The highlight of the meal was assuredly the suckling pig, which had delicious flavor and was perfectly balanced. A close second was a tie between the duck heart toast and the smoky carrots with dill sauce. We thought the chicken with fries needed a sauce and the accompanying sausage lacked flavor. The daily pickles were also a bit too sweet for our taste. Very disappointing. Four of us dined for lunch. Two were quasi satisfied, one disappointed, and I was very unhappy. Since I'm Yelping, this is all about my experience. Poor service. The restaurant was near empty, we had reservations, and our waitress (Kat) spent most of her time mulling about behind the bar. I ordered the half chicken and sausage. The slow service finally delivers a platter of ordered food over a bed of frittes (French fries). The fries had been pre cooked and were stale - very sad. The sausage was tasty but why serve the sliced sausage in a casing that is inedible? Having to peel the meat prior to consumption impacts the experience of the entire meal. The chicken had a pleasant seasoning but lacked the nuance expected with such a limited menu. Additionally, the chicken was poorly prepared leaving the "farm raised" fowl to share tenderness properties of a ten year old rooster. All in all, a couple quasi satisfied customers in the party but mine was worse than a bad KFC. read more

I had a feeling this place would be a wonderful adventure. we moved to Chicago about a year ago. My daughter and her boyfriend were coming to Chicago for a visit. He is a chef and he told us he really wanted to go to a Paul Karan restaurant while in Chicago, so I made a reservation for the Publican because it sounded unique and casual. Our server was extremely helpful with suggestions. Great curated selections of beer and wine. We first ordered from their snack menu as they had not started dinner yet. We ordered the cheese plate, all three hams and the bread with all three spreads to start. Killer eggplant spread; smokey and creamy. We then ordered three vegetable dishes and three entrees. A fish, duck breast and the roasted chicken. My youngest son said it was the best chicken he has ever eaten. The French fries were a bit salty, but still good. The duck breast was perfect. Another cool thing that I have never seen is that you can buy the kitchen a six pack; its on the menu. We told them we wanted to add the six pack and they went over and rang a bell and cheers came from the kitchen. There is another Kahan restaurant across the street, Beatrix, so I guess we will have to come back to this cool neighborhood. read more

Very hip and popular spot on a restaurant-rich street. All dishes were on the salty side but perfect with a beer or a cocktail. For vegetables, we really enjoyed the beets with burrata and the bbq carrots, both are probably regular menu items. Meat-wise, the pork belly with grit melted in our mouths and the duck breast was cooked perfectly tender to a medium. For dessert, the honey waffle was light and flavorful but not too sweet. The pineapple cake was a bit too heavy and sweet, and that's the only item we will not order again. Came here on a Tuesday night and it was a great experience. The food was great and the service was also above and beyond (ask for Billy). Between two people we ordered the carrots, sweet potatoes, pork rinds and half chicken. I am very happy at the recommendation of our server to go with the half portion because we both felt extremely full afterwards. The stand out is obviously the chicken. I never order chicken when I go out to dinner because i cook chicken so frequently at home, but you can't come here and not get it. The surprise winner of the night was actually the sweet potatoes. I have a new obsession with this dish. There was a great combination of textures and flavors. I definitely recommend this. We also finished the night with a scoop of ice cream, not that we needed it. I always wanted to try The Publican since it is well known for their meats and I finally got to try it. Interior is modern, decorated with many round light fixtures and heavy wooden tables and chairs. We were the first ones to get there for their Saturday brunch so there was no wait. We ordered the following: - Mushroom scramble: good if you're not feeling the meat first thing in the morning, nice and light. The portion is a bit small. - Tasso ham toast: thinly sliced ham over toast topped with a sunnyside egg. The giardiniera is on the sweeter side, I wish it was spicier. - Publican bacon: delicious - not your usual bacon, they are thick (I mean really thick) and taste more like ham. - Crispy potato: mighty super delicious! Smashed potato, perfectly crispy and seasoned. - Buttermilk biscuit: decent, wish it was more buttery. - Sticky bun - The server recommended that this is a must to try side but it is a very familiar taste. Still good though. - Coffee & cream French cruller: kind of dry and not sweet enough, I was a bit disappointed. Overall- cute brunch spot with some friends, nice open floor plan and seating for large groups (with a reservation... like all good things in Chicago). A girlfriend and I made a reservation about a week out for Saturday brunch and showed up for our 10AM booking about 45 mins early because we were hangry. We were told that our table wasnt ready yet which seemed fair, but that there was a spot for two at their bar which we went with. I am happy we did- don't wait for a table, this place is so casual that the bar is a great alternative for a short wait time. Our seat was right in front of the line and we had a great time watching the kitchen crank out breakfast. Service- great, friendly folks working here! Food- a little pricey for what you get, but felt like they do simple food and do it well. We tried the biscuit and gravy, hashbrowns and french toast. Got to check this place out last Sunday and I was extremely pleased. It took about 45 mins to secure a seat BUT they have a market right beside the actual restaurant that has coffee & tons of crap you don't need but buy anyway because greed. The mood of the place was giving me...hipster lunch room? I guess. There are these superrrrr long tables and so you're essentially eating with other people but it was actually pretty cool. I'm a people watcher so this was perfect for me. I ordered the chorizo gravy and biscuits(probably not the name) butttttt it was actually pretty good. I ordered a side of bacon bc I saw it on yelp and BOY... that bacon was damn delicious.
