We went to the Rose for dinner based on a recommendation from a co-worker. We sat out on the patio and didn't really go inside the actual restaurant at all because it was such a nice night. We started with fried avocado for an appetizer which was absolutely delicious. We both ordered the noodle bowl on the waitress' suggestion. It was incredible. Stopped in Friday night to pick up a dessert when we were walking by on the way to our hotel. The dessert was so delicious we decided to eat there the following evening...we were not disappointed! What a treat to discover The Rose in Edwards, my local friend's favorite restaurant. I loved the ambient lighting, candles, decor and friendly waitstaff. We ordered avocado fries to start that were light, salty and delicious, and came with a great dipping sauce. The ahi tostadas and The Rose salad were amazing. I haven't had such delicious food at a restaurant in quite some time. If you are particular, like me, and find yourself disappointed by most restaurant food, go for The Rose! I'm hesitant to say too many good things about this place as it's smallish and I could see it becoming a very tough place to get a seat if too many people figure it out. But they deserve the accolades so I'll risk the wait. We had a signature cocktail, a glass of French wine, a nice sized appetizer special with fresh mozzarella and basil along with some puréed squash and caramelized onions. All were well done and obviously fresh. For the entrées, I had a sizable roasted red pepper stuffed with beef and some Swiss cheese and candied walnuts topped with two sauces on each half... One creamy walnut sauce with anise (savoury and rich) and a slightly spicy tomatillo sauce that balanced out the dish. It was like getting two different meals in one. My partner got the crispy pork tacos... Four to an order which were also fresh and balanced well. Dessert was awesome... Raspberry pistachio cake using almond flour. Rich but not heavy and had fresh berries in the filling. Not sure I can do it justice with a description ... All I can say is I wanted to take some more home. Service was very attentive. Actually has a small bistro/coffee house feel with small tables and interesting rustic décor. Their menu and ingredients reflect an understanding for those with dietary restrictions and preferences such as gluten free pasta and many vegan choices. It seems that many of the dishes feature a savoury and sweet balance. And there were several really interesting options I wasn't able to try this time. I will be back next year! read more

I liked the interior and the staff was really friendly but when it came to the food, I was a little disappointed. The portion sizes were too tiny and it just didn't fill me up. This place is a gem! If you love vintage decor and creative drinks with delicious food then this place will impress you! At first we were unsure to be honest but a soon as we had our first drinks and avocado fries we fell inlove! A must try is the cheesecake, it's perfect, fluffy and yummy. An add on to our dinning experience was the Australian bartender, he's funny and honest, makes pretty awesome drinks too. We often go here before our movie nights. Very simple decor and great food. I'm not a foodie but I loved it and I'm sure most of my foodie friends would also. I have been dragged along to some pretentious celebrity chef restaurants and this food was much better. I would have given it a five except I was conned into a $9 glass of pinot grigio without being told about the $5 house wine which was just as good. read more

Mediocre at best. After my date read such amazing reviews on Eater.com we were expecting the best of everything. Atmosphere was nice and had a fun vibe, even though restaurant had maybe only 3 other tables full. Quite empty. However, food and service were seriously lacking. After a long wait I finally left table to ask if I can place a drink order, we had sat there for 15 minutes without water and drinks. All staff were lingering around register. Appetizers came out way before drinks, even though we ordered at same time. Everything was lacking in flavor. Not terrible food, just not special in anyway. When meal came out the waitress was holding so many plates she gestured for us to clear and stack our own plates. It was quite ridiculous. Once we started to eat our meal, server came by no less than 8 times to see if all was okay which seemed excessive. I realize you can't please everyone all the time. Some people want a lot of attention, others want to be left alone. I am sure there is happy medium. More importantly in my opinion is good service from the start. Not leaving guests waiting to order drinks and then figuring out how to improve food menu. read more

Each time I revisit I am reminded of how much Vail has changed- not necessarily for the better until I discovered-The Rose. The Rose by any other name would smell as sweet. I absolutely adore this place. They ignited a new personal passion for conception and cuisine. The spaces are cozy and thoughtful, a quiet and comfortable beauty. I don't feel out-staged by the ambiance and you will see everyone from locals to tourists dining there. The artwork in The Rose is hand crafted, interesting and unique to the owners themselves. There is thought and care in every corner of the restaurant. The pork belly is the best dish I have ever tasted in my life. The chef has perfected the belly of the pork, down to the last bite. The menu options are varied with colors, textures, and flavors from around the world. The cocktails are devilishly tasty and adventurous. Oh and dessert, duh... you must try it to believe it, homemade macaroons and the cheesecake melts in your mouth. Truth is- yumm... I cant get any more primal than that...take me back always. The staff is friendly, knowledgeable, and hospitable. You will not have a bad experience. Outside of powder days- my favorite part of coming back home is The Rose. It must be a culinary law that the best quality can be found at the most humble of venues. This restaurant is on par with some of the best in Colorado. Decor was truly original and apropos for a mountain town. Simple yet fresh offerings, thoughtfully prepared with superior service. My partner and I enjoyed the Buffalo cauliflower, which was the perfect start to encourage our appetite after a nice afternoon of biking along Gore Creek. Crafted beverage offerings were on par with the menu and I was grateful to find a Tempranillo on the wine menu, thank you! We then selected two different types of tacos.....crispy pork for my partner, ahi for myself. Excellent, with a wonderful combination of textures, flavors and sauces. The pastry chef prepared the best cheese cake we have ever tasted. The other desserts were equally good (we bought extra to go).
