    I saw them at the Pearl Country Club Night market last month. They were so nice but the pork wasn't my favorite. They were very busy though so it may be a me thing.

    Move over Lechon King, there is a new lechon champion on the Island. Outstanding Filipino lechon. Fatty pork belly stuffed full of lemongrass and scallions, perfectly salted then spit roasted over open flame, enclosed in a gas burning "oven" where dripping fat is allowed to smoke. The resulting lechon has incredibly crispy skin, very well rendered fat, is amazingly juicy and flavorful AF! The lechon is phenomenal alone but add the accompanying sauce to kick up the flavors to the next level adding an almost fruity sweetness and making the flavor of the lemongrass even more pronounced. Samples of their pinky sized lumpia were also great not needing its accompanying vinegar sauce. Lechon sold as plates or by the pound. $23/lb at a recent What the Truck event. Preorders accepted for an entire belly (17-20 lbs) for $120. Poping up around the island. Follow on IG. Worth seeking out.

    Hit them up at Kamakana Alii SC this past Sunday at 130p and thankfully they still had Lechon. Loved it and the people are so nice - even gave as a sample as we waited for our order. The Aunty who took our order apologized for reduced availability Windward side (where we live) but we get it - it's a marvel they keep these Lechon roll crunchy throughout their service window (I think it was 10-2 at Kamakana on Sundays).

    I came across Savellano's Lechon for the first time at the Taste of Aloha Night Market at Restaurant Row and after just one bite I knew I was hooked. The lechon was juicy and packed with flavor, and the skin was cooked to absolute perfection. Crispy and delicious! I also love that they include sauces with their plates. If you think the other lechon wagon is good, wait until you try this one. Savellano's is on a whole different level.

    Best lechon ever. I always go to wai Kai on Thursday and buy their plates. You gotta come earlier coz they ran out fast.

The restaurant is clean and well put together with darker accents. Our food came out relatively quick - having the chef's special and ube churros. The kalbi sauce soaking into the rice was the perfect balance of flavors. Same for the calamansi fried chicken. Lechon, I must say was also a fine example of how seriously the chefs take their selection of ingredients - as I looked closer, it had the classic 5 layers (shown in my photo). Usually, this is the prime factor in the perfect roast pork - providing juicy layers of pork meat. Overall, this has been the best (new) meal we've had in a LONG time. It was so delicious, I could only wish there was a way to share this place with a larger collection of diners because frankly, if you haven't tried this place, I honestly think you're missing out on the definition of culinary art. Each dish carefully crafted with the goal of providing the best experience to all the patrons. I seriously seriously hope you all have a chance to visit. If we're ever back on this side of the island, we won't hesitate to stop by.

We ordered several plates with a variety of items from the buffet line, and nothing seemed to be served at the proper temperature. The lechon kawali was cold, so the skin was chewy instead of crispy, and parts of the pork belly were hard. The mongo beans were concerning enough that I didn't feel comfortable finishing them because I wasn't sure what was in the dish. The longganisa/tocino also lacked flavor. I wish we had checked reviews before stopping here. Overall, the food did not taste fresh, warm, or properly prepared, and I would not recommend it. We ended up going next door to eat at Jolene's instead, in order to have somwthing freshly made.
