Loud. So very loud! It's a bar and it's vast, and if you go on a Saturday night, expect for there to be a wait to play pool. Oh, and after 10 PM, if you're not 21+, they kick you out. Definitely have never seen that before. Maybe I'm out of touch when it comes to college bars? At any rate, they have beer and wine. Probably liquor, too, although I don't recall seeing it. They have food options as well, mainly wings, burgers, and heaps of macaroni and cheese from an accompanying food truck. Tried their pulled pork macaroni and cheese and just pass. Way too cheesy with a clearly cheap cheese and the pork wasn't even properly cut. This establishment leaves forks wrapped on the table but no other cutlery, so you have to ask and honestly it wasn't worth asking for a knife for such food. I can't say I wouldn't return, but I can definitely tell you this isn't my scene. Way too full, way too boisterous, and did I mention that I can tell I'm getting old at this place? The Wilbury is about a much of a dive bar as humanly possible, and I mean that in the best way possible! They have a good selection of draft beer, various bar games, and are cooking seriously good wings out of an Airstream trailer parked behind the business. I got the Buffalo Flash Fried Smoked Wings with Alabama White Sauce. The Wilbury claims to make the best wings in Tallahassee. Based on my experience, they very well might. I could not possibly give this place a better review. First off, huge shoutout to Dayday and Deonate they were great. I've had bad experiences with bouncers in the past they were friendly and incredibly helpful. I lost my passport in this establishment, and they immediately brought out the manager who found my passport and provided me the returned documents plus a beautiful personal story about his life which i found incredibly enriching. to everyone that was working that night you guys rock and i would recommend this bar to anyone i possibly can. read more

I should be charged with criminal neglect because it's taken me so long to write a review about a place I frequent so much. My biggest issue with this place? They are always on their game and give me nothing to complain about. The bartenders move quicker than Michael Johnson over 100 meters. They make a great drink and they don't ever mess up an order. More importantly, they remember patrons who return. The food? Spectacular. Not just spectacular for the Windstream RV they cook it in; it literally just kicks ass. My recommendations: - the wings are the best in town. Brined and double flash fried. The Buff-Q flavor is my favorite with a side of their Alabama white sauce. - the pulled pork and beer cheese fries. They don't skimp on things here. These are enough to feed 3 people and are so damn good I don't mind clogging my arteries and contributing to heart disease. - the jalapeño cheese curds. They're CHEESE CURDS. Enough said. - any of the tacos. It's crazy that a dive bar has better tacos than most taco joints in town; but here we are...order them. I wanna go back to the bartenders here. Kudos to them. They're the reason I keep coming back. They are a crash-course in Customer Service 101 and should be giving PowerPoints to other businesses in this city. A college bar with a trendy look outside and a simple, bare bones set up inside. Function over style. Walking in so reminded me of the old Train Wreck on W. Tennessee. Simple tables and chairs with a bar in the back and a patio further back where the Airstream kitchen is located. We came for Trivia Thursday between Christmas and New Years and there was a pretty good crowd considering the college students were away. Obviously trivia games are a good draw. Called an order in for wings I simply asked what sauces were available and was told by JASON that I should go online and look at a menu because he didn't have time to look and tell me due to a "full bar" after I expressed that I too was a paying customer he then read the sauces off (with sass) and then asked if I wanted anything else, took my name and then hung up on me. I work RIGHT down the street. I walked in and immediately Jason walked out to take a smoke break. (Funny since he said the bar was so full) I asked another employee about my order and he said it wasn't in the system. I was upset because I allotted them the 15 mins they said it would've taken to prepare the order and walked down. He searched everywhere and said I wasn't in the system. I was upset because I had a feeling Something would go wrong with my order given the sass I got on the phone; JASON also lied and said his name was JOHN. coincidentally Jason walks in and acts clueless! He then says "oh you hung up on me I didn't get the order" my friends and I all heard the conversation so we knew different. He CHOSE not to put the order in because he felt a way about my call in. I told him that I was being robbed of my meal and he told me to "call the police" I then told him he was an asshole and wanted someone else to service me! The first employee that looked up my order told me I had to leave for using profanity. RIDICULOUS! It was NOT mg first time there so I know that wasn't a rule. It's a BAR. they refused my service. I expected better from this establishment. Better customer service and better treatment. A great local spot for local music, drinks, and even lunch! Although I've been coming to the Wilbury for a while for live music and drinks in the evening, I was recently surprised to find that they also offer a solid lunch deal for $7 for a BBQ sandwich or tacos, plus a side. I went with the BBQ Brisket Sandwich and loved it! With it only being a short walk from the Capital and other state office buildings, I'm glad I have another great option for lunch from such an expected place! Just like it's predecessor St. Michael's, the Wilbury has become a favorite local hangout for live music and drinks in it's few years of operation. The selection of alcohol, especially craft beer, makes it easy to find something to drink while you listen to the band or play one of the arcade games scatter around. But, if you're not as interested in whichever band is playing that night, you can always head outside for some peace and quiet to enjoy the night air. The food has always been really great and I love the vibe of the place. However, during my most recent visit I was left a little disappointed by the hygiene of the place. Before leaving, I asked for a box to take my leftovers home. The bar tenders were struggling to find a box, until they finally found one out near the kitchen. Freshly made and with a flavorful coating. It came with a delicious Alabama white sauce that had horseradish in it. I wish I could have taken a bottle of that home! The Wilbury did not disappoint! The dark and stormy was nothing short of excellent, the atmosphere is super chill and welcoming, and the bartenders were so friendly and helpful. Though I didn't have a full meal in this visit, the menu had several intriguing options, and the gremlin fingers appetizer is definitely worth the go! Completely serendipitous lunch experience. There I was, driving westbound on Gaines, intent on checking out that new Chinese restaurant (which I haven't yet been to) when, 'Lo. The neon "BBQ" in the window beckoned me to pull in - and so I did. Not since St. Michael's have I stepped foot in here - but I did enter through my customary door (the western entrance) and stepped up to the familiar room with an unfamiliar feel. Because this was January 5 at 1:30 PM (school out, state workers back to workie-workie) there was NO ONE here - and so naturally, I thought it wasn't yet open, but a very friendly bartender (Megan) made it clear they were - and pointed me to the menu. I checked out the rear deck before ordering and spied what appeared to be a 26' Airstream Overlander (I could be wrong) converted into a kitchen. I'll need to go back and pay better attention - but it looked pretty cool. I do know that's where the cooking is happening. Uncharacteristically, I couldn't make up my mind - so Megan did for me and I ordered "The Wilbury" - a pulled-pork sandwich with made-to-order onion rings. Very nice. Coupled with the black bean baked beans as a side, it made for an unexpectedly great lunch. This place is WAY cooler than I am (using the term "cool" tells you, dear reader, how "cool" I must be...). I say this because generally, I'm able to size up an atmosphere and peg it to something familiar - but this place is different. The menu is what I'd call "post-artisanal boutique" - which is to say that there's a major culi-hipster vibe throughout the options and descriptions - and the menu items themselves are both edgy and grounded. Think "comfort food with attitude" at the core combined with push-the-limits creations at the periphery. Put it this way: I've never seen Dave's Insanity Sauce highlighted as a menu-item ingredient but, sure enough, the Hellbury features it. I'm ordering that next time. I didn't see that until AFTER Megan suggested The Wilbury. I'll dispense with the haughty descriptors for the sandwich - and just bottom line it with this: A very good pulled pork sammich with killer onion rings and an interesting side (black beans baked beans) It would have NEVER occurred to me to come here for lunch, but it will occur to me moving forward. I'm confident this place is a successful night-time scene. The kitchen is open 'til 1AM (not sure if the menu is limited - but regardless, it's sure to please) and closing time is the expected 2AM. Tallahassee, FL: This place was such a pleasant surprise. I did not expect a random bar off of Gaines Street to provide me with one of the tastiest meals I've had recently and yet, here we are. Must order: the jalapeño cheese curds. They are absolutely superb - light and crispy on the outside - and considering they were vetted by a Wisconsin native who is snobby about cheese curds, you know they more than passed muster. For the vegetarians, the tofu sandwich is a must order. It was tangy, properly cooked, and filling. The sandwich comes with a side of your choice so I picked the cheese fries (note: this will cost you slightly more). Though having curly fries smothered with abbeer cheese sauce was yummy, I think I'd pick just the regular curly fries next time. Only things keeping me from giving out a perfect experience was the air conditioning - had I not brought my sweatshirt - I would've been exceptionally grumpy being slowly frozen to death while eating my food. Also, while the server who brought our food to the table was great, I think the people at the bar could be more personable and listen to directions better. I had asked for water with no ice and got water with a ton of ice instead. Not a huge deal but the bartender wasn't particularly sorry when I had to ask for another glass of water sans ice. Ultimately, just for the food, this place ranks high on a list of places I'd come back to. As a bar, there was ample seating, and the location was clean. I love Wilbury. The only reason I gave them 4 stars is because their wings are so expensive. $9 for 6 wings and no fries. It saddens me but they are so good. The wings aren't fried, they are smoked, and they are pretty big as well. I got hot mixed with gold sauce, try it, trust me!! I'm a local who has been gone for several years- when I returned back to Tallahassee in late 2018 my friends had found a new favorite bar -and I have quickly learned why. Don't let its appearance dissuade you - the Wilbury is small but it is mighty with awesome staff, and a great kitchen. The Wilbury has everything you could want in a bar - they have great drinks at great prices. They have amazing food- I cannot praise the jack fruit bahn mi enough - and everything I have had there has been the same level of awesome. My friends, who aren't vegetarians like me, praise their BBQ and tacos. The Wilbury also has great local and traveling music- with many national acts performing there. At this point I know I shouldn't, but I continue to be surprised by the high quality music that this tiny bar with its tiny stage brings to Tallahassee. If you don't know what you are doing on a night- then head over to The Wilbury and give it a try. It is a place you can catch a national show and be mere inches from the artist. This is probably my favorite place in Tally. The space is large and during the day there really isn't much of a crowd other than at the bar. The old fashions are great and they had a breakfast special when we stopped in and the omelet was better than anyone would think given the look of the place. I've been here in four different contexts: lunch, evening drinks, late night drinks, and for a show. My favorite contexts are lunch and shows. The jack fruit tacos are awesome. The food was affordable, and I got a lot for my money. I went for a show last weekend. I know there are a lot of shows here, but I couldn't quite wrap my mind around how it would fit. I was afraid it would be cramped and over crowded, but it really wasn't at all. There was plenty of space, and it was easy to order food and drinks even with how busy and crowded it was. Great service too. The bar has enough seating and stuff to do to keep you entertained, whether you're there to talk with friends, play games, or eat. The outside area is spacious and well maintained. The only real problem is the lack of bathrooms, which they've tried to remedy with extra urinals. read more

Where do I start, the live band Friday had this place packed to the brim, the food was great and the alcohol selection was solid, especially to craft beer drinkers. They have a wide selection of cheap shots like water moccasins, oatmeal cookie etc . But the gremlin fingers stole the show for me, I'm not mozzarella stick aficionado but these were the best mozzarella sticks I've ever had, stuffed with cheese and cooked to perfection I almost had to get another order. The sandwiches are great too, I had the hellbury and brisket philly. The hellbury is a deliciously simple sandwich and the brisket philly is loaded with flavor the Alabama white sauce is incredible. Located just on the outskirts of college town this place had always looked interesting but I had never stopped in. Found out they had wings and decided to give this place a try and I can not wait to go back. They have the best wings in town. The Fried pickle spears were a great start but I wasn't even able to drink my Paloma until after the meal because I could not stop eating the wings. They were so good!!! You know a wing is great when you barely have to dip it in Ranch/Blue Cheese. The sauces/rubs were fantastic and there was so much meat on the wings - both the flats and drumsticks.
