You'd never think to find an escape from NYC within the heart of NYC. We went to Thyme bar to celebrate my birthday this past January and what an experience it was. I HIGHLY recommend you visit this speakeasy if you're visiting NYC, especially if you're looking for a cool experience that will challenge your existing palate. Upon entry, the bar is dimly lit and exudes the vibes I anticipated for a speakeasy. It is lively, but quiet enough to hold a conversation while you take in the spectacle that is your drink. We didn't try the food here, but if we visit again, we will be sure to try it. The staff was really energetic and enthusiastic. It is easy to see that they love working at Thyme. I really enjoy my drink, the Light Opium. Initially, there was some candle wax in my drink, but the staff immediately took care of it and didn't charge us for the drink. I came here yesterday for some drinks with my cousin. The vibe was pretty cool and calm. It was our first time going to a speakeasy. The menu was very interesting. I ordered an HWYL and wanted to take out the tamarin but they didn't allow any modifications to the drink. My cousin wanted to order the same drink but she wanted Casamigos instead of Patron but she was told she couldn't. She just ended up getting a tequila sunrise instead. The creativity of the cocktails definitely caught both me and my boyfriends attention! He's a bartender in midtown and absolutely fell in love with the whole experience as well as the professionalism of the bartenders or shall I call them artists! Three stars for the cocktails and the way they are presented! The cocktails are delicious and beautifully presented BUT The place has a weird slow dull vibe and that too on a Saturday night or maybe coz they actually made us sit in a makeshift area for spill over from their cellar ! The server (one wearing a metallic bow tie) was rude and least interested in giving us information about the cocktails we wanted to order. The menu is good but they give no details on the ingredients used ! I would say the staff was ok barring the metallic bow tie guy who was BAD. I have never been to a place more dull than this bar ! I wish they had simply either asked us to wait or told us that they are seating us in a dead area. My friend and I came here the other night as I had heard good things about this place and wanted to check it out. It's a bit hidden, but is right next to Chanson and we were able to get seated right away. They have a beautiful bar area downstairs and an upstairs area with additional seating. We decided to sit at the bar and the space is really nice--comfortable seats at the bar and nice mood lighting (definitely good for a date night or a celebratory drink). The drink menu was really unique and paired items together that you wouldn't necessarily think of. The bartender was so friendly and helpful, and my friend and I both enjoyed our drinks, but even more so than enjoying them, the presentation was truly amazing. I ordered the peach silk fizz and my friend ordered the eucalyptus water flower. I also ordered the coffee zuucotto for dessert which was so good and I could have eaten about two more of them. Drinks- Thyme is a Circle - A drink of gin, milk punch, pineau des charente, thyme, grapefruit. It's amazing so light and airy, taste like a finely made punch with just enough gin, so smooth! Perfect drink for Dee, it matches her personality for fun and bubbly. A Bird in the Hand - Mezcal, Bael Fruit, Lemongrass, Tamarind, Birds Beak Chilis, Orange Shaved Ice - This was a nice use of mezcal with a nice hint of citrus, also perfectly fits me, seasoned fine solider. Food- We had Pork Belly Sliders which were tender and delicious similar to a Japanese pork bun but a slider. Lobster and caviar toast points- This was luxurious and delicious at the same time the lobster perfectly meshed with the caviar and saline, the perfect Hors d'oeuvre, I could eat a plate of these and they should totally serve it! :) We had the dessert cigar which was a beautifully presented cigar on a plate of wooden bark, the plate is covered by a glass cover and smoke is released as the cover is removed, so cool! read more

Martin was impeccable. The bar works hard on their menu, and has a number of standouts spanning an array of flavor profiles and presentations. However, my personal favorite thing is how well the bartenders can riff on a custom off-menu flavor profile and hand you a one-of-a-kind home run. The top cocktail bars in the city tend to make a gimmick out of this sort of thing. In comparison, this place is no-frills and all-frills at the same time. Style AND substance. This bar is nice and perfect for a quiet night out. Definitely wait for an opening at the downstairs area. We came on a Saturday 6pm and were told that the wait would be 45 min to an hour. We hung around Eataly to wait. After about an hour we returned and were told there'd be another half hour wait. Then a few minutes later, the hostess asked us if we wanted to sit outside. We obliged, but after we sat down we sort of regretted it. Not only did it stink like a public restroom (we think it was the plant next to our table), but the party next to us were having a drunk argument that got incredibly dramatic. Luckily a few minutes after the waiter took our order, he returned and told us two seats just opened up downstairs. The downstairs portion is beautiful. It's small and cozy and has a nice atmosphere. Great chill music, too! Now onto the drinks: I've been to pretty much all the speakeasies in Manhattan. Thyme Bar stands out because of its drink presentations and unique flavor combinations. However, the pricing is pretty outrageous. We're fine spending $20+ on a cocktail, but it has to be really impressive, and sadly Thyme Bar didn't blow us away. For reference, my favorite cocktail bars in NYC are Angel's Share, PDT, Dead Rabbit & Apotheke. I ordered Primrose & Rye ~ $26 chocolate mint infused rye whiskey, cherry wine, smoked corn silk maple syrup, lemon. It honestly didn't taste like anything special and unique. It was tasty, but not worth $26. My fiancé ordered Eucalyptus Watercolor, which was unique and delicious. I would give Thyme Bar another try, but I wouldn't say it's made it to my favorites or must-try lists. read more

I found out after that it is popular before and after dinner ** Menu options subject to change as of the writing of this review A lot has certainly transpired since my initial review and visit to Thyme Bar in the Flatiron District of NYC. In March, initially it was mandated that restaurants only allowed 50% capacity in the dining areas. That lasted for barely two weeks. Then the big decision was made to restrict indoor dining altogether which caused some places to close for several months. Thyme Bar along with Patisserie Chanson stayed open to help frontline workers get fed and also was probably one of the first establishments to offer to-go alcoholic beverages! It was the first time in NYC that this was allowed and they adopted right away. It was mandated that only outdoor dining was allowed and I was recently informed by a good friend that there was a whole outdoor experience that they offered since indoor dining is still restricted in NYC...the Thyme Experience which is to showcase new drinks and cocktails from the new bartender, Jeremy. I had no idea what to expect but it was highly recommended as the menu was revamped with some new and exciting concepts. When I arrived with a friend it was surprisingly busy. The bar is a speakeasy that is underground but attached to the adjacent business Chanson. There were several tables set up on the sidewalk ( in front of the business as well as closer to the street ). Luckily we had set up a reservation beforehand (highly recommended) and did not have to wait long for a table. Our main server was a very pretty woman named Alex who was polite and thorough. She explained how the experience worked per person ( you get one pre set appetizer, one starter beverage, an elevated cocktail and one food item, and a dessert. The two initial drinks we ordered ( one each ) were unlike anything I have come across at a bar before. They were from the Le Jardín section ( 4 total drinks each with a very distinct presentation). COSMIC SPRING - Grey Goose La Vanille, Mastic Roots and Grapefruit Soda HEALTH BLOOM - Grey Goose La Poire, Blueberry Kombucha, Beet Syrup, Lime, Mint. Then it was time to choose the elevated cocktails from the Floriography section. The presentation standards were raised with these drinks. Out three main options we chose CHATPATA FIZZ - El silencio mezcal, Chatpata Soda, Pandan, Lime. This drink has a presentation that is probably the most unique I have seen in NYC that you need to see for yourself. There is also a piece of fish skin that seems to balance the alcohol. PRIMROSE & RYE - Rye, Longan Syrup, Corn Silk Burned, Black Tea Soda. For food you choose two dishes from the updated take out menu. BERKSHIRE PORK BELLY SLIDERS - Habonero Honey, Red and Green Shallots. You get two sliders. The pork belly was so tender. CURRYWURST - German Sausage, French Fries complementes by a homemade sauce. For dessert I had always wanted to try their soft serve. VANILLA HONEYCOMB - the honeycomb was dehydrated and made for a good combo with the soft serve. BLACK SESAME KOUIGN AMANN - this is probably one if their most well known desserts. If was as good as o expected it to be. **There may be a separate deal for BOGO. Check for availability. This is by no means meant to be a full meal. You may order more food but it will be at the menu price. The one major obstacle to outdoor dining is weather. During the drink and eating experience, the one thing that happened that we all dreaded...it started to rain! Luckily we were able to move closer to the establishment and under an umbrella. I remember how cozy and elegant the actual Thyme bar is at that moment (refer to my original reviews). ** They have a weather policy as of this writing. Please check for updates. The new bartender Jeremy is polite yet very focused on his craft. Our server Alex always checked on us and I felt the items were all spaced out very nicely. Overall an excellent experience. This is the type of place where you bring a friend to chill / catch up or bring a date to show them a great time. The ambience has a nice classy feel to it and the drinks not only are unique, but very very tasty and balanced. We were enjoying a pleasant night with friends in this establishment ....until a certain point. That is until a GM came up to our table and falsely and rudely accused my husband of throwing up by the bathroom area . My husband replied, of course that he did no such thing and. I defended him right away , I knew for a fact that the GM got the wrong person because the last time my husband thew up from having too much alcohol was when he was about 19 (and he 40 now). The manager said that he will check the cameras, continuously pressing us and accusing my husband to which we replied that he really should have done so before coming up and making fools out of his guests. We also asked what his name was to which we received and arrogant reply "Michael Jackson " . Wow! No words. We were able to get the name of the manager-Samy Berdai. $500 bill and few minutes later we leave the bar and the manager texts apologizing. He claimed that he took his staf's word without checking first and came with accusations to us right away. A word to the manager-I assume I have this position for a reason.
