It's a place that specializes in wheaten food and noodles. Looking at the menu, I noticed a wide variety of options with complex preparation methods. For example, the dough used for regular dumplings is completely different from the dough used for shrimp dumplings (har gow). Shrimp dumplings require wheat starch (cheng mian), which must be kneaded and shaped with water around 70°C (158°F) to form properly. The entire process is incredibly labor-intensive and truly tests the chef's skill level. Ambiance & Environment: You can tell this restaurant has been open for a long time, yet it remains very clean. There is a glass-enclosed prep area where you can watch the staff making the dough and noodles from scratch, which perfectly showcases their specialty. However, I was seated right next to the back door. Since customers have to use this door to access the restrooms, people were constantly walking in and out. The draft was quite strong, causing my food to cool down very quickly. I highly recommend installing a folding screen there. I also overheard other guests asking to switch seats for the same reason, so this is definitely an area management needs to work on. The Food: Since I was dining alone, I only ordered two dishes, but overall, the food deserved high praise: Griddle Cooked Beef (Gan Guo Beef): A classic Sichuan dish.
