We had a reservation, but were unable to make it because 3 of the 5 of us were sick. I called early in the day to notify the restaurant and left a message since they were not opened. I had to hold the reservation with a credit card. A day later I received a charge on my cc for $375. I called and spoke to manager and he said he would see if he could credit us back the amount and I am still waiting for a return call a week later. The amount has still not been credited. Toro's decor has been fully renovated. They now have a lively bar and happy hour area along with a massive TV. The meal area is also nicely redone although the central decorative piece has an odd Las Vegas vibe and the lighting over many of the tables in the middle of the room is extremely bright. The food is generally pan-Latin American and quite good. We especially enjoyed the corn empanadas and the dark chocolate/mocha cake with ice cream. Our waitress, Reina, was outstanding. She was super attentive and circled back to our table multiple times to check on things. When we mentioned that one of the dishes, that we had also eaten just two weeks prior, was not as tasty this time around she wanted to know as many details as possible about the difference so she could advise the chef. Not that I would expect anyone to make the drive to Snowmass just for dinner, but this restaurant at the Viceroy turned out to be a real pleasant surprise. Other reviewers didn't have the same experience as my wife and I but we found our dinner selections outstanding. We both had cooked salmon that was done perfectly for each of us (mine a medium). The appetizer to really try is either of the ceviches! We had this once in Tahiti a decade ago and I have never seen it offered since then... until here. Beautifully done and amazing tastes. Our waitress was also amazing and proved great insights to some of dishes. Our experience was so enjoyable (we are staying at the hotel) that there was just no reason to drive back to Aspen. Oh, and the martinis were very nicely prepared by Shane. Monday the restaurant closes until thanksgiving or so waiting on the hordes of skiers.... So, I'm giving these 3 stars because I do not think the food is worth the price we paid. Toro is located at the Viceroy. Right off the bat, you experience the high-end lifestyle of the hotel with the fireplace outside the restaurant and the chic, sophisticated interior of the restaurant. We were seated at a round table near a pillar with ropes, an idea which I loved. However, the table was quite big for the 5 of us and we were left having to stretch a LOT while trying out the plates we were sharing. Our server (?Bill) was very very nice and I will give him an extra 0.5 stars for being so patient with us. We got the mule, the smokey old-fashioned and the spicy paloma for drinks. The drinks took ages to come. We got both our appetizers and ate through half of each before the drinks got to us. Now, the mule was just ok. The mule is my drink and I LOVE a nice, gingery, vodka-dominant mule. This was nothing like that. The citrus was very mild, as was the vodka..and it definitely did not have much of a kick. The smoke of the smokey old-fashioned was nice for a video but it disappeared very quickly and we were left with half a tiny glass of the drink. The drink itself was pretty whisky-dominant. But worth $27? Nope. The spicy paloma was actually pretty good and spice. The best of the 3 drinks. The appetizers we ordered were the Colorado Lamb Queso Fundido and the Truffle fries. Both were delicious but I liked the fries more. Because they were more spicy and with a nice kick. The lamb itself was good but the queso was pretty plain. I would've liked the bread to be a little softer than what it was, as toasted bread. My friends liked it though. These were pretty good portions but we still had to leave some to keep our appetites for the main course. And we were 4 adults. For the main course, we got the Bison Burger, the Cusco half chicken split among 2 people and the Skuna Bay Salmon. Now these plates were a little disappointing. The burger was a bit dry in terms of flavor of the patty and the fries, especially after the truffle fries, were very plain and bland. The kitchen was nice enough to split the half chicken into half for the 2 people who were sharing it. However, same problem again: the inside was dry. The skin was delicious but as you got to the meat, dry. The salmon was ok but I wanted more from it. First, I thought it was going to have mushrooms in plenty - turns out the mushrooms were a part of the jam so I got 3 tiny pieces that were actually quite hard. The salmon itself could've been a little softer and easier to cut. So even though it was cooked medium well, it was closer to the well than the medium. The cauliflower puree was decent. I don't like bok choy so we switched to broccolini, which may have dampened the dish a little bit. (P.S. I would like to mention here that there was a trout dish at Pine Creek Cookhouse we had the day before which was so mind-blowing, I think my seafood standards have been raised significantly.) But I think we were fairly disappointed with the mains. The desserts were pretty delicious! We got the house made ice cream and the tres leches. I LOVED the ice cream. I got the vanilla because I don't like chocolate ice cream and it was heaven. We got 2 scoops only but I would've eaten a whole another vanilla scoop easily, that's how delicious it was. The tres leches was different. Beautiful presentation - a hazelnut sponge. I think I, personally, just like classic tres leches so I couldn't get over the brown sponge and the candied milk on the side. But my friends definitely loved it and finished a big chunk of it. All in all, this meal was not worth the money we paid. There are better restaurants in snowmass and outside which would serve higher quality food without the hefty price tag. read more

This is a Chef Richard Sandoval restaurant, and the food was very good, and the ambiance is great. The restaurant was not busy at all during this shoulder season evening. For some reason they were using a Bluetooth speaker for background music instead of all the speakers in the ceiling, but I'll assume that system is just broken or something and they were making do. I had the bison burger, and my wife had the empanadas, and they were great. It's a very expensive restaurant, for what you get, but it's Aspen and everything is expensive so I expected that and have no problem with it. The problem was with the service. I would describe the serving staff as timid, disengaged, and disinterested. There was no friendliness, no "Hello!, I'm (name), how are you doing?". All business, no smiles. At one point after we'd gotten our food, I was looking to order a glass of wine, and it took so long for our server to come check on us I was ready to just go to the bar and get it myself. I have a daughter that is a server and I am normally a very generous tipper, but after discussing that this was the worst service we'd had in a very long time, I was prepared to leave a 15% tip (still over $20 for the hour we were there). So we laughed when we got the check and saw that they had added a 22% automatic tip, for our party of two. THAT explained the lousy service - it didn't matter, they were getting 22% regardless so why bother trying. We did look back at the menu and it does mention the 22% auto-tip, we just didn't notice it. I doubt we will ever go back to Toro but it did give us a good story about customer service. On a side note, we visited a different Richard Sandoval restaurant, Venga Venga, in Snowmass Village and the service (by Christopher) was excellent - he was a pleasure. In summary, maybe it was just the night we were there, but our experience was great food, nice atmosphere, and lousy service that you will pay a premium for. read more

Just had dinner at Toro. While the atmosphere is nice, we had several issues with the dinner itself. The food is quite expensive-$99 for a NY strip and wine also high. While the flavors were good, all of our meals came out cold. The waiter offered to have them warmed up but it took so long to get the it food that we didn't want to wait longer. The waiter offered no explanation or compensation for the cold food or extended length of time it took to arrive. At the end f the meal the waitress dropped the check with no mention that 22% gratuity was automatically added-despite the cold food and long wait. The practice of automatically adding 22% is really ridiculous-especially if the service was mediocre. And additionally, if gratuity is automatically added, the proper thing to do is to verbally advise the customer that it is added. read more

Between the beautiful bar, staff, crafty cocktails, and delicious food, it's hard to wrong here. The bar has the largest tv I've ever seen in a hotel. Makes enjoying a cocktail and catching up on the Olympics a dream. They also allow dogs into the bar area and we wren greeted by a 148 pound Great Dane, and a modest sized Doberman. Cute and gentle. We both had the Smokey old fashioned to start, and then later a Vieux Carre, and a Vanilla Manhattan with dinner. Both perfect. We started with the ceviche, which had a perfect amount of spice for our palettes, and very fresh fish. Next we had the Bison burger and the hanger steak with the chimichurri. The hangar steak was the clear winner, but the burger was no slouch. Some of the best chimichurri I've had. Plenty of garlic. The truffle fries weren't what we were expecting, and not much truffle flavor to them, but tasty. It turned out they weren't needed for our table, since the burger came regular fries as well. Sloppy reading on my part. We were stuffed so we skipped dessert. Truthfully they earned a 4.5*, simply b/c our waiter disappeared for quite a while after we ordered cocktails. We were forced to ask a person refilling our water to find our waiter, so we could place our food order. After that slight miscue, everything went very smoothly. If you're in Snowmass, get away from the mall/base and go across the street to the swanky Viceroy. You won't regret the small walk. read more

Food was amazing. But, we waited over an hour for food to come. And when it did come, the order was not correct.

I recently stayed at the Viceroy when visiting Snowmass, so I had breakfast at Toro multiple times, and dinner there one night. Breakfast: Good, but not great considering how expensive it is. I ordered the granola twice, avocado toast, and the breakfast sandwich. The granola is a huge portion, I guess to justify the $20 cost. As someone who is a huge granola lover, it is a bit telling that I consider that portion too large. It tasted great, but I just don't like that the rest of it would go to waste. The first time I ordered it, I asked to bring the granola back in a takeaway box and because it was surrounded by yogurt, it became soggy and inedible after a few hours. The avocado toast was kind of bland and the avocado was not ripe. The sandwich was pretty good, I have no complaints. Dinner here was better. The food is delicious: we enjoyed the ceviche, scallops, and quinoa bowl. One downside of Toro is the fact each dish cost so much. Granted, this restaurant is located in a luxury ski resort, but the prices were a bit outrageous, considering the food wasn't even that great, especially breakfast. Additionally, for each meal, 20% gratuity was charged. This brings up the bigger issue: the service. From our experience, the employees here aren't the best in terms of customer service. For example, the night we went to dinner we politely asked if we could move to a different table. The lady said it was "reserved" and throughout our whole dining experience, nobody sat there. We also witnessed a couple who were asked to move their table for the same issue because they were incorrectly escorted to a "reserved" table. For breakfast, I ordered the avocado toast. I think the true title on the menu was smoked salmon avocado toast. I guess because I didn't say smoked salmon avocado toast, the waiter thought I didn't want smoked salmon. When I asked where the smoked salmon was, instead of just apologizing and bringing it out for me, he started arguing that I ordered the avocado toast without smoked salmon when there was only one option to order. I wasn't upset by this interaction, but I just feel like it's basic customer service protocol to just listen to the customer and not argue, especially when it's over a simple addition that can be easily fixed. Because service wasn't the best, it was annoying we automatically were giving them 20%. Maybe service is less accommodating knowing they are guaranteed that much no matter what. Because of my mediocre experience, I can't say I would recommend this place. Unless you're staying at the hotel and dining here for convenience, I wouldn't advise anyone to purposefully dine here. While the dinner food was good, I'm sure you could fine much better food at that price point in Snowmass and definitely in Aspen proper. read more

I came back again to the Viceroy to do some mountain biking and experience the Aspen trees changing to their fall colors. During my stay I had occasion to eat at this excellent restaurant for both breakfast lunch and dinner on different days. The food is always super in a staff was always amazing. Tonight I had the prime cuts of their fillet steak end it is always the best you could find in All of Colorado. The other meats are also just as good-I know because I've sampled them all. read more

Disappointing meal tonight. + -- Street corn with powdered cheese--good flavors and an unusual, interesting texture -- Octopus dish with potato salad: a weird pairing but octopus was cooked perfectly and the potato salad worked. --Service: Megan was friendly and attentive. - --Flank steak: cooked to temperature we ordered (medium rare) but way too salty. We sent it back. --Cod: cooked well but seasoning was way off--the dish was salty to the point of being inedible. We sent this back too. --Tofu stir fry: bland and dry. Needed a sauce or some flavoring. We had a bad meal at Toro when they first opened in December. Now that it has been half a year they should have their act together but clearly do not. I'd be more inclined to give them another shot if they weren't so expensive. Il Poggio is a way better dining option in Snowmass with entrees at least 15-20% less than Toro. read more

My husband and I made a 7:30pm reservation two weeks prior to visiting. They lost the reservation but were able to seat us anyway. Here's a timeline: 7:30-seated 7:40-offered water 7:50-waitress came by to take our drink and appetizer orders 8:00-waitress comes back because she can't remember which drinks we ordered 8:10-drinks! we ordered another appetizer and another round of drinks because we could tell it was going to take a while but weren't quite ready to order entrees 8:15-appetizer 1 arrives. No silverware. 8:20-hostess(!) realizes we don't have silverware, drops some off nonchalantly. 8:30-2nd round of drinks and 2nd appetizer arrive. 8:35-noticed that other parties around us were visibly frustrated by the lack of service; started debating leaving for another restaurant so we could eat dinner earlier 8:45-finally asked for the check 8:55-got out of there To be clear, this was not our waitress' issue; it seemed to be a front of house management issue. The hostess was running double duty as a waitress in the bar area, which meant guests were coming in and asking the only employee they could find--the bartender--for seating, which got him backlogged on drinks...it was a mess. The sad thing is that the appetizers (ceviche and pulpo) were truly delicious and we were sad to miss out on the entree; for the food, I added another star to this review. Terrible service! The "manager" Goro or Goru is incompetent, unprofessional and extremely rude. I am not sure how he manages to even tie his shoes in the morning. The staff did not want to seat us when we arrived when more than 50% of their tables were vacant. We received a paper at check in of our stay at the Viceroy that breakfast was until 11am and when we arrived at 10:30am they refused to seat us and said breakfast ended at 10:30am. We proceeded to show them the paper the hotel gave us and they acknowledged they were wrong but still refused to seat us. I went to Toro with 9 other people last night for a business dinner. Originally there was supposed to be 11 of us and we were worried we would get charged for a person dropping out, but the manager Oscar, told us we were good and gave us a warm welcome. He took us to our table, gave us drink suggestions and made us feel really welcomed. Dinner was amazing, and even though we had a great server, Oscar kept an eye on us and made sure we had everything we needed. My drink was never empty! Overall, this was an amazing experience and Oscar made it soo much better, it is always great to have an attentive manager. I highly recommend this place. read more

After experiencing the worst dining experience of my life, I've made the decision to share the details of how my friends and I were mistreated at Toro. After taking pictures, the Manager, Oscar told my friends and I that we needed to leave because other guests were "uncomfortable". We asked him if pictures weren't allowed and he said "they were, we just needed to leave". We'd been respectful and minded our own business the entire evening. Suddenly We could hear inebriated guest behind us spewing threats such as "I want to smear sh** on their faces, If I could ki** anyone it would be them". After hearing this, the manager chose to ignore them and refuse additional service to us. Last night's events were inconceivable and we've never been so disrespected. Oscar is a disgrace and made us feel unsafe and undervalued based on his decision to allow hate within the establishment. The management team needs diversity and inclusion training and an effective protocol for when guests are threatened. I will continue to take these complaints to the highest level possible. read more

Well it is an upscale restaurant inside the viceroy but seriously the food was mediocre for the hype and price. If you are staying in viceroy, it's perfect just take the elevator and walk in but if you are coming in from outside they have valet parking available too. I ordered the Toro Bison Burger and my better half got the cast iron chicken. Well, quantity wise the chicken wasn't bad but the taste wasn't anything exemplary that you would expect, mushrooms were burnt to death, no sauce/gravy and the price was $32. I have had better food for that price. The burger was also meh experience, technically if anyone would have substituted bison with beef you won't be able to tell, just an ordinary burger with expensive price tag and nothing innovative. Ambiance and the decor was A+ (loved it) but food and price not so much maybe B-. Ohh by the way, FYI irrespective of party size they automatically add 20% gratuity to your bill. read more

Visited here for a girls trip. We decided to get drinks and an appetizer at Toro before heading to our actual reservations, because we were staying in the attached hotel. Two separate tables became irate. One couple particularly expressed, "If I were to k*ll anyone, it would be them." Referring to myself and two friends. At that time the manager, Oscar came over and informed us that they would no longer be serving us for the night. While Oscar was speaking to us, the same couple continued to escalate the situation by saying "I'll smear sh*t on their face." Oscar clearly heard them as he was in the vicinity our table. Oscar still adamantly expressed that we must leave after we just received death threats and severe acts of racial profiling. The guest who were threatening and clearly were the ones causing the scene were allowed to stay. Let me mention that I am of mixed Hispanic and middle eastern decent, my other friend is black, and the other El Salvadorian; I feel like I need not mention anything further regarding the udder disrespect from this establishment. I see why this place has just 3.7 stars in such an affluent location. read more
