They were pretty tangled and clumped together, almost like they had been sitting refrigerated before being added to the broth. Once separated, though, I really enjoyed the dish. We also ordered the sliced beef with hot peppers. The beef had good flavor, but I thought the sauce was a little too dry for my preference. And when they say hot peppers, they mean it, there were A LOT of jalapeños. There was also a small wait between receiving the noodle soup and the rest of our entrées, so the timing could have been a little better. The lead banner in their website is "Chef-Crafted, Plant-Forward Prepared Foods". So their orientation is plant based and will also include some animal protein lines. We started our tasting in the front part of the suite, you'll see it in the background of the small cup of Mongolian Beef. Surprisingly, I thought this was real beef. It's really vegan. The flavors were spot on and the chew was a dead ringer for tender beef. The next photo is their Chorizo JUST Egg Burritito ™ . This is plant based and vegan, as well. The Chorizo was quite good: nice flavor, good chew and the right amount of heat. The scrambled egg paired very well with the Chorizo. The tortilla is quite good in spite it being gluten free. As seen in the large serving tray Shrimp (animal based) Fried Rice and Wok Fired Shrimp Lo Mein. Unfortunately, these items can't be bought here.
